Ivy Gourd Masala

Dondakaya Masala.

Tindora / ivy gourd is sliced and pressure cooked with onion, ginger, garlic and spices. It is then finished in open pan. Serve ivy gourd masala with steamed rice or with roti.
Makes: around 4 Servings of Ivy Gourd Masala

Ingredients:

Tindora (Chopped) 3 Cups
Onion 1 Large
Ginger Garlic Paste 1 Tbsp
Garam Masala Powder 1 tsp
Red Chili Powder 1 tsp
Salt to Taste

Talimpu:

Chana Dal 1/2 tsp
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash, remove little bit of both ends and slice the tindora vertically twice and halve it horizontally.
Peel and finely chop the onion.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped onion.
Fry for couple of minutes, add ginger garlic paste and fry again for a minute.
Stir in the chopped tindora, garam masala powder, red chili powder and salt.
Fry for a minute or two, add half cup of water and pressure cook for a whistle.
When pressure goes away, uncover and remove the cooked tindora curry onto a non stick pan if possible.
Fry for around 5 minutes to evaporate any excess moisture.
Adjust red chili powder or salt if necessary and remove from heat.
Serve ivy gourd masala with steamed rice or with roti.
Notes: Make sure tindora is cooked really well.

Suggestions: Adjust spice with red chili powder or add a green chili while pressure cooking the ivy gourd.

Spicy Tindora Coconut Fry

Dondakaya Kobbari Vepudu.

Tindora is thinly sliced and cooked along with whole spices. Then a freshly ground coconut garlic spice powder is added to the fried tindora and cooked till done. Serve tindora coconut fry with steamed rice or with roti.
Makes: around 4 Servings of Spicy Tindora Coconut Fry.

Ingredients:

Tindora 3 Cups Sliced
Fresh or Frozen Scraped Coconut 1/4 Cup
Whole Red Chiles 1 – 2
Garlic 3 Cloves
Coriander Seeds 1/2 tsp
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel and roughly chop the garlic cloves.
Break the whole red chiles into pieces.
Wash, remove ends and vertically slice ivy gourd and halve them horizontally.
Grind dried red chiles, coriander seeds and garlic into fine powder.
Then add the scraped coconut and salt and grind again into coarse mixture.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped tindora and fry on medium flame till tindora is cooked and start to brown around the edges.
Once cooked, add the freshly ground coconut garlic mixutre and salt if necessary.
Cook for couple more minutes and then remove from heat.
Serve spicy tindora coconut fry with steamed rice or with roti.
Notes: Make sure tindora is cooked well before adding the coconut garlic mixture.

Suggestions: If tindora feels raw, add few tbsps of water and cook covered till done.

Tindora Besan Fry

Dondakaya Senagapindi Vepudu.

Tindora / Tendli is chopped into circles and fried in oil till golden brown in color. Once cooked, tindora fry is finished with besan / gram flour and spice powders. Serve tindora besan fry with steamed rice and dollop of ghee.
Makes: around 4 Servings of Tindora Besan Fry.

Ingredients:

Tindora 2 Cups Sliced
Besan / Gram Flour 4 Tbsps
Tamarind 2 inch Piece
Red Chili Powder 1/2 tsp
Salt to Taste
Oil 2 tsps

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 1/2 tsp

Method of preparation:

Wash, remove little bit of both ends and chop the tindora into thick circles.
Soak tamarind in few tablespoons of water and extract the thick pulp.

Heat oil in a pan, add sliced tindora and fry on medium flame for around 10 – 15 minutes.
Once tindora turns golden brown and cooked, add half a tsp of oil in the middle of the pan.
Add all talimpu ingredients in order.
When mustard seeds start spluttering, add besan and let the besan toast a bit.
Then stir in tamarind pulp, red chili powder, turmeric powder and salt.
Let it cook on low flame for few minutes and remove from heat.
Serve tindora besan fry with steamed rice and dollop of ghee.
Notes: Make sure to fry the tindora well.

Tindora Fry with Sev

Tindora Fry with Sev.

Tindora / Ivy gourd is sliced and fried in oil till brown in color. Once cooked, besan and spice powders are added. Nylon sev is added as a finishing step. Serve tindora fry with sev over plain steamed rice or with roti.
Makes: around 4 Servings of Tindora Fry with Sev.

Ingredients:

Tindora / Ivy Gourd 3 Cups Sliced
Nylon Sev 1/4 Cup
Besan 2 Tbsps
Red Chili Powder 1/2 tsp
Turmeric Powder a big Pinch
Cumin Seeds 1/4 tsp
Salt to Taste
Oil 1 Tbsp

Method of preparation:

Wash, remove little bit of both ends and vertically quarter the tindora.

Heat oil in a pan, add cumin seeds and sliced tindora.
Fry briefly and cook covered for around 5 – 8 minutes.
Uncover and fry the tindora till it turns brown around the edges.
Add a tsp more of oil if necessary.
In the middle of the pan, add besan and toast for few seconds.
Stir in red chili powder, turmeric powder and salt.
Mix everything well so besan sticks to the tindora slices.
Remove from heat, stir in nylon sev.
Serve tindora fry with sev over plain steamed rice or with roti.
Notes: Make sure tindora is fried well before adding sev.

Suggestions: Adjust spice with red chili powder.
Variations: You can also add mustard seeds and asafoetida to the oil along with cumin seeds if you wish.

Spicy Onion Stuffed Tendli

Ullipaya Karam Gutti Dondakaya.

Tindora is either boiled in water or steamed till just cooked. Onion is coarsely ground along with powdered lentils and spices. It is then cooked in oil and is then stuffed inside cooked tindora. Oil is tempered with spices and stuffed tindora is briefly fried. Serve spicy onion stuffed tendli with steamed rice or with roti.
Makes: 15 – 20 Spicy Onion Stuffed Tendli.

Ingredients:

Tindora 15 – 20
Salt to taste
Cumin Seeds 1/4 tsp
Mustard Seeds 1/4 tsp
Curry Leaves 4
Oil 1/2 tsp

Stuffing:

Onion 1
Urad Dal 2 Tbsps
Whole Red Chiles 3 – 4
Cumin Seeds 1/4 tsp
Salt to taste
Oil 1 tsp

Method of preparation:

Wash tindora thoroughly and remove little bit of both ends and make a slit vertically with one end of tindora still intact.
Take care not to cut tindora into halves.
Peel and roughly chop onion.

In a small pan, add urad dal and fry on low flame till it turns golden brown in color.
Remove urad dal onto a bowl.
Add few drops of oil in the same pan, add cumin seeds and broken red chiles.
Fry for few seconds and remove from heat.

First grind cumin seeds, urad dal and red chiles into fine powder and remove onto a bowl.
Grind chopped onion into coarse paste along with above spice powder and salt.
Heat a tsp of oil in a pan, add onion mixture and fry for around 5 minutes or until rawness of onion is gone.
Remove the onion stuffing onto a bowl for later use.

Bring to boil few cups of water, add tindora and few pinches of salt.
Boil till tindora turns soft still holding its shape.
Alternatively, steam or deep fry the tindora till soft.
Strain the tindora and carefully stuff the coarsely ground onion paste in each tindora.

Heat oil in a pan on medium low heat, add mustard seeds, cumin seeds and curry leaves.
Slowly place the stuffed tindora in hot pan along with any leftover onion stuffing and a pinch of salt.
Fry stuffed tindora on all sides till they turn light golden brown.
Occasionally scrape the bottom of the pan to avoid scorching if necessary.
Serve spicy onion stuffed tendli with steamed rice or with roti.
Notes:Make sure tindora is not overcooked.

Suggestions: If tindora is undercooked, sprinkle few tbsps of water in the pan and cook covered on low flame till tindora turns soft.
