Cabbage Onion Pakoda

Cabbage Onion Pakoda.

Cabbage is wash and shredded. Cabbage and sliced onion are then mixed with gram flour along with spices. They are then deep fried in oil till they turn golden brown in color and are crisp. Serve cabbage onion fritters as a snack or with steamed rice and dollop of ghee.
Makes: around 4 Servings of Cabbage Onion Pakodi

Ingredients:

Cabbage 1/8 of Small Size
Onion 1/2 of Small One
Besan / Gram Flour 1 Cup
Green Chiles 3 – 4
Red Chili Powder 1/2 tsp
Chat Masala few Pinches
Salt to Taste
Oil for deep Frying

Method of preparation:

Remove outer leaves, wash and shred the cabbage (around 2 Cups).
Peel and slice the onion.
Remove stems, wash and slice the green chiles.

In a mixing bowl, mix together besan, red chili powder and salt.
Add the cabbage, onion, green chili and sprinkle around 2 tablespoons of water.
Mix carefully to let the gram flour stick to the cabbage and the mixture is very thick.
Don’t add water unnecessarily.

Heat oil in a deep frying pan on medium – low heat.
Slightly separate and carefully drop the cabbage onion mixture into hot oil.
Fry for around a minute or until cabbage fritters turn light golden brown in color.
Remove the crispy fried cabbage onion pakoda onto absorbent paper.
Repeat the same with any remaining cabbage onion mixture.
Make sure the pakoda are crisp and crunchy and they stay fresh for a week in a tight jar.
Sprinkle chat masala and serve cabbage onion fritters as a snack or with steamed rice and dollop of ghee.
Notes: Make sure not to add too much water to the cabbage onion mixture.

Suggestions: Add more besan if necessary. Keep adjusting the flame to let the oil stay at a medium to low temperature so that the cabbage won’t burn. Don’t let the cabbage sit for long before deep frying.

Cabbage Poppy Curry

Cabbage Poppy Curry.

Cabbage is chopped and cooked in oil along with chopped onion. Poppy seeds are toasted and ground into powder along with coriander and cumin. The powder is then added to the cabbage curry as a finishing step. Serve cabbage poppy curry with steamed rice or with roti.
Makes: around 4 Servings of Cabbage Poppy Curry.

Ingredients:

Cabbage 1 Small
Onion 1
Ginger Garlic Paste 1 tsp
Poppy Seeds 1 Tbsp
Coriander Seeds 1 1/2 tsps
Cumin Seeds 1/4 tsp
Red Chili Powder 1/2 tsp
Turmeric Powder a big Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel and finely chop the onion.
Remove outer leaves, wash and chop the cabbage.

Heat a pan on low heat, add poppy seeds, coriander seeds and cumin seeds.
Toast for a minute or until aromatic and remove from heat.
Grind the poppy seeds mixture into fine powder and keep aside.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add sliced onion and ginger garlic paste.
Fry for around few minutes on medium flame and stir in cabbage and turmeric powder.
Fry for around 5 minutes or until cabbage is cooked.
Stir in ground poppy seeds powder, red chili powder and salt.
Cook for another minute and remove from heat.
Serve cabbage poppy seeds curry with steamed rice or with roti.
Notes: Make sure not burn any ingredients while toasting.

Suggestions: Adjust spice with red chili powder.

Cabbage Rice Flour Rotti

Cabbage Tapala Rotti.

Cabbage is shredded and is boiled in water. Rice flour is then mixed with cabbage and green chili. The freshly prepared dough is spread on flat pan into thick rotti and fried till its golden brown on both sides. Serve cabbage rice flour roti with lemon juice pickle, Click here for recipe of lemon juice pickle.
Makes: 1 Cabbage Rice Flour Roti.

Ingredients:

Rice Flour 1/2 Cup
Green Chile 1
Cabbage (Shredded) 4 – 6 Tbsps
Cumin Seeds a Pinch
Salt to taste
Oil 1 Tbsp

Method of preparation:

Remove stem, wash and chop the green chile into small circles.
Bring to boil around 3/4th cup of water, add shredded cabbage, green chiles and sufficient salt.
Let the water bubble for a minute and remove from heat.
Add rice flour to the above pot and stir well.
Add little more rice flour if necessary.
When warm enough to handle, form the dough into soft ball.

Heat a flat pan on medium heat.
When pan gets little warm, place the cabbage rice flour dough ball on the flat pan.
Press the dough and spread it with help of wet fingers into thick rotti (around 7 inch diameter).
Sprinkle cumin seeds and pour a tsp of oil on and around the rotti.

Cook for a minute or two until the bottom side turns light golden brown.
Turn on the other side and cook covered for a minute or two.
Uncover, turn again and cook for couple more seconds to crisp up the bottom.
Remove rotti from heat.
Serve immediately cabbage rice flour rotti with  lemon juice pickle or with any chutney or pickle of your choice.
Notes: Make sure to cook the rotti well.

Suggestions: If the rotti is still sticky inside, put it back on heat and cook on low flame till little crisp and well cooked .

Cabbage Sesame Curry

Cabbage Sesame Curry.

Cabbage is shredded and cooked in oil along with sliced onion. White sesame seeds are ground into powder along with green chiles and added to the cabbage curry. Serve cabbage sesame curry with steamed rice or with roti.
Makes: around 4 Servings of Cabbage Sesame Curry.

Ingredients:

Cabbage 1 Small
Onion 1
Sesame Seeds 5 Tbsps
Green Chiles 5 – 7
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Oil 2 Tbsps

Method of preparation:

Peel and slice the onion.
Remove outer leaves, wash and shred the cabbage.
Remove stems, wash and roughly chop green chiles.
Grind sesame seeds into powder using a spice grinder.
Then add the green chiles and salt and grind again in to powder.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add sliced onion and cabbage.
Fry for around 8 minutes on medium flame or until cabbage turns just soft.
Keep stirring occasionally to avoid cabbage sticking to bottom of pan.
Stir in sesame green chile powder and salt if required.
Cook for another minute or two and remove from heat.
Serve cabbage sesame curry with steamed rice or with roti.
Notes: Make sure not to overcook the cabbage.

Suggestions: Toast the sesame seeds till light golden in color before grinding them.

Cabbage Moong Dal Curry

Cabbage Moong Dal Curry.

Moong dal is boiled in water till cooked. Cabbage is cooked in oil along with spices and mixed with scraped coconut and boiled moong dal. Serve cabbage moong dal curry with steamed rice or with roti.
Makes: around 4 Servings of Cabbage Moong Dal Curry.

Ingredients:

Cabbage 1/2 of Small Head
Moong Dal 1/4 Cup
Scraped Coconut 1/4 Cup
Green Chiles 3 – 4
Green Peas 2 Tbsps
Turmeric Powder a big Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash moong dal with water and boil in around a cup of water till moong dal is just cooked but whole.
Strain the moong dal and keep aside.
Remove outer layers, wash and chop the chop the cabbage.
Remove stems, wash and slice the green chiles.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles and cabbage.
Lower the flame and cook covered for around 8 minutes or until cabbage turns little soft.
Uncover, add scraped coconut, boiled moong dal, green peas, turmeric powder and salt.
Fry for around a minute or two to evaporate any excess moisture and remove from heat.
Serve cabbage moong dal curry with steamed rice or with roti.
Notes: Make sure cabbage is cooked well.

Suggestions: Add chopped carrot while adding cabbage if desired. You can also pressure cook cabbage and moong dal in separate vessels for around 2 – 3 whistles.
