Quick Ridge Gourd Curry

Beerakaya Allam Karam.

Ridge gourd / turai is peeled and chopped up into small chunks. They are then cooked in oil along with whole spices and freshly ground ginger green chili paste. Serve quick ridge gourd curry with plain steamed rice or with roti.
Makes: around 2 Servings of Quick Ridge Gourd Curry.


Ridge Gourd 1 Large
Green Chile 1 – 2
Ginger 1 inch Pice
Turmeric Powder a Pinch
Salt to Taste


Mustard Seeds 1/8 tsp
Cumin Seeds 1/8 tsp
Urad Dal 1/8 tsp
Broken Red Chiles 2
Curry Leaves 5
Oil 1 Tbsp

Method of preparation:

Remove skin, wash and chop the ridge gourd into small chunks (around 2 Cups).
Remove stem, wash and roughly chop the green chiles.
Peel and roughly chop the ginger.
Grind ginger and green chile into coarse paste using spice grinder.

Heat oil in a pan, add all other talimpu ingredients in order.
When mustard seeds start spluttering, add chopped ridge gourd, ground ginger green chili paste and salt.
Mix well and cook covered on low flame till ridge gourd turns soft (around 8 minutes).
Stir in turmeric powder and adjust any seasonings if required before removing from heat.
Serve quick ridge gourd curry with plain steamed rice and dollop of ghee.
Notes: Make sure ridge gourd is cooked thoroughly before removing the pan from heat.

Suggestions: If ridge gourd is not cooked well, put it back on heat and cook covered on low flame till done.
Variations: Diced onion can also be added along with ridge gourd. Check other ridge gourd recipes here.

Hot Healthy Beverage

Hot Healthy Beverage.

Ginger and cardamom are crushed and boiled in water for a minute or more. Then the liquid is flavored with turmeric powder, lemon juice and honey. Serve hot healthy beverage immediately.Makes: 1 Serving of Hot Healthy Beverage.


Ginger 2 inch Piece
Turmeric Powder a big Pinch
Whole Cardamom 2 Pods
Lemon Juice 1 tsp
Honey 1 Tbsp or to taste

Method of preparation:

Peel, wash and thoroughly crush the ginger with help of a pestle.
Lightly crush the cardamom and keep aside.

Bring to boil a big cup of water, add ginger and cardamom.
Boil for a minute and strain the liquid.
Stir in turmeric powder, lemon juice and sufficient honey.
Mix well and serve hot healthy beverage immediately.
Notes: Make sure to boil for at least a minute before removing from heat.

Suggestions: You can also microwave for around 2 minutes.
Variations: Add a green tea bag if desired once the liquid is strained.
Other Names: Hot Healthy Beverage.

Lemony Ginger Tea

Lemony Ginger Tea.

Fresh ginger is mashed and boiled in water with tea powder and peppercorns. Serve lemony ginger tea immediately.
Makes: One Serving of Lemony Ginger Tea.


Tea Powder 1 tsp
Ginger 1 inch Piece
Black Peppercorns 1 – 2
Lemon 1/2
Honey 1 Tbsp or to Taste

Method of preparation:

Crush the peppercorns and keep aside.
Peel, wash and mash the ginger.

Heat around a cup of water in a sauce pot, add tea powder, crushed peppercorns and mashed ginger.
Boil for around a minute, strain into a cup.
Stir in lemon juice and honey to the tea.
Serve lemony ginger tea immediately.
Notes: Make sure not to adjust tea powder according to your preference.

Suggestions: You can also use green tea instead.
Variations: Add sugar instead of honey if you wish.
Other Names: Lemony Ginger Tea.

Spicy Ginger Chutney

Pachi Allam Pachadi.

Fresh ginger is peeled and washed. It is then chopped up and ground into paste along with freshly fried dals and spices. Serve spicy ginger chutney with idly, dosa or with steamed rice.
Makes: around 4 Servings of Spicy Ginger Chutney.


Ginger 3 – 4 inch Piece
Tamarind 2 inch Piece
Whole Red Chiles 2
Sugar 1 Tbsp
Chana Dal 1 Tbsp
Urad Dal 1 Tbsp
Cumin Seeds a Pinch
Salt to Taste
Oil 1 tsp

Method of preparation:

Peel, wash and roughly chop the ginger.
Remove stems and break the red chiles into pieces.

Heat oil in a pan, add chana dal and urad dal.
Fry till golden brown in color and remove from heat.
Add broken red chiles into same pan with remaining oil and fry till brown in color.
Cool the ingredients to room temperature before grinding.

Grind the fried ingredients into powder using a spice grinder.
Add the chopped ginger, tamarind, sugar, cumin seeds, salt and little water.
Grind again into smooth mixture and remove onto a bowl.
Serve spicy ginger chutney with idly, dosa or with steamed rice.
Notes: Make sure not to burn any of the ingredients while frying.

Suggestions: Adjust sugar, tamarind and red chiles according to your preference.

Tasty Ginger Chutney

Allam Pachadi.

Ginger is peeled and chopped up. It is then ground into paste along with green chiles, tamarind and jaggery. This chutney is condensed with huge flavors. So use sparingly. Serve tasty ginger chutney with idly, dosa, utappam, etc…
Makes: around 1/2 Cup of Tasty Ginger Chutney.


Ginger 6 – 8 inch Piece
Green Chiles 2 – 3
Jaggery 2 – 3 inch Block
Tamarind 5 inch Piece
Salt to taste
Oil 1 tsp

Method of preparation:

Soak tamarind in little bit of hot water for sometime.
Peel, wash and roughly chop ginger.
Remove stems, wash and slice the green chiles.
Mash jaggery to make it easier for grinder to grind.

Heat oil in a pan on medium heat, add green chiles.
Fry for couple of seconds, add ginger, fry briefly and remove from heat.

Cool the mixture for couple of minutes and grind it along with jaggery, tamarind and salt.
When the mixture becomes thick paste, remove the ginger chutney onto a bowl.
Serve ginger chutney with idli, dosa, utappam, roti etc..
Notes: Make sure not to over fry the ginger.

Suggestions: Use thick tamarind extract to enhance the shelf life of ginger chutney. Make sure to adjust green chiles, tamarind and jaggery according to taste. Adjust the consistency of ginger chutney with water.
