Eggplant Sesame Curry

Vankaya Nuvvu Podem Kura.

Eggplant is diced and cooked in sesame seeds powder till soft. Serve eggplant sesame curry with steamed rice and dollop of ghee. Sesame powder can be prepared by roasting sesame seeds and dried red chiles and grinding them into powder along with salt.
Makes: around 2 Servings of Eggplant Sesame Curry.

Ingredients:

American Eggplant 1/2 of Small One
Sesame Powder 3 Tbsps
Garlic 2 Cloves
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove stem, wash and chop eggplant into small chunks (around 2 1/2 Cups).
Peel and crush the garlic cloves.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add crushed garlic, eggplant pieces, sesame powder and salt.
Cook covered on low flame till eggplant turns soft (around 8 minutes).
Keep stirring occasionally to avoid eggplant from sticking to bottom of the pan.
Serve eggplant sesame curry with steamed rice and dollop of ghee.
Notes: Make sure eggplant is cooked well.

Suggestions: Adjust spice with red chili powder if necessary.
Variations: You can also use Indian eggplants instead.

Cracked Wheat Eggplant Upma

Vankaya Godhuma Ravva Upma.

Baby Indian eggplants are chopped up and cooked in oil along with spices and onion. Cracked wheat is briefly fried along with fried eggplant and cooked in enough water till soft and fluffy. Serve cracked wheat eggplant upma immediately.
Makes: around 4 Servings of Cracked Wheat Eggplant Upma.

Ingredients:

Cracked Wheat 1 1/2 Cups
Baby Indian Eggplants 3
Green Chiles 5 – 6
Ginger 1 inch Piece
Onion 1 Small
Lemon 1/4 Piece
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove stems, wash and chop eggplants into small pieces.
Remove stems, wash and chop the green chiles.
Peel and finely chop the onion.
Peel and mince the ginger.

Bring to boil 3 cups of water in a sauce pot and keep aside.
Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add minced ginger, onion, green chiles, eggplant and salt.
Fry for few minutes until eggplant turns little soft, stir in cracked wheat.
Fry briefly and pour the boiled water and mix well.
Cover and simmer for 2 – 3 minutes and remove from heat.
Leave it covered for around 5 minutes before stirring and adjust salt if necessary.
Squeeze quarter of a lemon and serve cracked wheat eggplant upma immediately.
Notes: Make sure not to overcook the eggplant.

Eggplant Fry with Dalia Powder

Ingredients:

Baby Indian Eggplants 5
Dalia Powder 3 Tbsps
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash, remove stems and chop the eggplant vertically into 4 pieces.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add sliced eggplants and few pinches of salt.
Cook covered on low flame till eggplant is soft.
Uncover and fry briefly and carefully stir in dalia powder.
Serve eggplant fry with dalia powder over plain steamed rice and dollop of ghee.
Notes: Make sure eggplant is cooked well.

Suggestions: If eggplant is not cooked well, add a splash of water and cook covered till done.

Eggplant Sesame Fry

Baby Indian Eggplants are sliced and cooked in oil along with whole spices. White sesame seeds are ground into powder with green chiles and added to the eggplants. Serve eggplant sesame fry with steamed rice or with chapati.
Makes: around 4 Servings of Eggplant Sesame Fry.

Ingredients:

Indian Baby Eggplant 4 -5
Sesame Seeds 4 Tbsps
Green Chies 2 – 3
Turmeric Powder a Pinch
Cilantro few Sprigs
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove stems, wash and slice the green chiles.
Remove stems, wash and chop the eggplant into long thick slices.
Wash and finely chop the cilantro leaves.
Toast sesame seeds on low flame till golden brown in color.
Grind sesame seeds into powder using spice grinder, add green chiles and grind again into coarse mixture.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add sliced eggplant and salt.
Fry briefly and cook covered on low flame for a minute or two.
Uncover, add ground sesame green chili paste and salt (if required).
Cook covered on low flame till eggplant is soft but whole.
Stir in chopped cilantro, turmeric powder and remove from heat.
Serve eggplant sesame fry with steamed rice or with chapati.
Notes: Make sure eggplant is cooked well.

Suggestions: If eggplant is not cooked well, put it back on heat and cook covered on low flame after adding a splash of water.

Eggplant with Panch Phoran

Eggplant with Panch Phoran.

Baby Indian eggplants and onion are cooked in oil infused with panch phoran spices. Eggplants are finished with couple of powdered spices before serving over plain steamed rice or over roti. Panch Phoran is a mixture of 5 spices, click here for the list of spices.
Makes: around 4 Servings of Eggplant with Panch Phoran.

Ingredients:

Baby Indian Eggplants 4
Onion 1
Green Chiles 2
Panch Phoran 1 1/2 tsps
Turmeric Powder a big Pinch
Red Chili Powder 1/4 tsp
Coriander Powder 1/2 tsp
Fennel Seeds Powder 1/4 tsp
Salt to Taste
Oil 1 – 2 Tbsps

Method of preparation:

Wash, remove stems and chop eggplant into big chunks.
Peel, remove ends and dice the onion.
Remove stems, wash and slice the green chiles.

Heat oil in a pan, add whole panch phoran spices.
Fry till mustard seeds start spluttering, add diced onion and green chiles.
Fry briefly, stir in eggplant chunks and salt.
Fry for a minute, cook covered on medium flame for around 5 minutes or until eggplants turn soft and slightly brown around the edges.
Stir in turmeric powder, coriander powder, fennel seeds powder and red chili powder.
Remove from heat and serve eggplant with panch phoran over plain steamed rice or with roti.
Notes: Make sure eggplants are cooked well before removing the pan from heat.

Suggestions: If eggplants are not cooked well, put the pan back on heat, add a splash of water if required and cook covered on low flame till done.
Variations: Add finely chopped cilantro as a garnish.
