Spinach Puffed Rice Upma

Palakura Maramarala Upma.

Puffed rice is washed under running water and kept aside to make it soft. Chopped spinach and onion are cooked in oil along with whole spices. Finally puffed rice is mixed in and finished with dalia powder. Serve spinach puffed rice upma as a breakfast or as a quick snack.
Makes: around 2 Servings of Spinach Puffed Rice Upma

Ingredients:

Puffed Rice 2 1/2 Cups
Spinach 2 Cups Packed
Potato 1 Small (optional)
Onion 1
Green Chillies 1 – 2
Turmeric Powder a big Pinch
Garlic 2 Cloves
Dalia 1 1/2 Tbsps
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash spinach thoroughly and finely chop it.
Remove stems, wash and chop the green chillies.
Peel and chop the onion.
Peel, wash and finely chop the potato.
Peel and crush the garlic cloves.
Grind dalia / roasted gram into fine powder using a spice grinder.

Soak puffed rice in enough water for couple of seconds to half a minute.
Strain the puffed rice and keep aside.

Heat oil in a pan on medium low heat, add all talimpu ingredients in order.
When mustard seeds start spluttering, add garlic.
Fry briefly, add green chillies, potato (if using) and onion.
Fry for a minute or two till onion is translucent and potato turns soft and stir in spinach.
Once the spinach wilts, stir in soaked puffed rice and salt.
Mix carefully and make sure all the excess moisture is gone (if any).
Stir in ground dalia powder and serve spinach puffed rice upma as a breakfast or as a snack.
Notes: Don’t over soak the puffed rice.

Suggestions: If puffed rice is over soaked, then spread it on a kitchen towel and let it dry for couple of minutes before using it.

Spinach Strawberry Salad

Spinach Strawberry Salad.

Fresh strawberries are layered over a handful of baby spinach leaves and drizzled with freshly made honey dressing. Chill for few minutes if desired and serve spinach strawberry salad immediately.
Makes: around 2 Servings of Spinach Strawberry Salad.

Ingredients:

Baby Spinach Leaves 2 Cups
Fresh Strawberries 4
Sesame Seeds 1/2 tsp
Honey 2 Tbsps
Lemon Juice 1 Tbsp or Vinegar 2 Tbsps
Olive Oil 1 tsp

Method of preparation:

Whisk honey, vinegar and olive oil and keep aside.
Wash and strain the baby spinach leaves.
Remove stems, wash and slice the strawberries.

In few serving bowls, add baby spinach leaves, sliced strawberries, sesame seeds and pour little bit of freshly prepared honey dressing on top.
Serve spinach strawberry salad immediately.
Notes: Refrigerate spinach and strawberries before using.

Suggestions: Adjust honey according to your preference.
Variations: You can also add sliced onion if you wish.
Other Names: Spinach Strawberry Salad.

Spinach With Toor Dal

Palakura Senagapappu Podi Pappu.

Toor dal is either boiled or pressure cooked till soft and whole. Fresh spinach is roughly chopped and cooked in garlic infused oil. Finally cooked toor dal is added to spinach and briefly cooked. Serve spinach with toor dal over plain steamed rice or with roti.
Makes: around 4 Servings of Spinach with Toor Dal.

Ingredients:

Spinach around 8 Oz
Toor Dal 3/4 Cup
Green Chiles 2 – 3
Garlic 5 Cloves
Turmeric Powder 1/4 tsp
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Red Chiles 3
Asafoetida a big Pinch
Curry Leaves 4
Oil 1 tsp

Method of preparation:

Boil toor dal in few cups of water until the dal is soft, translucent and whole.
Strain the toor dal and reserve the liquid to make toor dal rasam.
Wash and roughly chop the spinach leaves and its tender stems.
Peel, slice and lightly crush the garlic cloves.
Wash, remove stems and slice the green chiles.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds stop spluttering, stir in green chiles and garlic cloves.
Stir fry for few seconds, stir in chopped spinach and turmeric powder.
Cook covered till the spinach completely wilts.
Now add the cooked and strained toor dal.
Cook covered for a minute if necessary and uncover.
Stir fry for couple of seconds and season with salt.
Remove from heat and serve spinach with toor dal over plained steamed rice or wrapped in roti.
Notes: Make sure not to overcook toor dal.

Suggestions: Don’t remove toor dal from heat until its soft. Reserve any leftover water to make toor dal rasam. Don’t strain the toor dal until required else it dries out fast.
Variations: You can also add a small piece of tamarind along with spinach if desired.

Palak Pakora

Palakura Pakodilu.

Fresh spinach leaves are chopped up and mixed with besan and rice flour along with spices. The mixture is then made wet and dropped into hot oil. The spinach fritters are deep fried till golden brown in color. Serve spinach fritters as a snack or with steamed rice and dollop of ghee.
Makes: around 3 Cups of Palak Pakora.

Ingredients:

Spinach 1/2 of a Small Bunch
Green Chiles 2
Besan 1/4 Cup
Rice Flour 2 Tbsps
Red Chili Powder 1/4 tsp
Ajwain a Small Pinch
Salt to Taste
Oil for Deep Frying

Method of preparation:

Wash, remove stems and finely chop the green chiles.
Wash, pat dry and roughly chop the spinach leaves.

In a mixing bowl, mix together besan, rice flour green chiles, red chili powder, ajwain, salt.
Stir in chopped spinach and sprinkle couple of tablespoons of water to make the mixture wet.

Heat oil in a pan on medium heat.
When oil gets hot, carefully drop the besan covered spinach into oil little by little with help of fingers or with help of a fork.
Once the surface of the pan is full, lower the heat if necessary.
Fry on both sides till golden brown in color.
Remove the deep fried spinach fritters onto absorbent paper.
Serve crispy spinach fritters as a snack or with steamed rice and dollop of ghee.
Notes: Make sure not to add too much water to the besan and rice flour mixture.

Suggestions: If fritters doesn’t come out crispy, add them back to hot oil and double fry till crisp.

Spinach Masala Fry

Palakura Masala Vepudu.

Fresh spinach is finely chopped and cooked in oil along with whole spices and freshly ground spices. Serve spinach masala fry with steamed rice and dollop of ghee or with roti etc…
Makes: around 4 Servings of Spinach Masala Fry.

Ingredients:

Spinach 3 Cups Packed
Green Chillies 3 – 4
Coriander Seeds 2 Tbsps
Clove 1
Cinnamon 1 inch Stick
Red Chili Powder 1/4 tsp
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Heat a heavy bottomed pan on low heat, add coriander seeds and toast them till aromatic or till they change color.
Remove coriander seeds from heat and add the clove and cinnamon.
Fry for few seconds and remove from heat.
Grind the coriander seeds, clove, cinnamon and red chili powder into fine powder using a spice grinder.

Thoroughly wash, pat dry and finely chop the spinach leaves.
Remove stems, wash and slice the green chiles.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles.
Fry briefly and stir in chopped spinach leaves.
Fry till spinach leaves wilt and start to crisp up.
Stir in freshly ground coriander seeds spice powder and salt.
Fry for few more seconds and remove from heat.
Serve spinach masala fry with steamed rice and dollop of ghee or with roti etc…
Notes: Make sure spinach is cooked well.

Suggestions: Adjust spice with green chillies. If spinach is not cooked properly, cook covered on low flame for few seconds.
Variations: Add a splash of lemon juice at the end of cooking process if you wish.
