Cashew Cucumber Dip

Cashew Cucumber Dip.

Raw cashews are soaked in water and ground into smooth paste. Cucumber is grated and mixed with the creamy cashew mixture along with scallions. Serve cashew cucumber dip with spiced tortilla chips or use as a spread on toast etc..
Makes: around 1 Cup of Cashew Cucumber Dip

Ingredients:

Cucumber 1 (7 inch)
Raw Cashews 1 Cup
Lemon Juice 1 Tbsp
Salt to Taste
Scallions / Spring Onions 1 – 2

Method of preparation:

Peel, wash and remove ends of the cucumber.
Chop half the cucumber into pieces and grate the other half.
Squeeze the grated cucumber to remove any excess moisture.

Soak cashews in water for atleast 4 – 6 hours.
Drain the cashews and grind them into smooth paste along with chopped cucumber, salt.
Remove the cashew paste onto a mixing bowl.

In the mixing bowl, add chopped scallions, grated cucumber, lemon juice and salt.
Adjust any seasonings if required and refrigerate.
Garnish with scallions and serve cashew cucumber dip with spiced tortilla chips or sliced veggies or use as a spread on toast etc..
Notes: Make sure to grind the cashews well.

Suggestions: Adjust the creaminess with cashews. Add more cucumber pieces for less creamy dip.
Variations: You can add any sort of chopped nuts to the dip.
Other Names: Cashew Cucumber Dip.

Tofu Spinach Stir Fry

Tofu Spinach Stir Fry.

Chop the firm tofu into small chunks. Spinach is cooked in oil along with bell pepper. Add the tofu as a finishing step and serve tofu spinach stir fry.
Makes: around 2 Servings of Tofu Spinach Stir Fry.

Ingredients:

Firm Tofu 2 Cups Cubed
Spinach 2 Cups Chopped
Red Bell Pepper few Slices
Green Chiles 1 – 2
Cumin Seeds 1/8 tsp
Salt to Taste
Oil 1 Tbsp

Method of preparation:

Wash and finely chop the spinach.
Wash, remove stem, discard seeds and chop bell pepper into small chunks.
Chop tofu into around half inch sized cubes.

Heat oil in a pan, add cumin seeds.
When cumin seeds change color, add sliced green chiles and chopped bell peppers.
Fry for a minute, add chopped spinach.
Fry till spinach wilts and changes color.
Stir in cubed tofu and salt.
Stir fry for a minute and remove from heat.
Serve tofu spinach stir fry immediately.
Notes: Make sure not to burn any of the ingredients.

Suggestions: Adjust spice with green chiles.
Variations: Add sliced onion in oil along with bell pepper if desired.

Banana Pecan Smoothie

Banana Pecan Smoothie.

Ripe banana is used here to make the smoothie. Soy milk is used instead of regular milk to keep it vegan. Pecans give the smoothie a very nice texture and flavor. Blend all the ingredients for the banana pecan smoothie.
Makes: 1 glass of Banana Pecan Smoothie.

Ingredients:

Banana 1 Medium
Soy Milk 1/2 Cup
Pecans 3

Method of preparation:

Peel and roughly chop the banana.
Freeze the banana for couple of hours.

Smoothly blend the banana, soy milk and pecans using a juicer.
Remove the smoothie onto a serving glass.
Serve banana pecan smoothie immediately.
Notes: Choose ripe banana for best results.

Suggestions: Add a tsp of honey for sweetness. Soy milk can be replaced with skimmed milk if desired. Crushed ice can also be added.
Variations: You can also add walnuts or almonds etc…
