Plantain Coconut Curry

Aratikaya Kobbari Kura.

Plantain / Arati kaya is chopped up and cooked in oil along with spices. Fresh coconut is ground into paste along with green chiles and ginger. The paste is then added to plantains and cooked on low flame till all flavors are absorbed and plantain is soft. Serve plantain coconut curry with steamed rice and dollop of ghee or with roti.
Makes: around 4 Servings of Plantain Coconut Curry.

Ingredients:

Green Plantain 2 Medium
Fresh Coconut (grated) 1/2 Cup
Green Chiles 3 – 4
Ginger 1 inch Piece
Turmeric Powder a big Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove ends, peel and dice the plantain.
Remove stems, wash and roughly chop green chiles.
Peel and roughly chop the ginger.
Grind ginger and green chiles into fine paste using a grinder.
Then add the grated coconut, few tablespoons of water and grind again into coarse paste.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped plantain.
Cook covered on low flame for few minutes.
Uncover, stir in ground coconut paste, few more tablespoons of water if necessary, turmeric powder and salt.
Cook covered on low flame for around 5 minutes or until plantain turns soft.
Stir the curry occasionally to avoid sticking it to bottom of the pan.
Serve plantain coconut curry with steamed rice or with roti.
Notes: Make sure plantain is cooked well.

Suggestions: If plantain is not cooked well, add a splash of water and cook covered on low flame till done.
Variations: Also add a splash of lemon juice just before serving to freshen up the plantain curry.

Plantain Tomato Fry

Plantain Tomato Fry.

Plantain is peeled and chopped into small pieces. Chopped plantain is cooked and fried till it turns brown. Tomato is chopped up and added to the pan as a finished step. Serve plantain tomato fry with steamed rice and dollop of ghee.
Makes: around 2 Servings of Plantain Tomato Fry.

Ingredients:

Plantain 2 Medium Size
Tomato 1
Red Chili Powder 1/2 tsp
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 Tbsps

Method of preparation:

Remove ends, remove the thick skin and chop the plantain into small pieces.
Wash and finely chop the tomato.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped plantain.
Fry briefly, cook covered on medium high heat for couple of soften the plantain.
Uncover, add tomato in the middle of the pan and don’t stir until tomato softens and starts to change color.
Add salt and red chili powder to taste and stir well.
Serve plantain tomato fry with steamed rice.
Notes: Make sure plantain is thoroughly fried and changes color.

Suggestions: If plantain is not cooked well, put it back on heat, add a tsp of oil and fry till done or cook covered till done.
Variations: You can also add a mixture of cumin powder and coriander powder to the plantain fry.
Other Names: Plantain Tomato Fry.

Spicy Plantain Fry

Arati Kaya Masala Vepudu.

Plantain is halved and boiled with skin till soft. The cooked plantain is briefly fried in tempered oil along with whole and powdered spices. Serve spicy plantain fry over steamed rice and dollop of ghee.
Makes: around 2 Servings of Spicy Plantain Fry.

Ingredients:

Plantain 2 Medium
Garlic 1 Clove
Cumin Powder 1/2 tsp
Coriander Powder 1 tsp
Red Chili Powder 1/4 tsp
Turmeric Powder a Pinch
Lemon Juice 1 Tbsp
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash, discard the ends, halve the plantains.
Bring to boil few cups of water, add the plantain halves, turmeric powder and salt.
Boil till the skins lose the green color and insides turn soft.
Cool to room temperature, peel and chop the plantain.

Heat oil in a small pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add garlic and plantain cubes.
Fry for a minute to roast the plantain a bit, stir in cumin powder, coriander powder, red chili powder and salt.
Add a splash of water and cook for a minute.
Remove from heat and stir in the lemon juice.
Serve spicy plantain fry over steamed rice and dollop of ghee.
Notes: Make sure plantain is cooked right.

Suggestions: If plantain is not cooked properly, either boil longer or cook covered in the pan with a splash of water.

Caramelized Plantain Chips

Teepi Aratikaya Chips.

Green plantain is peeled and sliced into thin circles. Plantain can also be cut into small chunks. They are then deep fried in oil till crisp and golden brown in color. Finally deep fried plantain chips are tossed in thick jaggery syrup and left to solidify.
Makes: around a cup and half of caramelized plantain chips.

Ingredients:

Plantain 1
Jaggery 3/4 Cup
Ghee 1/4 tsp
Oil for Deep Frying

Method of preparation:

Peel and chop the plantain into circles.
Soak the chopped plantain circles in water till necessary.
Heat oil in a deep frying pan on medium low heat.
Strain the plantain circles and carefully drop them into hot oil.
Deep fry the plantain chips until they turn crisp and light golden in color.

Heat a pan on medium heat, add jaggery, ghee and 2 Tbsps of water.
Bring to boil and let all the jaggery melt.
When the syrup thickens and turns more like honey, remove from heat.
Test drop the syrup in a bowl of water. If the syrup forms a somewhat hard ball when it touches the water, its done.

Stir in the deep fried plantain chips and cool to room temperature.
Break any big chunks into individual pieces and store tight in a jar and serve caramelized plantain chips as a snack.
Notes: Make sure plantain chips are crisp when in room temperature.

Suggestions: If the syrup doesn’t solidify when it cools, then put the chips mixture on heat and cook for couple of seconds to thicken the syrup.
Variations: Generally plantain is chopped into small chunks which takes much longer to fry.
Other Names: Sarakkavaratti, Caramelized Plantain Chips, Sarkara Upperi.

Plantain Chutney Powder

Plantain / green banana is sliced and roasted till little crisp. Then the plantain is ground into fine powder along with dalia and spices. Tamarind and jaggery provide contrasting dimensions to the plantain chutney powder. Serve the plantain powder with steamed rice or with idly, upma etc.
Makes: around 1 1/4 Cups of Plantain Chutney Powder.

Ingredients:

Plantain 1 Medium
Dalia / Putnala Pappu 1/2 Cup
Whole Dried Red Chiles 2 – 4
Tamarind 1 inch Piece
Jaggery 1 inch Block
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Broken red Chiles 4
Turmeric a Pinch
Asafoetida a pinch
Curry Leaves 4
Oil 1/4 tsp

Method of preparation:

Remove ends, remove thick skin and wash the plantain.
Thinly slice the plantain into circles.

Heat a pan on medium heat, add plantain circles.
Dry roast the plantain until they crisp up a bit indicated by curling of the circles.
Remove the pan from heat and add the dried red chiles to the warm pan.
Cool the roasted plantain to room temperature.

Grind roasted bengal gram / dalia along with tamarind, jaggery and salt into fine powder.
Then add roasted plantain circles and red chiles and grind again into fine powder.
Remove the plantain powder onto a bowl.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, remove from heat.
Once talimpu is cooled, add the ground plantain powder and mix well.
Store plantain chutney powder in a dry jar and it stays for couple of weeks.
Mix plantain chutney powder with few drops of ghee and serve with idly, dosa, upma, rice etc.
Notes: Make sure to roast the plantain well.

Suggestions: If plantain circles are soft, put them back in the hot pan and roast on medium low flame till they crisp up a little.
Variations: Also roast the plantain circles in oven.
