Raspberry Milk Shake

Raspberry Milk Shake.

Raspberries are pounded along with sugar and almonds. It is then shaken with plain chilled milk. Honey is used as a sweetener. Serve raspberry milk shake immediately .
Makes: around 2 Servings of Raspberry Milk Shake.

Ingredients:

Raspberries 1 Cup Fresh or Frozen
Plain Chilled Milk 2 Cups
Sugar 1 Tbsp
Sliced Blanched Almonds 2 Tbsps
Honey to Taste
Ice Cubes 5 – 7 (optional)

Method of preparation:

Wash raspberries under water and drain them.
Dissolve honey in few tablespoons of water and keep aside.

Using a pestle, thoroughly crush the raspberries, sugar and a tbsp of almonds.
Add the pounded raspberry mixture and honey to the chilled milk and thoroughly shake to combine.

Pour the raspberry milk shake onto serving glasses along with ice cubes (if using)
Garnish with a tbsp of sliced almonds and serve raspberry milk shake immediately.
Notes: Make sure not to blend too much once the ice cubes are added.

Suggestions: Adjust sweetener according to your preference. Add sugar syrup in place of honey if desired.
Variations: Use almond milk in place of plain milk for a variation.
Other Names: Raspberry Milk Shake.

Raspberry Shrikand

Raspberry Shrikand.

Yogurt is hung to make it thick. Fresh or frozen raspberries are crushed with spices and sugar. It is then mixed with hung yogurt along with blanched sliced almonds. Garnish with crushed raspberries and serve raspberry shrikand immediately.
Makes: around 4 Servings of Raspberry Shrikand.

Ingredients:

Plain Yogurt 2 1/2 – 3 Cups
Fresh or Frozen Raspberries 12 – 15
Cardamom Powder a Big Pinch
Nutmeg Powder a Small Pinch
Blanched Sliced Almonds 2 Tbsps
Sugar 6 Tbsps or to Taste

Method of preparation:

Freshly grate the nutmeg using a fine grater.
Wash raspberries and carefully pat them dry.
Crush the raspberries, sugar, cardamom powder and nutmeg powder coarsely using a pestle.

Tie plain yogurt in a clean muslin cloth and hang it in refrigerator (tie the ends of cloth to the rack) for 6 – 8 hours with a bowl underneath to collect the whey. Alternatively, hang it above the kitchen sink for couple of hours and then refrigerate for an hour or so.

Remove the thick yogurt onto a mixing bowl, stir in crushed raspberry sugar mixture and sliced almonds.
Garnish with crushed raspberries and serve raspberry shrikand immediately.
Notes: Adjust sugar according to your preference. You can also add honey instead of sugar if you wish.

Suggestions: Make sure to use full fat yogurt for better taste.
Variations: Use greek yogurt instead full fat plain yogurt to avoid hanging it.
Other Names: Raspberry Shrikand.

Raspberry Smoothie

Raspberry Smoothie.

Raspberries are blended with plain yogurt into a smoothie. Honey is used as a sweetener. Serve raspberry smoothie immediately .
Makes: 2 Servings of Raspberry Smoothie.

Ingredients:

Raspberries 1 Cup
Plain or Vanilla Yogurt 1 1/2 Cups
Honey to Taste
Ice Cubes 5 – 7

Method of preparation:

Wash raspberries under water and drain them.
Blend together raspberries, yogurt and honey smoothly.
Add the ice cubes (if using) and pulse couple of times.
Pour the raspberry smoothie onto serving glasses and Serve immediately.
Notes: Make sure not to blend too much once the ice cubes are added.

Suggestions: Add sugar syrup in place of honey if desired.
Variations: Add greek yogurt in place of plain yogurt if you wish.
