Jack Fruit Seeds Fry with Fenugreek

Fresh or frozen jackfruit seeds are cooked and sliced. They are then briefly cooked in oil and spices. Finally jackfruit seeds fry is finished with dried fenugreek leaves and spice powders. Serve jackfruit seeds with fenugreek as a snack or with steamed rice.
Makes: 1 1/2 Cups of Jack Fruit Seeds Fry with Fenugreek.

Ingredients:

Fresh or frozen jackfruit seeds 1 1/2 Cups
Dried Fenugreek Leaves / Kasoori Methi 2 Tbsps
Turmeric Powder a big Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

If using fresh jackfruit seeds, cut jackfruit seeds into halves.
Pressure cook jackfruit seeds in enough water for 3 whistles or boil them in sufficient water till soft.
Peel off the plastic like skin from cooked jackfruit seeds and thickly slice them.
If using frozen jackfruit seeds, run them under water for few seconds and let they come to room temperature.

Crush kasoori methi between hands and keep aside.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add jackfruit seeds and kasoori methi.
Cook on low flame for a minute and stir in turmeric powder and salt.
Remove from heat and serve jackfruit seeds with fenugreek as a snack or with steamed rice.
Notes: Make sure jackfruit seeds are cooked well.

Suggestions: Add a pinch of red chili powder at end of cooking process if desired.

Raw Jack Fruit Fry

Raw Jack Fruit Fry.

Raw jack fruit is peeled and chopped up before pressure cooking or boiling or steaming it. The cooked jack fruit is then fried in oil along with onion. The fry is seasoned with garam masala and can be served with steamed rice.
Makes: around 4 Servings of Raw Jack Fruit Fry.

Ingredients:

Raw Jackfruit 1 1/2 Cups Chopped
Onion 1
Red Chile Powder 1/4 tsp
Garam Masala 1/4 tsp
Turmeric Powder 1/4 tsp
Salt to Taste
Oil 2 – 3 Tbsps
Cilantro few Sprigs

Method of preparation:

Peel and slice the onion.
Wash and finely chop the cilantro leaves.

Remove thick outer skin of the jack fruit.
Chop the jack fruit into small chunks and pressure cook with half a cup of water, turmeric powder and salt.
Remove the cooked jack fruit onto a plate.

Heat oil in a pan, add cooked jack fruit and fry till they turn golden brown.
Now stir in sliced onion and fry again till onion turns translucent and starts to brown.
Stir in garam masala powder, red chile powder and salt (if necessary).
Fry for a minute and remove from heat.
Stir in chopped cilantro and serve raw jack fruit fry with steamed rice.
Notes: Make sure jack fruit is cooked properly before removing from heat.

Suggestions: If jack fruit is not cooked well, make sure to fry the jack fruit till soft but whole.

Jackfruit Seeds Halwa

Panasa Ginjala Halwa.

Jackfruit seeds are used here to make soft halwa. Jackfruit seeds are first cooked till just done. Then the plastic outer layer is removed and the cooked jackfruit seeds are ground into fine paste. In another pot, good amount of milk is reduced till it thickens and the jacfruit seeds paste is cooked along with it. Various dried nuts and spices are added to finish the halwa.
Makes: around 1 1/2 Cups of Jackfruit Seeds Halwa

Ingredients:

Jackfruit Seeds 2 Cups
Sugar 1 Cup or more
Milk 1 1/2 Cup
Green Cardamom 1 Pod
Ghee 1 tsp + 1 tsp if required
Cashews 4
Raisins 8

Method of preparation:

Cut jackfruit seeds into halves.
Pressure cook jackfruit seeds in enough water for 3 whistles or boil them in sufficient water till soft.
Peel off the plastic like skin from cooked jackfruit seeds and roughly chop them.
Grind the jackfruit seeds with enough milk into smooth paste using a spice blender.

Crush green cardamom and remove the dark seeds. Crush the dark seeds into powder and keep aside.
Heat ghee in a small pan on medium heat, add cashews and raisins.
Fry till cashews turn light golden color and remove from heat.
Grease a small dish with ghee and keep aside.

Heat a non stick pot on medium high flame, add milk and bring to boil.
Boil till milk reduces to 1/6 of the original amount or until it starts to come together.
Then stir in ground jackfruit seeds paste, fried cashews, raisins and cardamom powder.
Cook for a minute or until it comes together a bit and stir in sufficient sugar.
Let the sugar caramalize and wait until halwa leaves the sides of the pot.
Add a tsp of ghee if it sticks to the sides of the pot and remove from heat.
Transfer the jackfruit seeds halwa onto the greased dish and let it cool to room temperature.
Cut into small pieces and serve jack fruit seed halwa.
Notes:Don’t overcook jackfruit seeds that they become mushy when lightly pressed.

Suggestions: If jackfruit seeds halwa doesn’t mould, put back on heat and cook for some more time till it comes together.
Variations: Add various nuts like almonds. Pinch of saffron gives a different taste and color.

Jackfruit Seeds Tambli

Panasa Ginjala Perugu Pachadi

Thambli or tamboli is a Mangalorean dish based on yogurt and coconut. Jackfruit seeds are used in this thambli recipe. Jackfruit seeds are pressure cooked and peeled. Coconut is ground along with jacfruit seeds and added to whisked yogurt which is later tempered. It’s generally served cold over steamed rice.
Makes: 2 Cups of Jackfruit Seeds Tambli

Ingredients:

Jack Fruit Seeds 20 – 25
Plain Yogurt 1 1/2 Cups
Grated Coconut (fresh or frozen) 3 – 4 tbsps
Green Chillies 2 – 4
Salt to taste

Talimpu:

Mustard Seeds 1/2 tsp
Curry Leaves 10
Asafoetida 1/4 tsp
Broken Red Chiles 5
Oil 1 tsp

Method of preparation:

Cut jackfruit seeds into halves.
Pressure cook jackfruit seeds in enough water for 3 whistles or boil them in sufficient water till soft.
Peel off the plastic like skin from cooked jackfruit seeds and roughly chop them.

Remove stems, wash and slice the green chiles.
Heat little bit of oil in a pan, add green chiles and fry for few seconds.
Grind grated coconut, cooked jackfruit seeds, fried green chiles and salt into smooth paste adding enough water.

In a mixing bowl, whisk yogurt and stir in ground coconut and jackfruit seeds paste.
Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds stop spluttering, remove from heat and add to above bowl and mix.
Serve jackfruit seeds thambli with plain steamed rice.
Notes: Make sure jackfruit seeds are cooked and soft but not mushy.

Suggestions: Vary the consistency of tambli by whisked yogurt and water.
Variations: Thambli can also be made with mango, gooseberry, curry leaves, Onion (Kande tambli), ginger (Alla Tambli), peppercorns, garlic (Lasonya Tambli), Fenugreek Tambli (Menthe Tambli) etc…

Eggplant and Jack Fruit Seeds Fry

Jack fruit is one of the seasonal fruits widely available all over India. Jack fruit seeds are cooked in various Indian cusines along with its tender flesh. In eggplant and jack fruit seeds curry, jack fruit seeds are chopped and cooked along with small purple eggplants. One can also boil the seeds first and then add to the cooked eggplants to make the cooking faster.
Makes: 2 Servings

Ingredients:

Eggplant 2 small
Jack Fruit Seeds 8
Onion 1 small
Red Chile Powder 1 tsp
Salt to taste

Talimpu:

Urad Dal 1/4 tsp
Cumin Seeds 1/4 tsp
Mustard Seeds 1/4 tsp
Broken Red Chiles 3
Curry Leaves 6
Oil 1 tsp

Method of preparation:

Remove the hard outer white shell and halve the jack fruit seeds.
Remove stems and dice eggplant into salted water.
Peel and finely chop onion.

Heat oil in a pan on medium low heat, add all talimpu ingredients in order.
When urad dal changes color, add jack fruit seeds.
Sprinkle water in between and cook covered for 2 – 3 minutes stirring occasionally.
Stir in onion and cover for few more minutes.
Once onion turns brown in edges, add diced eggplant and salt.
Cook covered till eggplant is soft and jack fruit seeds are soft when pierced into them.
Remove from heat and stir in red chile powder.
Serve eggplant and jack fruit seeds curry over plain steamed rice and dollop of ghee.
Notes: Make sure jack fruit seeds are cooked before adding onion.

Suggestions: Jack fruit seeds are hard – Chop the jack fruit seeds into small pieces so that they cook easily or sprinkle water and cook the curry covered for few more minutes.
Variations: Jack fruit seeds can be cooked along with various vegetables like tindora, okra and some green leaves like amaranth and spinach. But the seeds are best suited with eggplants.
