Masala Stuffed Bitter Gourd

Masala Stuffed Bitter Gourd.

Small bitter gourds are salted and slightly cooked. They are then stuffed with onion and masala mixture. Stuffed bitter gourds are then fried in little bit of oil till golden brown. Serve masala stuffed bitter gourd with plain steamed rice and with dal rice and ghee.
Makes: 3 Masala Stuffed Bitter Gourd.

Ingredients:

Bitter Gourd 3 Small
Onion 1 Medium
Tamarind 2 inch Piece
Ginger Garlic Paste 1/2 tsp
Garam Masala Powder 1 tsp
Red Chili Powder 1/2 tsp
Cumin Powder 1/4 tsp
Turmeric Powder 1/4 tsp
Salt to Taste
Oil 2 Tbsps

Method of preparation:

Peel and finely chop the onion.
Soak tamarind in few tablespoons of water.
Remove ends, lightly scrape and wash the bitter gourds.
Slit the bitter gourd in the middle making sure the ends are intact.
Remove seeds and apply few pinches of salt inside and outside.
Leave the salted bitter gourds aside for around half an hour.
Wash the bitter gourds and pressure cook with tamarind water for a whistle.
Strain the cooked bitter gourds and keep aside.

Heat a tablespoon oil in a pan, add chopped onion.
Fry till onion turns translucent and add ginger garlic paste.
Fry briefly and remove onto a bowl.
Add garam masala powder, red chili powder, cumin powder, turmeric powder and salt to the onion in the bowl.
Mix thoroughly and stuff around few tablespoons of onion mixture into each bitter gourd.

Heat a tablespoon of oil in a pan on medium low heat, place the stuffed bitter gourds.
Fry the stuffed bitter gourd till they turn golden brown on all sides.
Serve masala stuffed bitter gourd with plain steamed rice and with dal rice and ghee.
Notes: Make sure bitter gourds are fried well.

Suggestions: Prefer small bitter gourds to ease the stuffing or halve the whole bitter gourd. Leave couple of seeds inside the bitter gourd if desired. Alternatively, steam the salted bitter gourds until they turn soft but whole.

Moong Stuffed Ridge Gourd

Ridge gourd is slightly peeled and chopped into long cylinders. Moong dal is soaked and ground into paste along with spices. The mixture is then stuffed in ridge gourd and cooked till done. Serve moong stuffed ridge gourd with steamed rice and dollop of ghee.
Makes: around 20 Moong Stuffed Ridge Gourd.

Ingredients:

Ridge Gourd / Turai 2 Medium
Moong Dal 1/3 Cup
Whole Red Chiles 2 – 3
Garlic 3 Cloves
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Slightly peel, wash and chop ridge gourd into around 2 inch long cylinders (around 20 cylinders).
Make a slit in each ridge gourd vertically twice and keep aside.

Peel and roughly chop garlic cloves.
Remove stems and break the red chiles into pieces.
Soak moong dal in water for around an hour.
Strain the soaked moong dal.
Grind red chiles, garlic and salt into powder.
Add the soaked moong dal and grind everything into coarse paste.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, carefully place the stuffed ridge gourd in the pan.
Cook covered on low flame for around 5 minutes or until ridge gourd turns little soft.
Turn the stuffed ridge gourd to make sure all the sides turn golden brown.
Once moong dal is cooked and ridge gourd is golden brown, remove from heat.
Serve moong stuffed ridge gourd with steamed rice and dollop of ghee.
Notes: Make sure ridge gourd is cooked well before removing from heat.

Suggestions: Adjust spice with red chiles. Make sure to soak the moong dal well.

Dalia Stuffed Green Chiles

Fresh fat mild green chiles are stuffed with fresh ground dalia peanut powder. They are then cooked in oil till light golden brown on all sides. Serve dalia stuffed green chiles with steamed rice and dollop of ghee.
Makes: 6 Dalia Stuffed Green Chiles.

Ingredients:

Whole Green Fat Chiles 6
Dalia 3 Tbsp
Roasted Peanuts 2 Tbsp
Red Chili Powder 1/4 tsp
Chana Dal 1 Tbsp
Garlic 1 Clove
Salt to Taste
Oil 2 Tbsps + 1 tsp

Method of preparation:

Peel and roughly chop garlic clove.
Remove stems, wash and pat dry green chiles.
Slit the stomach of the green chile making sure its ends intact.

In a small pan, heat chana dal and roast until it turns light golden in color.
Once cooled, grind the dalia, roasted peanuts, chana dal, garlic clove, red chili powder and salt into fine powder using a spice grinder.
Taste and adjust seasonings if required.
Stuff each green chile with ground dalia mixture and keep aside.

Heat oil in a pan on low-medium heat, add stuffed green chiles.
Cook on all sides till the skin of the green chile changes color.
Remove onto plate and serve dalia stuffed green chiles with steamed rice and dollop of ghee.
Notes: Make sure to deseed the green chiles to reduce the spice.

Suggestions: Choose any sort of fat mild green chiles like long green peppers or mexican green chiles or banana peppers etc…
Variations: You can also add a a tsp of grated dry coconut powder to the dalia powder mixture.

Besan Stuffed Chiles

Pindi Mirapakayalu.

Fresh fat mild green chiles are stuffed with gram flour mixture. They are then cooked in oil till light golden brown on all sides. Serve besan stuffed chiles with steamed rice and dollop of ghee.
Makes: 6 Besan Stuffed Chiles.

Ingredients:

Whole Green Fat Chiles
Besan / Gram Flour 5 – 6 Tbsps
Red Chili Powder 1/4 tsp
Salt to Taste
Oil 2 Tbsps + 1 tsp

Method of preparation:

Remove stems, wash and pat dry green chiles.
Slit the stomach of the green chile making sure its ends intact.
In a mixing bowl, mix together 2 tablespoons of oil, besan, red chili powder and salt.
Taste and adjust seasonings if required.
Stuff each green chile with besan mixture and keep aside.

Heat oil in a pan on low-medium heat, add stuffed green chiles.
Cook on all sides till the skin of the green chile changes color.
Remove onto plate and serve besan stuffed chiles with steamed rice and dollop of ghee.
Notes: Make sure to deseed the green chiles to reduce the heat.

Suggestions: Choose any sort of fat mild green chiles like long green peppers or mexican green chiles or banana peppers etc…
Variations: You can also add a pinch of ajwain to the besan mixture.

Poppy Seeds Stuffed Ridge Gourd

Poppy seeds are soaked in water for couple of hours and ground into paste along with coconut. The freshly made paste is stuffed into ridge gourd cylinders and cooked till soft along with whole spices. Serve poppy seeds stuffed ridge gourd with plain steamed rice, or with roti or chapathi.
Makes: 5 pieces of Poppy Seeds Stuffed Ridge Gourd.

Ingredients:

Ridge Gourd 1 ( 10 inch long)
Poppy Seeds 2 Tbsps
Fresh or Frozen Grated Coconut 4 Tbsps
Green Chiles 2
Salt as required

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash, remove ends, remove the skin and chop ridge gourd into 2 inch long cylinders.
Slit the chopped ridge gourd making a plus sign with its bottom intact.
Remove stems, wash and roughly chop green chiles.

Soak poppy seeds in water for around 4 hours.
Grind the soaked poppy seeds with grated coconut, green chiles, a pinch of cumin seeds and salt into smooth paste adding least amount of water.
Stuff the ridge gourd pieces with the prepared ground poppy seeds paste.

Heat oil in a wide pan, add all talimpu ingredients in order.
When cumin seeds change color, arrange the stuffed ridge gourd pieces.
Cook covered for around 5 minutes until ridge gourd pieces turn soft.
Turn the ridge gourd pieces occasionally and cook covered again till ridge gourd turns light brown on the sides.
Uncover and fry for couple of seconds and remove from heat.
Serve poppy seeds stuffed ridge gourd with plain steamed rice, or with roti or chapathi.
Notes:Make sure to scrape the bottom of the pan to avoid burning of the stuffing.

Suggestions: If ridge gourd feels raw, put back in stove, sprinkle water and cook covered on low-medium flame till ridge gourd turns soft.
