Turai with Peanuts Powder

Beerakaya Pallilu Karam.

Ridge gourd / turai is peeled and chopped up into big chunks. They are then cooked in oil along with onion and spices and finished with peanut spice powder. Serve ridge gourd with peanut powdder over plain steamed rice or over roti. Check out Peanut Spice Powder recipe.
Makes: around 2 Servings of Ridge Gourd with Peanut Powder.

Ingredients:

Ridge Gourd 1 Large
Onion 1 Small
Peanuts Powder 2 Tbsps
Green Chile 1 (optional)
Turmeric Powder a Pinch
Red Chili Powder a Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Red Chiles 3
Curry Leaves 5
Oil 1 Tbsp

Method of preparation:

Peel and finely chop the onion.
Lightly scrape, wash and chop the ridge gourd into small chunks (around 2 Cups).
Remove stem, wash and slice the green chile.

Heat oil in a pan, add all other talimpu ingredients in order.
when mustard seeds start spluttering, add green chile (if using), onion, chopped ridge gourd and a pinch of salt.
Fry for couple of seconds and cook covered on low flame till ridge gourd turns soft.
Stir in peanut spice powder, turmeric powder and cook covered for a minute and remove from heat.
Stir in red chili powder and serve ridge gourd with peanut powder over plain steamed rice and dollop of ghee.
Notes: Make sure ridge gourd is cooked thoroughly before removing the pan from heat.

Suggestions: If ridge gourd is not cooked well, put it back on heat and cook covered on low flame till done.

Ridge Gourd with Garlic Powder

Ridge gourd / turai is peeled and chopped up into big chunks. They are then cooked in oil and spices till cooked and finished with garlic spice mixture. Serve ridge gourd with garlic powdder over plain steamed rice or over roti. Check out Garlic Spice Mixture recipe.
Makes: around 2 Servings of Ridge Gourd with Garlic Powder.

Ingredients:

Ridge Gourd 1 Large
Dalia Powder 1 tsp
Green Chile 1 (optional)
Garlic Spice Mixture 1 Tbsp
Turmeric Powder a Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Red Chiles 3

Mix dalia powder with few tablespoons of water and keep aside.
Remove stem, wash and slice the green chile.

Spicy Ridge Gourd with Eggplant

Ridge gourd / turai is chopped up along with baby eggplants. They are then cooked in oil and spices till cooked and finished with garlic spice mixture. Serve spicy ridge gourd with eggplant over plain steamed rice or over roti. Check out Garlic Spice Mixture recipe.
Makes: around 2 Servings of Spicy Ridge Gourd with Eggplant.

Ingredients:

Ridge Gourd 1 Medium
Baby Indian Eggplants 2
Garlic Spice Mixture 1 Tbsp
Turmeric Powder a Pinch
Salt to Taste

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Red Chiles 3
Curry Leaves 5
Oil 1 Tbsp

Turai with Kasoori Methi

Beerakaya Menthi Kura.

Ridge gourd is peeled and chopped into small chunks. It is then cooked in oil along with spices till soft. Dried fenugreek leaves / kasoori methi is powdered and added to the curry while its cooking. Serve turai with kasoori methi over plain steamed rice or with roti.
Makes: around 2 Servings of Turai with Kasoori Methi.

Ingredients:

Ridge Gourd 1 Large
Dried Fenugreek Leaves / Kasoori Methi 1 Tbsp
Green Chiles 1
Red Chili Powder few Pinches
Turmeric Powder a Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Curry Leaves 4
Oil 2 tsps

Method of preparation:

Peel, wash, remove ends and chop ridge gourd into small chunks (around 2 Cups).
Rub the dried fenugreek leaves between palms to powder them.
Remove stems, wash and slice the green chiles.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles, ridge gourd pieces and salt.
Cook covered on low flame till ridge gourd pieces are half cooked.
Stir in dried fenugreek leaves powder and cook covered for another few mintues for ridge gourd to absorb all the flavors and at the same time become soft.
Uncover and stir in turmeric powder and red chili powder and fry for few seconds if desired to evaporate some of the moisture.
Serve ridge gourd dried fenugreek leaves curry over plain steamed rice or with roti.
Notes: Make sure ridge gourd pieces are cooked well before removing from heat.

Suggestions: If ridge gourd pieces are not cooked, add few tablespoons of water and cook covered on low flame till done. Adjust spice with green chiles. Add more dried fenugreek leaves if desired. Choose tender ridge gourd if possible so you don’t have to peel the skin as much.

Spicy Ridge Gourd Curry

Ridge gourd / turai is peeled and chopped into small chunks. It is then cooked in oil along with spicy green chili and garlic paste. Garnish with cilantro and serve spicy ridge gourd curry with steamed rice or with roti.
Makes: around 4 Servings of Spicy Ridge Gourd Curry.

Ingredients:

Ridge Gourd / Turai 1 Long
Garlic 3 Cloves
Green Chiles 2
Onion 1
Turmeric Powder a Pinch
Cumin Seeds a small Pinch
Cilantro few Sprigs
Salt to Taste
Oil 1 tsp

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel and roughly chop the garlic cloves.
Remove stems, wash and roughly chop green chiles.
Grind garlic cloves, green chiles, a pinch of cumin seeds into paste using a grinder or with help of a pestle.

Remove little bit of both ends and horizontally divide the turai into 3 sections.
Lightly scrape and leave as much skin as possible if preferred.
Wash the peeled ridge gourd and chop into small chunks.

Heat oil in a pan, add add all talimpu ingredients in order.
Once mustard seeds start spluttering, add green chili garlic paste.
Fry for few seconds, stir in chopped ridge gourd and onion.
Cook covered on low flame for around 5 – 8 minutes or until ridge gourd is soft.
Uncover and add turmeric powder and salt.
Fry for few more minutes if necessary and remove from heat.
Stir in cilantro and serve spicy ridge gourd curry with steamed rice or with roti.
Notes: Make sure ridge gourd is cooked well.

Suggestions: Adjust spice with green chiles.
Variations: Add a small piece of tamarind while grinding the green chili and garlic.
