Garlicky Puffed Jowar

Jowar / Great Millet can be bought puffed. Puffed juwar is spiced up with garlic and spices in the following recipe. Spices and garlic are added to hot oil to release its flavors and puffed jowar is mixed in. Serve garlicky puffed jowar as a snack.
Makes: 2 Cups of Garlicky Puffed Jowar

Ingredients:

Puffed Jowar Dani 2 Cups
Dalia / Roasted Gram Dal 3 Tbsps
Garlic 1 – 2 Cloves
Red Chili Powder to Taste
Turmeric Powder a big Pinch
Salt to Taste
Oil 1 tsp

Method of preparation:

Peel and mince the garlic cloves.

Heat oil in a pan on medium low, add minced garlic cloves.
Once garlic starts to turn golden, add red chili powder, turmeric powder and salt.
Immediately stir in puffed jowar dani and remove from heat.
Leave the puffed juwar in the pan. The heat from pan crisps up puffed jowar.
Once cooled down to room temperature, stir in roasted gram dall and puffed jowar can be stored in a tightly sealed jar.
Serve garlicky puffed jowar as a snack.
Notes: Make sure not to burn garlic.

Suggestions: Alternatively, puffed jowar can be toasted on low flame till crisp before adding to the spice powders.
Variations: Roasted peanuts can also be added to the puffed jowar.
Other Names: Garlicky Puffed Jowar, Jonnalu Pelalu, Puffed Cholam.

Mixed Flour Roti

Ingredients:

Ragi Flour 1 cup
Jowar Flour 1 cup
Wheat Flour 1 cup
Rice Flour 1/2 cup
Cumin Seeds 1 tsp
Onion 1
Green Chile 2
Freshly Scraped Coconut 2 tbsps
Sugar a pinch
Cilantro few sprigs
Salt to taste
Oil as required

Method of preparation:

Peel, remove ends and finely chop onion.
Remove stems, wash and finely chop green chiles.
Clean, wash and roughly chop cilantro leaves.

In a mixing bowl, mix together ragi, jowar, wheat and rice flour.
Stir in chopped onion, green chiles, coconut, sugar, cilantro and salt.
Knead everything to loose dough adding enough water.

Heat a flat pan on medium – low heat.
Once pan is slightly hot, take a handful of prepared flour dough and press it onto the flat pan.
Use wet fingers to carefully flatten the dough into somewhat thin roti.
Apply oil around the roti and cook covered on low flame for 3 – 5 minutes.
Uncover and turn the roti on the other side and cook for a minute or two.
Remove from heat and repeat the same with remaining mixed flour dough.
Serve hot with any mixed vegetable curry and lemon pickle for it to be as a separate meal.

Notes: Generally, whole grains are freshly ground together and stored as a single flour to be used when in need.

Jowar Puri

Ingredients:

Jowar Flour 2 cups
Salt to taste

Method of preparation:

Bring to boil around a cup of water.
Knead jowar flour and few pinches of salt into tight dough using sufficient amount of hot water.
Take lemon sized balls out of the above jowar dough and roll them about 1 mm thick using a rolling pin.
Dust little bit of jowar flour if needed to avoid the dough sticking to the pin.

Heat a deep frying pan on medium high heat.
Once oil becomes hot, carefully drop the rolled out jowar puri into oil and lightly press it around the edges with a spatula.
Turn jowar puri on the other side and let it cook for few seconds.
Remove onto absorbent paper and repeat the same with remaining puris.
Serve hot jowar puri with any masala curry.

Notes: Add half a cup of wheat flour or rice flour to jowar flour to make rolling easier.

Jowar Roti

Ingredients:

Jowar Flour 2 cups
Salt to taste

Method of preparation:

Bring to boil around a cup of water.
Knead jowar flour and few pinches of salt into somewhat tight mixture using sufficient amount of hot water.
Take lemon sized balls out of the above jowar dough and roll it thin using palm of your hand or using a rolling pin.
Dust little bit of jowar flour if needed to avoid the dough sticking to the pin.

Heat a tawa or flat pan on medium high heat.
Once its hot, place the rolled out jowar roti and press it on the edges with a spatula until it cooks.
Turn on the other side and let it cook until you see dark spots.
Remove onto a plate and repeat the same with remaining dough.
Serve hot jowar roti with eggplant curry.

Notes: Add half a cup of wheat flour or rice flour to jowar flour to make the rolling easier.

Jowar Ladoo

Ingredients:

Jowar Flour 1 cup
Rice Flour 1 tbsp
Powdered Sugar 1 1/4 cup
Cashews 2 tbsps
Raisins 1 tbsp
Ghee 2 tbsps or as necessary

Method of preparation:

Heat a pan, add ghee and cashews.
Once cashews start to change color, add raisins.
Remove and reserve the fried cashews and raisins for later.

In the same pan, add jowar flour and rice flour.
Roast on low flame for a minute by stirring frequently to avoid burning.

In a mixing bowl, mix together roasted jowar flour, powdered sugar, fried cashews and raisins.
Add warm ghee when necessary and roll the mixture into lime sized balls.
Store tight and these jowar ladoo stays for months.

Notes: Make sure not to burn the jowar flour while roasting.
