Pineapple Mango Salsa

Pineapple Mango Salsa.

Fresh pineapple and ripe mango are finely diced and mixed with little bit of onion and green bell pepper. The mixture can be refrigerated for couple of days. Serve pineapple mango salsa with chips of your choice.
Makes: around 1 Cup of Pineapple Mango Salsa.

Ingredients:

Pineapple 1/2 Cup (Chopped)
Ripe Mango 1/2 Cup (Chopped)
Green Bell Pepper 1 Tbsp (Chopped)
Red Onion 1 Tbsp (Chopped)
Salt a Pinch
Cilantro few Leaves

Method of preparation:

Wash and finely chop cilantro leaves.
Peel and finely chop the slightly ripe mango.
Remove skin and finely chop the pinapple.
Peel and finely chop the onion.
Wash, halve, discard seeds and finely chop the bell pepper.

In a mixing bowl, mix together chopped pineapple, mango, bell pepper, onion, cilantro and salt.
Serve pineapple mango salsa with chips of your choice.
Notes: Make sure to chop the ingredients in same size.

Suggestions: Add few pinches of sugar if mango or pineapple isn’t sweet enough.

Ground Mango Pickle Chutney

Tokkudu Magaya Pachadi.

Ground mango pickle is mixed with plain thick yogurt and seasoned with spices. For recipe of ground mango pickle, click here. Serve ground mango pickle with idly, dosa etc…
Makes: around 1 Cup of Ground Mango Pickle Chutney.

Ingredients:

Ground Mango Pickle 4 Tbsps
Plain Thick Yogurt 2 Tbsps
Onion 1 Tbsp (Chopped)

Talimpu:

Mustard Seeds a Small Pinch
Cumin Seeds a Small Pinch
Asafoetida a Small Pinch
Curry Leaves 3
Oil 1/4 tsp

Method of preparation:

In a mixing bowl, add ground mango pickle.
Mash it lightly with help of a pestle, add onion and yogurt.
Mix well and keep the pickle aside.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, remove from heat and cool to room temperature.
Once cooled, add the spices to the above mango pickle bowl.
Mix well and serve ground mango pickle chutney with idly, dosa etc…
Notes: Make sure not to add too much yogurt.

Suggestions: Adjust yogurt for chutney consistency.
Variations: You can also add finely chopped green chiles if you wish.

Mango Coconut Shrikand

Mango Coconut Shrikand.

Yogurt is hung to make it thick. Fresh or frozen grated coconut is mixed with hung yogurt along with fresh mango pulp. Garnish with sliced almonds and serve mango coconut shrikand immediately.
Makes: around 2 Servings of Mango Coconut Shrikand .

Ingredients:

Plain Yogurt 2 Cups
Fresh Ripe Mango Pulp 10 Tbsps or more
Fresh or Frozen Grated Coconut 1 Tbsp
Cardamom 1 Pod
Sliced Blanched Almonds 4 Tbsps
Sugar to Taste

Method of preparation:

Crush the cardamom pod and remove the seeds and grind the seeds into fine powder.
Freshly grate the coconut or use frozen grated coconut.

Tie plain yogurt in a clean muslin cloth and hang it in refrigerator (tie the ends of cloth to the rack) for 6 – 8 hours with a bowl underneath to collect the whey. Alternatively, hang it above the kitchen sink for couple of hours and then refrigerate for an hour or so.
Remove the thick yogurt onto a mixing bowl, stir in mango pulp, sugar, cardamom powder, grated coconut and sliced almonds.
Garnish with sliced almodns and serve mango coconut shrikand immediately.
Notes: Make sure to make the yogurt extra thick since we are using mango pulp.

Suggestions: Make sure to use full fat yogurt for better taste.
Variations: You can also add honey instead of sugar if you wish. Few tablespoons of fresh coconut milk can also be added to the yogurt if you wish.

Mango Strawberry Smoothie

Mango Strawberry Smoothie.

Strawberries are blended with fresh ripe mango and plain yogurt into a smoothie. Honey or sugar can be used as a sweetener. Serve mango strawberry smoothie immediately .
Makes: 2 Servings of Mango Strawberry Smoothie.

Ingredients:

Strawberries 8
Mango 1 Large
Plain or Vanilla Thick Yogurt 1 1/2 Cups
Honey to Taste (optional)
Ice Cubes 5 – 7

Method of preparation:

Wash strawberries under water and chop off the leaves.
Roughly chop the strawberries.
Wash the mango and squeeze the juice.
Alternatively, discard the skin and chop the pulp into small chunks.

Blend together strawberries, mango, thick yogurt and honey (if using) into smooth mixture.
Add the ice cubes (if using) and pulse couple of times.
Pour the mango strawberry smoothie onto serving glasses and garnish with mango pulp and serve immediately.
Notes: Make sure not to blend too much once the ice cubes are added.

Suggestions: Add sugar syrup or sugar in place of honey if desired.
Variations: Add greek yogurt in place of plain thick yogurt if you wish.

Quick Mango Garlic Pickle

Green raw mango is peeled and ground coarsely along with garlic cloves. The ground mango garlic mixture is then mixed with spice powders and finished with warm oil. Serve quick mango garlic pickle with steamed rice or with dosa etc…
Makes: around 2 1/2 Cups of Quick Mango Garlic Pickle.

Ingredients:

Raw Mango 1 Small
Garlic 6 – 8 Cloves
Red Chili Powder 3 Tbsps
Salt 1 Tbsp or to Taste

Talimpu:

Mustard Seeds 1/8 tsp
Cumin Seeds 1/8 tsp
Urad Dal 1/8 tsp
Asafoetida a Big Pinch
Curry Leaves 5
Oil 3 Tbsps

Method of preparation:

Peel, wash, and roughly chop the raw mango (around 1 1/2 Cups).
Peel and roughly chop the garlic cloves.
Using a blender, pulse the raw mango and garlic cloves coarsely.
Alternatively, mince the raw mango and garlic.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, remove from heat.

In a mixing bowl, add raw mango and garlic mixture, red chili powder and salt.
Mix well and stir in the above warm oil along with the spices.
Serve quick mango garlic pickle with steamed rice or with dosa etc…
Notes: Make sure not to over grind the raw mango.

Suggestions: Adjust red chili powder according to your preference.
Variations: If raw mango is not sour enough, add a tbsp or two of lemon juice. Add a pinch of fenugreek seeds powder if you desire.
