Tofu Vegetable Stir Fry

Tofu Vegetable Stir Fry.

Extra firm tofu is marinated in soy sauce. Mixed vegetable mix (Broccoli, Asparagus, Red Bell Pepper, cauliflower, sugar snap peas, carrots) is stir fried in oil and then marinated tofu is added as a finishing step. Serve tofu vegetable stir fry with fried rice.
Makes: around 3 Servings of Tofu Vegetable Stir Fry.

Ingredients:

Extra Firm Tofu 15 – 20 inch Cubes
Mixed Vegetable Mix (Broccoli, Asparagus, Red Bell Pepper, cauliflower, sugar snap peas, carrots )
Soy Sauce 3 – 4 Tbsps
Red Chili Flakes a big Pinch
Salt to Taste
Oil 1 Tbsp

Method of preparation:

In a wide bowl, add soy sauce and cubed tofu.
Let it stand for around 5 minutes for the tofu to absorb the soy sauce.
Chop the mixed vegetables into small pieces ( around 2 Cups).

Heat oil in a pan, add mixed vegetable mix.
Fry on medium high flame till vegetables are just cooked and starts to brown around the edges.
Make sure to keep stirring to avoid sticking to the bottom of the pan.
Once the vegetables are done, add the marinated cubed tofu.
Fry till soy sauce has been evaporated and tofu turns darker.
Season with salt and red chilli flakes and remove from heat.
Serve tofu vegetable stir fry with fried rice.
Notes: Make sure mixed vegetables are cooked right.

Suggestions: Make sure not to add too much salt since soy sauce is salty.
Variations: Vary the mixed vegetables based on your choice.

Tofu Spinach Stir Fry

Tofu Spinach Stir Fry.

Chop the firm tofu into small chunks. Spinach is cooked in oil along with bell pepper. Add the tofu as a finishing step and serve tofu spinach stir fry.
Makes: around 2 Servings of Tofu Spinach Stir Fry.

Ingredients:

Firm Tofu 2 Cups Cubed
Spinach 2 Cups Chopped
Red Bell Pepper few Slices
Green Chiles 1 – 2
Cumin Seeds 1/8 tsp
Salt to Taste
Oil 1 Tbsp

Method of preparation:

Wash and finely chop the spinach.
Wash, remove stem, discard seeds and chop bell pepper into small chunks.
Chop tofu into around half inch sized cubes.

Heat oil in a pan, add cumin seeds.
When cumin seeds change color, add sliced green chiles and chopped bell peppers.
Fry for a minute, add chopped spinach.
Fry till spinach wilts and changes color.
Stir in cubed tofu and salt.
Stir fry for a minute and remove from heat.
Serve tofu spinach stir fry immediately.
Notes: Make sure not to burn any of the ingredients.

Suggestions: Adjust spice with green chiles.
Variations: Add sliced onion in oil along with bell pepper if desired.

Tofu in Tomato Gravy

Tofu in Tomato Gravy.

Tomato gravy is prepared by first blanching the tomatoes to easily peel off the skin. The peeled tomatoes are then crushed and made into gravy with onion and spices. Firm tofu is cubed and added to the tomato gravy as a last step. Tofu can also be deep fried in oil till golden brown if desired.
Makes: around 4 Servings of Tofu in Tomato Gravy.

Ingredients:

Firm Tofu (Small Cubes) 15 Pieces
Tomato 4 Medium
Onion 1 Small
Coriander Powder 1/4 tsp
Red Chili Powder 1/4 tsp
Caraway Seeds 1/8 tsp
Garam Masala a Pinch (optional)
Salt to Taste
Cilantro Few Sprigs
Oil 1 tsp

Method of preparation:

Chop the tofu into small half inch cubes and keep aside.
Peel and finely chop the onion.
Wash and finely chop the cilantro leaves.
Wash and make cross slits in each tomato.
Bring to boil few cups of water, add the tomato and boil for couple of minutes to loosen the skin.
Strain the tomatoes, peel the skin off and crush the peeled tomatoes.

Heat oil in a pan, add caraway seeds.
Once the seeds start to sizzle, add the chopped onion.
Fry till onion turns translucent, stir in crushed tomato.
Cook on medium flame till tomato is completely cooked and the gravy becomes a little thicker.
Stir in red chili powder, coriander powder, garam masala (if using) and salt.
Add the cubed tofu and simmer for a minute.
Remove from heat and garnish with chopped cilantro.
Serve tofu in tomato gravy with steamed rice or with roti etc…
Notes: Make sure not to overcook once the tofu is added.

Suggestions: Make sure not to overcook the tomato gravy that its too thick.

Tofu Bhurji

Tofu Bhurji.

This is quick and tasy version of scrambled tofu. Onion and tomato is cooked in oil along with cumin seeds. Tofu is crumbled into small pieces and added to the onion tomato mixture. Tofu bhurji can be spread over a slice of bread or can be rolled with roti before serving.
Makes: around 2 Servings Tofu Bhurji.

Ingredients:

Firm Tofu 1 Cup (Crumbled)
Garlic 1 Clove
Onion 1 Small
Tomato 1
Green Chiles 1 – 2
Red Chile Powder 1/8 tsp
Garam Masala Powder 1/8 tsp
Cumin Seeds 1/4 tsp
Cilantro few Sprigs
Salt to taste
Oil 1 tsp

Method of preparation:

Crumble the tofu and keep aside.
Peel and crush the garlic clove.
Remove stems, wash and chop the green chiles.
Peel, remove ends and finely chop the onion.
Wash and finely chop the tomatoes.
Wash and chop the cilantro leaves.

Heat oil in a pan on medium high heat, add cumin seeds.
When cumin seeds start to change color, add garlic and then chopped onion.
Fry the onion till it turns translucent, then add green chiles, chopped tomatoes and salt.
Cook till tomatoes soften a bit.
Stir in garam masala powder, red chilli powder and salt.
Immediately add the crumbled tofu.
Fry for a minute or two and stir in cilantro.
Serve tofu bhurji as a spread with toasted bread or with thin biscuits or with pulka or roti etc..
Notes: Used firm tofu made with sprouted soy beans.

Suggestions: Adjust the spice with either green chiles or red chile powder. Make sure there is not too much moisture left in the tofu bhurji before removing it from heat.
Variations: You can also squeeze half a lime once the bhurji is finished for more freshness.
