Lady’s Finger Sesame Fry

Bendakaya Nuvvulu Vepudu.

Okra / Bhendi is washed and chopped. They are then fried in oil till golden brown in color. Fresh sesame seeds are ground into powder along with green chiles and tamarind and added to the lady’s finger as a finishing step. Serve lady’s finger sesame fry with plain steamed rice or with roti.
Makes: around 4 Servings of Lady’s Finger Sesame Fry.

Ingredients:

Lady’s Finger (Chopped) 2 1/2 Cups app.
Sesame Seeds 2 Tbsps
Green Chiles 2 – 3
Tamarind 1 inch Piece
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 Tbsps

Method of preparation:

Wash lady’s finger under water and pat them dry.
Remove little bit of both ends and chop the lady’s finger into thick circles.
Grind sesame seeds into fine powder using a spice blender.
Now add the green chiles, tamarind and salt and grind again into powder.

Heat oil in a pan, add sliced lady’s finger.
Fry on medium – high flame till lady’s finger is golden brown in color.
Stir occasionally to avoid lady’s finger from burning.
In the middle of the pan, add all talimpu ingredients.
Fry till urad dal changes color and mix everything.
Stir in ground sesame seeds powder and fry for another minute or two.
Adjust salt if necessary and remove from heat.
Serve lady’s finger sesame fry with plain steamed rice or with roti.
Notes: Make sure lady’s finger is fried well.

Suggestions: If bhindi seems uncooked, cook covered on low flame till done.

Eggplant Sesame Curry

Vankaya Nuvvu Podem Kura.

Eggplant is diced and cooked in sesame seeds powder till soft. Serve eggplant sesame curry with steamed rice and dollop of ghee. Sesame powder can be prepared by roasting sesame seeds and dried red chiles and grinding them into powder along with salt.
Makes: around 2 Servings of Eggplant Sesame Curry.

Ingredients:

American Eggplant 1/2 of Small One
Sesame Powder 3 Tbsps
Garlic 2 Cloves
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove stem, wash and chop eggplant into small chunks (around 2 1/2 Cups).
Peel and crush the garlic cloves.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add crushed garlic, eggplant pieces, sesame powder and salt.
Cook covered on low flame till eggplant turns soft (around 8 minutes).
Keep stirring occasionally to avoid eggplant from sticking to bottom of the pan.
Serve eggplant sesame curry with steamed rice and dollop of ghee.
Notes: Make sure eggplant is cooked well.

Suggestions: Adjust spice with red chili powder if necessary.
Variations: You can also use Indian eggplants instead.

Cabbage Sesame Curry

Cabbage Sesame Curry.

Cabbage is shredded and cooked in oil along with sliced onion. White sesame seeds are ground into powder along with green chiles and added to the cabbage curry. Serve cabbage sesame curry with steamed rice or with roti.
Makes: around 4 Servings of Cabbage Sesame Curry.

Ingredients:

Cabbage 1 Small
Onion 1
Sesame Seeds 5 Tbsps
Green Chiles 5 – 7
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Oil 2 Tbsps

Method of preparation:

Peel and slice the onion.
Remove outer leaves, wash and shred the cabbage.
Remove stems, wash and roughly chop green chiles.
Grind sesame seeds into powder using a spice grinder.
Then add the green chiles and salt and grind again in to powder.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add sliced onion and cabbage.
Fry for around 8 minutes on medium flame or until cabbage turns just soft.
Keep stirring occasionally to avoid cabbage sticking to bottom of pan.
Stir in sesame green chile powder and salt if required.
Cook for another minute or two and remove from heat.
Serve cabbage sesame curry with steamed rice or with roti.
Notes: Make sure not to overcook the cabbage.

Suggestions: Toast the sesame seeds till light golden in color before grinding them.

Sesame Potatoes

Sesame Potatoes.

White Sesame seeds are toasted and ground into powder with dried red chiles. Potatoes are peeled and fried in oil till golden brown in color and finished with sesame seeds powder. Serve sesame potatoes with steamed rice.
Makes: around 3 Servings of Sesame Potatoes.

Ingredients:

Potatoes 2 Large
Sesame Seeds 4 Tbsps
Whole Red Chiles 1 – 2
Salt to Taste
Curry Leaves 10
Oil 1 Tbsp

Method of preparation:

Peel, wash and chop the potatoes into small cubes.
Heat a pan on low heat, add sesame seeds.
Fry till the sesame seeds change to light brown in color.
Remove from heat and add broken red chiles and fry briefly to crisp them up and remove from heat.
Grind red chiles and salt into fine powder, then add the sesame seeds and grind again into powder using a spice grinder.

Heat oil in a pan, add chopped potatoes and fry on medium flame for around 8 minutes.
Keep stirring occasionally to avoid burning.
Stir in curry leaves and fry for another minute or two until potatoes turn golden brown on all sides.
Stir in sesame seeds powder and remove from heat.
Serve sesame potatoes with steamed rice.
Notes: Make sure potatoes are fried well before adding the powder.

Suggestions: Adjust spice with red chiles or add red chili powder along with sesame powder if necessary.

Bottle Gourd Sesame Curry

Anapakaya Nuvvula Kura.

Bottle gourd is peeled and chopped and cooked in oil along with spices. They are then finished with freshly ground sesame seeds mixture. Serve bottle gourd sesame curry with steamed rice or with roti.
Makes: around 2 Cups of Bottle Gourd Sesame Curry.

Ingredients:

Bottle Gourd (Chopped) 3 Cups
White Sesame Seeds 6 Tbsps
Green Chiles 4
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove stems, wash and roughly chop the green chiles.
Grind raw sesame seeds, green chiles into powder using a grinder.
Peel, wash, remove ends and chop the bottle gourd into small pieces.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped bottle gourd pieces and few pinches of salt.
Cook covered on low flame for around 8 minutes.
Keep stirring occasionally to avoid bottle gourd sticking to bottom of the pan.
Make sure bottle gourd is just soft but is not falling apart.
Stir in ground sesame seeds green chile mixture and salt if necessary.
Cook on low flame for another few minutes and remove from heat.
Serve bottle gourd sesame curry with steamed rice or with roti.
Notes: Make sure the raw sesame seeds are not bitter.

Suggestions: Make sure not to overcook the bottle gourd pieces.
Variations: You can also grind few tablespoons of grated coconut along with sesame if you wish.
