Tomato Sesame Chutney

Tomato Sesame Chutney.

Tomato sesame chutney is prepared by cooking tomato and green chiles in ioil and spices. It is then ground with sesame seeds and herbs into coarse mixture. Serve tomato sesame chutney with any dosa, fritters etc…
Makes: around 2 Cups of Tomato sesame Chutney.

Ingredients:

Tomato 2
Sesame Seeds 1 Tbsp
Green Chiles 2
Garlic 1 -2 Cloves
Salt to taste
Cilantro Few Leaves

Talimpu:

Urad Dal 1/4 tsp
Cumin Seeds 1/4 tsp
Mustard Seeds 1/4 tsp
Oil 1 tsp

Method of preparation:

Peel and roughly chop the garlic cloves.
Wash and roughly chop the raw tomatoes.
Remove stems, wash and halve the green chiles.
Wash cilantro leaves and keep aside.

Heat oil in a small pan, add all talimpu ingredients in order.
When urad dal changes color, add chopped tomatoes, green chiles and salt.
When tomatoes become soft and mushy, remove from heat.

First grind the sesame seeds into fine powder using a spice grinder.
Then add cooked tomatoes, green chiles, garlic cloves, cilantro leaves and pulse a couple of times to coarsely grind everything.
Remove the ground tomato sesame chutney onto a bowl.
Serve tomato sesame chutney with steamed rice or idly or dosa etc.
Notes: Make sure to grind the sesame seeds well before adding tomato.

Suggestions: Adjust the amount of green chiles for spice. Make sure tomatoes are little sour for better taste.
Variations: You can also toast the sesame seeds before grinding into powder.

Tomato Onion Chutney

Tomato Ullipaya Pachadi.

Tomato and onion are boiled in water for sometime. They are then peeled and ground into paste. Finally the chutney is seasoned with spices and spice powders. Serve tomato onion chutney with idly, dosa etc..
Makes: around 2 Cups of Tomato Onion Chutney.

Ingredients:

Tomato 3
Onion 1 Small
Red Chili Powder 1 tsp
Turmeric Powder 1/4 tsp
Salt to Taste

Talimpu:

Mustard Seeds 1/8 tsp
Cumin Seeds 1/8 tsp
Urad Dal 1/8 tsp
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Boil the whole onions in enough water for around 8 minutes and strain the onions.
Boil the whole tomatoes in enough water for around 5 minutes and strain the tomatoes.
Peel and roughly chop the onion and the tomatoes.
Grind the chopped onions and tomatoes into smooth paste using a blender.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add the ground onion tomato paste, red chili powder, turmeric powder and salt.
Boil the chutney for around 8 minutes and remove from heat.
Serve tomato onion chutney with idly, dosa etc..
Notes: Make sure to cook the onion well.

Suggestions: Adjust spice with red chili powder.

Papad Tomato Chaat

Papad Tomato Chaat.

Tomato and onion are finely chopped and mixed with sweet corn and spice powders. The mixture is then layered on to freshly roasted papad and papad tomato chaat is served immediately.
Makes: One Serving of Papad Tomato Chaat.

Ingredients:

Pepper Papad 1
Tomato 1
Onion 1 Tbsp (Chopped)
Sweet Corn 3 – 4 Tbsps
Red Chili Powder few Pinches
Salt to Taste
Sesame Oil 1/4 tsp
Lemon Juice 1 Tbsp
Cilantro few Sprigs

Method of preparation:

Wash and finely chop the tomato discarding the seeds.
Wash and finely chop the cilantro leaves.
Microwave papad for around 25 seconds and remove onto a plate.
Alternatively, heat the papad on direct flame until crisp.

In a mixing bowl, mix together tomato, onion, sweet corn, red chili powder, salt, sesame oil, lemon juice and cilantro.
Layer the above mixture onto the roasted papad and serve immediately.
Notes: Make sure to remove the seeds inside the tomato.

Suggestions: Adjust any seasoning if necessary.
Variations: You can also layer few pinches of chaat masala onto the papad. Check other recipes with papad here.

Drumstick Tomato Curry

Mulakkada Tomato Kura.

Onion and tomato are chopped and cooked in oil along with whole spices. Fresh or frozen drumsticks are cooked with tomato onion mixture. Serve drumstick tomato curry with steamed rice.
Makes: around 2 Servings of Drumstick Tomato Curry.

Ingredients:

Drumsticks 10 – 12 (3 inch Long Pieces)
Tomato 2 Large
Onion 1
Green Chiles 1 – 2
Tumeric Powder a big Pinch
Red Chili Powder 1/4 tsp
Cilantro few Sprigs
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash and finely chop the tomatoes.
Peel and finely chop the onion.
Remove stems, wash and slice the green chiles.
Wash and finely chop the cilantro leaves.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles and onion.
Fry till onion turns translucent and start to turn golden brown.
Stir in chopped tomato, turmeric powder, red chili powder and salt.
Now add the drumsticks and cook covered on low flame for around 15 minutes or until drumsticks change color and cooked well.
Add few splashes of water if necessary while cooking.
Garnish with cilantro and serve drumstick tomato curry with steamed rice.
Notes: Make sure to cook the drumsticks well.

Suggestions: Add a big pinch of garam masala at end if desired.

Bottle Gourd Tomato Dal

Anapakaya Tomato Pappu.

Bottle gourd is peeled and chopped and pressure cooked along with tomato till soft. Toor dal is cooked and mixed with the cooked vegetables and spices. Serve bottle gourd tomato dal with steamed rice or with roti or chapati.
Makes: around 4 Servings of Bottle Gourd Tomato Dal.

Ingredients:

Toor Dal 1 Cup
Bottle Gourd 1/2 of Small One
Tomato 1
Green Chiles 3 – 4
Tamarind 1 inch Piece
Turmeric Powder a big pinch
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Garlic 2 Cloves
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel, remove ends and chop bottle gourd into small cubes.
Remove stems, wash and slice the green chiles.
Wash and finely chop the tomato.
Peel and thoroughly crush the garlic cloves.

Wash toor dal under fresh water to remove any dirt.
Pressure cook washed toor dal in 2 cups of water for 3 whistles or until cooked.
At the same time pressure cooked chopped bottle gourd, tomato, tamarind, half of green chiles in half a cup of water for 3 whistles.
Use two separate bowls to hold dal and vegetables but place them in same pressure cooker to speed up the cooking process.

Heat oil in a small pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add garlic and remaining green chiles.
Fry briefly and stir in cooked bottle gourd and tomato.
Fry for a minute, stir in turmeric powder and salt.
Add the cooked toor dal and half a cup of water.
Cook on low flame for around 8 minutes to let all the flavors develop.
Serve bottle gourd tomato dal with steamed rice and a crispy papad or with roti.
Notes: Make sure to cook the bottle gourd well.

Suggestions: Make sure dal is perfectly cooked before adding to the tempering.
Variations: You can avoid tamarind and instead add a splash of lime at the end of cooking process.
