Masala Lemon Cucumber

Masala Lemon Cucumber.

Lemon cucumber is peeled and chopped into small pieces. It is then cooked along with whole and powdered spices. Once cucumber turns soft, serve masala lemon cucumber over plain steamed rice or with roti.
Makes: around 2 Servings of Masala Lemon Cucumber.

Ingredients:

Lemon Cucumber 1 Large
Garam Masala Powder 1/2 tsp
Cumin Seeds Powder a Pinch
Red Chili Powder 1/4 tsp
Turmeric Powder a Pinch
Tamarind 1 inch Piece
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel, wash and halve the lemon cucumber.
Chop the lemon cucumber into small pieces. Discard the seeds if desired.

Soak tamarind in few tablespoons of warm water for sometime and extract all the juice discarding any veins.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add lemon cucumber pieces and salt.
Cook covered on low flame for couple of minutes till cucumber pieces are just cooked.
Stir in garam masala powder, red chili powder, tamarind extract, cumin seeds powder and turmeric powder.
Cook on low flame for a minute or two or until cucumber pieces turn soft.
Add a splash of water if required while cooking the onion to avoid it sticking to the bottom of the pan.
Serve masala lemon cucumber over plain steamed rice or with roti.
Notes: Make sure cucumber is cooked well before removing from heat.

Suggestions: Make sure lemon cucumber is not sweet before cooking it. Adjust spice with red chile powder.

Lemon Cucumber Onion Gravy

Dosakaya Ullipaya Kura.

Lemon cucumber is peeled and chopped into thin chunks. It is then cooked along with whole spices and onion. Once cucumber turns soft, serve lemon cucumber onion curry over plain steamed rice or with roti.
Makes: around 4 Servings of Lemon Cucumber Onion Curry.

Ingredients:

Lemon Cucumber 1 Medium
Onion 1 Small
Tamarind 2 inch Piece
Urad Dal 1 Tbsp
Whole Red Chiles 1 – 2
Jaggery(Grated) 1 Tbsp
Turmeric Powder a big Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel, wash and halve the lemon cucumber.
Discard the seeds and chop the lemon cucumber into thin inch size pieces.
Peel and roughly chop the onion.
Soak tamarind in few tablespoons of warm water for sometime and extract all the juice discarding any veins.

Toast urad dal until light golden brown and remove from heat.
Roast the red chiles for few seconds and remove from heat.
Grind the urad dal, red chiles into fine powder using a spice grinder.
Then add the chopped onion and pulse couple of times and remove onto a bowl.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add lemon cucumber pieces and salt.
Cook covered on low flame for couple of minutes till cucumber pieces are half cooked.
Stir in ground onion red chili paste, tamarind extract, jaggery, turmeric powder and salt.
Cook covered on low flame for around 8 minutes or until cucumber pieces turn soft.
Add a splash of water if required while cooking the onion to avoid it sticking to the bottom of the pan.
Serve lemon cucumber onion gravy over plain steamed rice or with roti.
Notes: Make sure cucumber is cooked well before removing from heat.

Suggestions: Adjust spice with red chiles. If cucumber or onion is not cooked well, put the curry back on heat and cook covered on low flame till done.

Quick Lemon Cucumber Chutney

Dosakaya Nimmakaya Pachadi.

For lemon cucumber chutney, spices and lentils are fried till golden brown in color. They are then crushed into powder and chopped lemon cucumber / dosakaya is added to the spices and lightly crushed. Serve quick lemon cucumber chutney with steamed rice or with dal rice.
Makes: around 4 Servings of Quick Lemon Cucumber Chutney.

Ingredients:

Lemon Cucumber 1
Lemon Juice 3 Tbsps
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 4 – 5
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel, wash, remove ends and halve the lemon cucumber.
Discard the seeds and chop the lemon cucumber into small pieces.

Heat a pan on low heat, add all talimpu ingredients in order.
When mustard seeds start spluttering, remove from heat and add to a bowl and add salt.
Using a pestle thoroughly crush the spices and herbs together.
Now add the chopped cucumber pieces and lemon juice to the crushed spices.
Crush cucumber pieces together with spices for couple of times and leave the cucumber chutney aside for a minute or two.
Adjust any seasonings if necessary and serve quick lemon cucumber chutney with steamed rice or with dal rice.
Notes: Make sure not to burn the spices.

Suggestions: Adjust the red chiles according to preference. Use a food processor if necessary to lightly crush the cucumber pieces.

Cucumber Mango Salad

Cucumber Mango Salad.

Cucumber is sliced into 2 inch long pieces and mixed with raw mango julienne. The mixture is finally seasoned with cumin seeds oil and herbs. Serve cucumber mango salad sprinkled with chaat masala.
Makes: around 2 Servings of Cucumber Mango Salad.

Ingredients:

English Cucumber 1
Raw Mango 1 Small
Green Chiles 1 – 2
Cumin Seeds a big Pinch
Cilantro few Sprigs
Chaat Masala few Pinches
Salt to Taste
Oil 1/2 tsp

Method of preparation:

Peel, wash and julienne the raw mango.
Wash, remove skin, discard seeds and slice the cucumber into around 2 inch long pieces.
Wash and finely chop the cilantro leaves.
Remove stems, wash and slice the green chiles.

Heat oil in a pan, add cumin seeds and green chiles.
Fry till cumin seeds change color, remove from heat.

In a mixing bowl, mix together sliced cucumber, raw mango, cilantro, above cumin seeds and green chiles and salt.
Sprinkle chaat masala and serve cucumber mango salad immediately.
Notes: Make sure not to burn the cumin seeds.

Suggestions: Adjust spice with green chiles. Make sure to add salt and chaat masala just before serving if you are planning to refrigerate the chopped cucumber.
Variations: Add finely ground black pepper and few drops of lemon juice if you wish.

Lemon Cucumber Cilantro Curry

Dosakaya Kothimera Kura.

Lemon cucumber is peeled and chopped into small pieces. It is then cooked along with whole spices and onion. Once cucumber turns soft, finish with cilantro and serve lemon cucumber cilantro curry over plain steamed rice or with roti.
Makes: around 2 Servings of Lemon Cucumber Cilantro Curry.

Ingredients:

Lemon Cucumber 1 Medium
Onion 1 Small
Garlic 2 Cloves
Green Chiles 1 – 2
Dalia / Roasted Gram 2 Tbsps
Turmeric Powder a big Pinch
Cilantro Leaves 1 Cup Packed
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel, wash and halve the lemon cucumber.
Discard the seeds and chop the lemon cucumber into inch size pieces.
Peel and finely chop the onion.
Remove stems, wash and slice the green chiles.
Peel and crush the garlic cloves.
Wash and very finely chop the cilantro leaves.
Grind the dalia into fine powder using a spice grinder.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add garlic and green chiles.
Fry briefly, stir in chopped onion and fry till it turns translucent and start to brown.
Add the lemon cucumber pieces and cook covered for few minutes or until cucumber is soft.
Stir in cilantro leaves, turmeric powder, dalia powder and salt.
Serve lemon cucumber cilantro curry over plain steamed rice or with roti.
Notes: Make sure cucumber is cooked well before removing from heat.

Suggestions: Adjust spice with green chiles. If lemon cucumber is not sour enough, add a small piece to tamarind along with onion. If cucumber is not cooked well, put it back on heat and cook covered on low flame till done.
