Fresh Beans Gravy Curry

Fresh Beans Gravy Curry

Fresh beans are chopped and boiled in water. They are then cooked in tomato onion gravy till beans absorb all the flavors. Serve fresh beans gravy curry with steamed rice or with roti.
Makes: around 4 Servings of Fresh Beans Gravy Curry.

Ingredients:

Fresh Beans 2 Cups (Chopped)
Onion 1
Tomato 2 Large
Green Chiles 2
Red Chili Powder 1/4 tsp
Garam Masala Powder 1/2 tsp
Ginger 1 inch Piece
Garlic 2 Cloves
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Curry Leaves 5
Oil 2 tsps

Method of preparation:

String the beans, wash and chop into around inch long pieces.
Bring to boil few cups of water in a sauce pot, add fresh beans and boil till beans change color.

Wash and roughly chop the tomatoes.
Peel, remove ends and roughly chop the onion.
Remove stems, wash and slice the green chiles.
Peel and roughly chop garlic cloves.
Peel, wash and roughly chop the ginger.

Grind ginger, onion and garlic into smooth paste and remove onto a bowl.
Grind tomatoes and green chiles into smooth paste and remove onto a bowl.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add onion paste.
Fry for around couple of minutes, stir in tomato paste, red chili powder and salt.
Stir in the cooked fresh beans, any reserved cooking liquid and boil for around 10 minutes or until beans absorb all the flavors.
Stir in garam masala and remove from heat.
Serve fresh beans gravy curry with steamed rice or with roti.
Notes: Make sure beans are cooked well.

Suggestions: Adjust spice with green chiles.

Cluster Beans Gravy Curry

Cluster Beans Gravy Curry.

Onion is ground into paste and mixed with spices for a gravy. Cluster beans are chopped up and cooked in the onion spice gravy till cooked. Serve cluster beans gravy curry with steamed rice or with roti.
Makes: around 4 Servings of Cluster Beans Gravy Curry

Ingredients:

Cluster Beans 2 Cups Chopped
Onion 1 Large
Dry Coconut (Grated) 1 Tbsp
Dalia / Roasted Gram 2 Tbsps
Coriander Seeds Powder 1 tsp
Garlic 1 Clove
Jaggery 1 Tbsp
Red Chili Powder 1/4 tsp
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel and roughly chop the onion.
Wash, remove little bit of both ends and chop cluster beans into small pieces.
Grind dry coconut, dalia, coriander seeds, garlic, jaggery, red chili powder and salt into powder using a grinder.
Then add the chopped onion and water and grind again into smooth paste.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add ground onion mixture and few tablespoons of water if necessary.
Then stir in chopped cluster beans and cook covered on low flame till cluster beans are cooked.
Uncover and adjust the consistency with water if necessary.
Serve cluster beans gravy curry with steamed rice or with roti.
Notes: Make sure cluster beans are cooked well before removing from heat.

Cluster Beans Onion Fry

Goru Chikkudu Ullipaya Vepudu.

Cluster beans / Guar are chopped up and cooked in oil along with spices and chopped onion. Once cluster beans are cooked, it is seasoned with spices. Server cluster beans onion fry with steamed rice.
Makes: around 4 Servings of Cluster Beans Onion Fry.

Ingredients:

Cluster Beans 2 Cups Chopped
Onion 1
Coriander Powder 1/4 tsp
Tumeric Powder a big Pinch
Red Chili Powder 1/2 tsp
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash, remove little bit of both ends and chop cluster beans into small pieces.
Peel and finely chop the onion.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add cluster beans and onion.
Fry briefly, add few splashes of water and cook covered on very low flame for around 10 minutes or until cluster beans change color and are cooked.
Uncover, fry for couple of minutes and stir in red chili powder, turmeric powder and salt.
Serve cluster beans onion fry with steamed rice.
Notes: Make sure cluster beans are cooked well.

Suggestions: Add a tsp more of oil if necessary while cooking the cluster beans.

Fresh Beans with Garlic Spice Powder

Chikkudukaya Velluli Karam.

Fresh beans are cooked in oil along chopped onion. Then the fresh beans fry is finished with garlic spice powder. Serve fresh beans with garlic spice powder over steamed rice. Click here for recipe of garlic spice mixture.

Ingredients:

Fresh Beans 2 Cups Chopped
Onion 1 Small
Garlic Spice Mixture 1 Tbsp
Curry Leaves 5
Oil 1 Tbsp

Method of preparation:

Wash, string the beans and chop them into inch long pieces.
Peel and finely chop the onion.
Wash and tear the curry leaves.
Heat oil in a pan, add chopped fresh beans.
Fry briefly and cook covered on low flame for around 8 – 10 minutes.
Stir occasionally to avoid beans sticking to the bottom of the pan.
In the middle of the pan, add few drops of oil and add chopped onion and curry leaves.
Fry till onion turns translucent and start to turn brown around the edges.
Stir in garlic spice mixture and salt and remove from heat.
Serve fresh beans with garlic spice powder over steamed rice and dollop of ghee.
Notes: Make sure beans are cooked well before adding onion.

Cluster Beans Potato Fry

Goru Chikkudu Alu Gadda Vepudu.

Cluster beans / Guar is chopped up and boiled till soft. They are then briefly cooked in oil along with potato and whole spices. Cluster beans fry is finished with powdered spices. Serve cluster beans potato fry over plain steamed rice or with roti.
Makes: around 4 Servings of Cluster Beans Potato Fry.

Ingredients:

Cluster Beans 1 1/2 Cups (Chopped)
Potato 1 Medium
Red Chili Powder 1/2 tsp
Turmeric Powder 1/8 tsp
Curry Leaves 3 – 4
Garllic 2 Cloves
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Oil 2 tsps

Method of preparation:

Wash, remove little bit of both ends and chop cluster beans into small pieces.
Bring to boil around a cup of water in a sauce pot, add cluster beans and salt.
Boil till cluster beans change color and turn soft but whole.
Strain the boiled cluster beans and keep aside.

Peel, wash and finely chop the potato.
Wash and tear the curry leaves.
Peel and crush the garlic cloves.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add crushed garlic, chopped potato and curry leaves.
Fry till potato turns golden brown in color.
Stir in boiled cluster beans and fry for around 3 minutes to evaporate most of the excess moisture and to let cluster beans fry a bit.
Remove from heat and stir in red chili powder, turmeric powder and salt.
Serve cluster beans potato fry over plain steamed rice or with roti.
Notes: Make sure not to over boil the cluster beans.

Suggestions: If cluster beans are not cooked well once removed from the boiling water, cook covered in the pan with a splash of water till done before adding the spice powders.
Variations: You can also add a pinch of garam masala along with red chili powder if you wish.
