Cracked Wheat Pulihora

Godhuma Ravva Pulihora.

Cracked wheat is boiled in water till soft. Whole spices and dals are fried in oil along with peanuts. This is then mixed with the cooked cracked wheat along with lemon juice. Serve cracked wheat pulihora with pickle or small glass of yogurt.
Makes: around 2 Servings of Cracked Wheat Pulihora.


Cracked Wheat 1 Cup
Peanuts 2 Tbsps
Lemon 1
Green Chiles 4
Turmeric Powder 1/8 tsp
Salt to Taste


Chana Dal 1/2 tsp
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash, remove stems and slice the green chiles.
Halve the lemon and extract the juice.

Bring to boil a little more than a cup of water.
Add salt and cracked wheat.
Reduce the flame to low and cook covered for around 5 minutes or until the cracked wheat is soft and cooked.

Heat oil in a pan, add peanuts.
Fry till peanuts are almost golden brown.
Remove peanuts from heat, add all other talimpu ingredients in order in remaining oil.
When mustard seeds start spluttering, add sliced green chiles.
Fry for few seconds, add the peanuts, turmeric powder and remove from heat.

In a mixing bowl, fluff up the cooked cracked wheat.
Stir in lemon juice and the above fried dals and spices.
Mix thoroughly and adjust salt if necessary.
Serve cracked wheat pulihora with pickle or small glass of yogurt.
Notes: Make sure cracked wheat is cooked well before removing from heat.

Suggestions: If cracked wheat/ broken wheat is not cooked well, put it back on heat, sprinkle few tbsps of water and cook covered on low flame till done.
Variations: You can also add tamarind extract to the fried dals to replace lemon juice.

Broken Wheat Salad

Erra Godhuma Rawa Salad.

Broken wheat is boiled in water till its cooked and soft. Raw vegetables are chopped up and mixed with broken wheat along with other seasonings for a fresh healthy salad. Serve broken wheat salad immediately or chilled.
Makes: around 2 Servings of Broken Wheat Salad.


Broken Wheat 1/2 Cup
Green Chile 1 Small
Cucumber 5 Tbsps (chopped)
Tomato 4 Tbsps (chopped)
Onion 3 Tbsps (chopped)
Bell Pepper 2 Tbsps (chopped)
Lemon Juice 1 – 2 Tbsps
Cilantro Couple of Leaves
Salt to taste
Sesame Oil 1 Tbsp

Method of preparation:

Remove stem, wash and finely chop the green chile.
Wash and finely chop the cilantro leaves.
Wash all the vegetables and chop them into small pieces.

Bring to boil a cup of water, add broken wheat, salt and sesame oil.
Lower the heat and cook covered for 5 – 10 minutes.
Or until broken wheat has absorbed all the water and turns soft.
Remove from heat, cool to room temperature and fluff up the broken wheat.

In a mixing bowl, mix together chopped cucumber, tomato, onion, bell pepper, lemon juice, cilantro and salt.
Let it stand for couple of mintues and carefully fold the broken wheat into the above mixture.
Garnish with cilantro leaves and serve broken wheat salad immediately.
Notes: Make sure broken wheat is cooked properly before removing from heat.

Suggestions: Don’t peel the cucumber to have extra crunch.
Variations: Use crushed black pepper if you can’t handle heat from green chile. Dress up the salad with your choice of nuts or seeds if desired.

Whole Wheat Laddu

Goduma Laddu.

Whole wheat is roasted in little bit of ghee till golden brown. Then its ground into powder and mixed with powdered sugar and nuts. The mixture is made into small balls with few drops of milk or ghee. While ghee enhances the shelf life, milk is less calorie rich.
Makes: around 10 Whole Wheat Laddu.


Whole Wheat 1 Cup
Sugar 1/2 – 3/4 Cup
Milk 3 – 5 Tbsps
Cashews 4
Raisins 10
Ghee 1/2 tsp

Method of preparation:

Break cashews into small pieces.
Grind sugar into fine powder and keep aside.

Heat ghee in a pan on medium heat, add cashews and raisins.
Fry till cashews turn light golden brown and raisins plump up.
Remove the fried ingredients onto a plate.

In the same pan with remaining ghee, add whole wheat.
Roast the whole wheat until its aromatic and dark golden brown in color.
Cool the roasted whole wheat to room temperature.

Grind the whole wheat into fine powder using a spice blender.
Grind the whole wheat in batches to make it easy on the blender.
Make one of the batch little coarse than the rest for texture.

Remove the whole wheat powder onto a mixing bowl, add sugar, cashews and raisins.
Add milk to the above mixture and form it into lemon sized balls.
Store the whole wheat laddu in a dry jar and these stay for upto a week.
Notes: Make sure to roast the whole wheat right.

Suggestions: Adjust the milk according to the mixture.
Variations: You can also add fresh or dry coconut to the powder.
Other Names: Whole Wheat Laddu, Godhuma Laddulu.

Cracked Wheat Pudding

Goduma Payasam.

Cracked wheat is used in making this payasam instead of using regular rice. Coarse cracked wheat is pressure cooked and then finished in boiling milk along with jaggery and nuts. Serve cracked wheat pudding hot or cold.
Makes: around 2 Cups of Cracked Wheat Pudding.


Coarse Cracked Wheat 1/2 Cup
Milk 1 1/2 Cups
Jaggery 1/2 Cup
Cardamom 1
Cashews 5
Raisins 8

Method of preparation:

Bruise the cardamom and crush the black seeds inside into powder.
Grate or mash the jaggery and keep aside.
Roast the cashews and keep aside.
Refresh cracked wheat with fresh water and pressure cook in a cup of water for 3 whistles.
Alternatively, boil in around 1 1/4 cups of water till its just soft and cooked but not mushy.

Bring milk to boil in a sauce pot, add cracked wheat and cardamom powder.
Boil for couple of minutes, add jaggery and raisins.
Let all the jaggery melt completely and raisins puff up.
When the consistency is thick but pourable, remove from heat.
Garnish the cracked wheat payasam with roasted cashews and serve hot or chilled.
Notes: Make sure not to overcook the cracked wheat.

Suggestions: Adjust the consistency with milk. The pudding thickens once it cools, so adjust accordingly. Or else choose the most coarsely available cracked wheat as possible.
Variations: You could instead soak the whole wheat for few hours, coarsely chop it in food processor and then pressure cook.
Other Names: Cracked Wheat Pudding, Whole Wheat Pudding, Goduma Payasam, Goduma Rava Payasam.

Whole Wheat Grains Salad

Vudaka Pettina Gudhumalu.

Whole Wheat Grain Salad is a very healthy and simple salad made with whole wheat grains. Whole wheat is soaked in water overnight and cooked in enough water till soft. Lemon vinaigrette is prepared and mixed with finely choppped cilantro and black pepper powder to taste. Cooked whole wheat grains are tossed in lemon vinaigrette just before serving.
Makes: around 1 1/2 Cups of Whole Wheat Grains Salad.


Whole Wheat Grains 1 Cup
Onion 1 Small
Lemon Juice 1 tsp
Cilantro few sprigs
Black Pepper Powder to taste
Salt to taste
Oil 1 tbsp

Method of preparation:

Soak whole wheat in enough water and leave it overnight or for around 6 – 8 hours.
Wash the soaked whole wheat under running water to refresh.
Bring to boil 1 1/2 – 2 cups of water in a sauce pot, add soaked whole wheat.
Boil till whole wheat is cooked and just soft without getting mushy (around 40 minutes).
Strain the cooked whole wheat and cool to room temperature.

Peel and very finely chop the onion.
Clean, wash and finely chop the cilantro.

In a mixing bowl, whisk together oil, lemon juice, salt and balck pepper powder.
Then stir in finely chopped onion and cilantro.
Finally toss in the cooked whole wheat and serve.
Notes:Make sure not to overcook the whole wheat grains.

Suggestions: If the whole wheat leaves a raw bite once removed from heat, put it back on heat and cook till soft.
Variations: Add finely chopped scallions, green bell pepper, cucumber etc. Use a different vinaigrette to taste.
