Papad Tomato Chaat

Papad Tomato Chaat.

Tomato and onion are finely chopped and mixed with sweet corn and spice powders. The mixture is then layered on to freshly roasted papad and papad tomato chaat is served immediately.
Makes: One Serving of Papad Tomato Chaat.

Ingredients:

Pepper Papad 1
Tomato 1
Onion 1 Tbsp (Chopped)
Sweet Corn 3 – 4 Tbsps
Red Chili Powder few Pinches
Salt to Taste
Sesame Oil 1/4 tsp
Lemon Juice 1 Tbsp
Cilantro few Sprigs

Method of preparation:

Wash and finely chop the tomato discarding the seeds.
Wash and finely chop the cilantro leaves.
Microwave papad for around 25 seconds and remove onto a plate.
Alternatively, heat the papad on direct flame until crisp.

In a mixing bowl, mix together tomato, onion, sweet corn, red chili powder, salt, sesame oil, lemon juice and cilantro.
Layer the above mixture onto the roasted papad and serve immediately.
Notes: Make sure to remove the seeds inside the tomato.

Suggestions: Adjust any seasoning if necessary.
Variations: You can also layer few pinches of chaat masala onto the papad. Check other recipes with papad here.

Papad Potato Chaat

Papad Potato Chaat.

Potatoes are boiled, peeled and mashed with spices. Chopped onion, potato mixture and herbs are layered on roasted papad along with chaat masala powder. Serve papad potato chaat immediately.
Makes: 2 Servings of Papad Potato Chaat.

Ingredients:

Peppercorn Papad 2
Potato 2 Small
Onion 1
Roasted Peanuts 1 tbsp
Lemon Juice 1 Tbsp
Cilantro few sprigs
Red Chile Powder few Pinches
Chaat Masala 1/2 tsp
Cumin Powder a Pinch
Nylon Sev 4 Tbsps
Salt to taste

Method of preparation:

Wash and halve the potatoes.
Boil the potatoes in water for around 15 minutes or until it is cooked.
Peel and mash the potato and keep aside.

Peel and finely chop onion.
Clean and finely chop cilantro.

In a mixing bowl, mix together mashed potato, half of chaat masala, cumin powder, onion, roasted peanuts, cilantro, lemon juice and salt.
Place the papad in microwave for half a minute.

In a serving plate, place the roasted papad.
Layer the roasted papad with potato mixture and few tablespoons of sev.
Sprinkle chaat masala and red chile powder.
Garnish with cilantro and serve papad potato chaat immediately.
Notes: Make sure to roast the papad just before serving.

Suggestions: Make sure to adjust red chili powder and lemon juice according to your preference.

Papad Carrot Chaat

Papad Carrot Chaat.

Carrots are peeled and grated. Chopped onion, tomato are mixed with grated carrot. The carrot mixture is layered on roasted papad along with chaat masala powder. Serve papad carrot chaat immediately.
Makes: 2 Servings of Papad Carrot Chaat.

Ingredients:

Peppercorn Papad 2
Carrot 2 Large
Tomato 2 Small
Onion 1
Roasted Peanuts 1 tbsp
Lemon Juice 1 Tbsp
Cilantro few sprigs
Red Chile Powder few Pinches
Chaat Masala 1/4 tsp
Salt to taste

Method of preparation:

Peel, remove ends, wash and grate the carrots.
Peel and finely chop onion.
Wash and finely chop the tomatoes.
Clean and finely chop cilantro.

In a mixing bowl, mix together grated carrot, onion, tomato, roasted peanuts, cilantro and lemon juice.
Place the papad in microwave for half a minute.

In a serving plate, place the papad.
Layer the roasted papa with carrot mixture.
Sprinkle salt, chaat masala and red chile powder.
Serve papad carrot chaat immediately.
Notes: Make sure to roast the papad just before serving.

Suggestions: Make sure to remove the seeds inside tomato before chopping the tomato.
Variations: Grated mango can also be added to the carrot mixture.

Quick Papad Curry

Appadala Kura.

Papad / pappadam is used to make this quick and spicy curry. This is generally made when one is out of vegetables and dals. Papad is broken is pieces and cooked in tempered oil till soft. This papad curry is generally served with pulka or with steamed rice.
Makes: around 3 Servings Quick Papad Curry.

Ingredients:

Black Pepper Papad 3
Coriander Powder 1 tsp
Cumin Powder 1/2 tsp
Red Chili Powder 1/4 tsp
Turmeric Powder a pinch
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Curry Leaves 8
Salt to taste
Oil 1 tsp

Method of preparation:

Break dried papad into small pieces.

Heat oil in a pan, add cumin seeds, mustard seeds and curry leaves.
When mustard seeds start spluttering, add coriander powder, cumin powder, red chili powder and turmeric.
Immediately pour a cup of water, add few pinches of salt.
Bring the water to boil, stir in broken papad pieces.
Cook for around 5 minutes for papad to absorb all the juices and turn soft.
Serve quick papad curry with pulka or with steamed rice.
Notes: Make sure not to overcook the papad.

Suggestions: If papad is not cooked properly, put it back on heat. Add few splashes of water and cook covered till done.
Variations: You can also add chopped vegetables like potato to the tempering. Using various varieties of papad, if not using a spicy papad, make sure to spice up the curry with red chili powder.

Papad with Mashed Potato

Papad is either roasted or deep fried until crisp. A layering is prepared with potato. Potato is boiled and mashed along with onion and other spices. Serve the mashed potato with crispy papad. You can also serve by layering the papad with prepared mashed potato.
Makes: 10 Papad with Mashed Potato.

Ingredients:

Potato 1
Red Onion 1/4 of Small One
Green Chile 1
Red Chile Powder 1/4 tsp
Turmeric Powder a pinch
Lemon Juice 1 tsp
Cilantro few Sprigs
Salt to taste
Mustard Oil 1/4 tsp
Small Papads 10

Method of preparation:

Wash and halve the potato.
Boil the potato till its soft.
Cool the potato to room temperature and peel it.
Remove stem, wash and finely chop the green chile.
Peel and finely chop the red onion.
Wash and finely chop the cilantro.

Arrange small papads on a plate and microwave for a minute or two.
Alternatively, put each of the on open flame till light golden brown and crisp.
Or, deep fry the papad till crisp.

In a mixing bowl, add chopped onion, green chile, red chile powder, turmeric powder, lemon juice, mustard oil, cilantro and salt.
Mix thoroughly and leave for couple of minutes, then add the boiled potato and mash it well along with the other ingredients in the bowl.

Serve mashed potato with roasted papad.
While eating, scoop a little bit of the mashed potato with fried papad.
Notes: Make sure potato is cooked properly before mashing it.

Suggestions: Adjust the sourness with lemon.
Variations: You can also add chopped green onion. Minced ginger or garlic can be added after briefly frying in little bit of oil.
