Ingredients:
Brinjal/ Vankaya 3
Green chillies 3
Tamarind 1/2 inch sized ball
Salt to taste
Turmeric powder a pinch
Talimpu:
Mustard seeds 1 tsp
Cumin seeds 1/2 tsp
Urad dal 1 tbsp
Broken red chillies 4
Curry leaves 8
Oil 1 tsp
Method of preparation:
Remove stems and chop green chillies finely.
Soak tamarind in warm water and extract juice from it.
Remove stems and wash brinjals.
Chop them into inch sized cubes.
Add them to bowl of 1 cup water, sprinkle salt and turmeric powder.
Microwave for 5-10 minutes or cook covered in a vessel.
Heat oil in a pan, add all talimpu ingredients in order.
When urad dal turns light brown, add chopped green chillies,
cooked brinjal cubes, tamarind extract and salt.
Cook covered for a minute and serve hot with rice.
Notes: This curry depends on how perfect you cook brinjal cubes.
