Drumstick with Milk

Ingredients:

Drumsticks 8 (3 inch long)
Milk 1 cup
Green Chiles 2
Ginger 1/2 inch piece
Garlic 2 pods
Onion 1
Coriander Seeds 1 tbsp
Cumin Seeds 1 tsp
Peanuts 4 tsps
Rice Flour 1 tbsp
Cilantro few sprigs
Salt to taste

Talimpu:

Urad Dal 1/2 tsp
Cumin Seeds 1/2 tsp
Mustard Seeds 1/2 tsp
Curry Leaves 3
Oil 2 tsps

Method of preparation:

Remove stems, wash and slice green chiles.
Peel and mince ginger.
Peel and lightly mash garlic pods.
Peel and finely chop onion.
Whisk together milk and rice flour without any lumps.

Heat a tsp of oil in a pan, roast peanuts, coriander seeds and cumin seeds separately and grind all of them into fine powder.

Heat few cups of water in a pot, add drumsticks and boil until drumsticks are cooked inside.
Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles, garlic pods, ginger and onion.
Once onion turns translucent, stir in cooked drumsticks, milk, ground peanut powder and salt.
When everything comes together, remove from heat.
Garnish with cilantro, serve hot with steamed rice and a dollop of ghee.

Notes: Make sure drumsticks are cooked inside before following the rest of the recipe.

Drumstick Mango Kadhi

Mamidikaya Molakkada Pulusu

Ingredients:

Raw Mango 1
Drumsticks 2 ( each app. 15 inch long)
Onion 1
Green Chiles 2
Besan / Gram Flour 2 tbsps
Red Chile Powder 1 tsp
Turmeric Powder a pinch
Tender Curry Leaves 3
Salt to taste

Talimpu:

Chana Dal 1 tsp
Urad Dal 1 tsp
Cumin Seeds 1 tsp
Mustard Seeds 1 tsp
Broken Red Chiles 4
Curry Leaves 8
Oil 1 tsp

Method of preparation:

Remove stems, wash and slit green chiles.
Wash, peel, deseed and chop raw mango into small chunks.
Lightly scrape, wash and chop drumsticks into app. 3 inch long sticks.
Peel and finely chop onion.
Whisk together a cup of water, besan, red chile powder and turmeric powder into smooth paste without any lumps.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles, onion, drumsticks and salt.
Cook covered until drumsticks change color and are soft inside.
Stir in chopped mango and whisked besan mixture.
Keep covered on low flame until mango chunks are cooked.
Garnish with freshly teared curry leaves and serve with steamed rice.

Notes: Make sure mango is sour enough before starting this recipe.

Drumsticks Patoli

Molakkada / Munakkada Patoli

Ingredients:

Drumsticks 5 – 7 sticks(5 inch long)
Chana Dal 1/2 cup
Moong Dal 1/2 cup
Garlic 10 – 15 pods
Whole Dried Red Chiles 5 – 8
Salt to taste

Talimpu:

Urad Dal 1 tsp
Cumin Seeds 1 tsp
Mustard Seeds 1 tsp
Broken Red Chiles 4
Curry Leaves 8
Oil 2 tbsps

Method of preparation:

Remove stems, deseed and tear dried red chiles.
Peel and roughly chop garlic pods.
Soak drumsticks in water and boil them until insides is cooked and soft.

Soak chana dal and moong dal together in water for around 3 hours.
Grind the soaked dals along with red chiles, garlic and salt into coarse paste by adding least amount of water.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add coarsely ground dal.
Stir fry for 5 minutes and add cooked drumsticks.
Fry the whole mixture until almost all moisture is gone and dals are completely cooked.
Serve hot with steamed rice and ghee.

Notes: Make sure not to add much water while grinding both the dals.

Mustard Drumsticks

Ingredients:

Drumsticks 10 (4 inch sticks)
Whole Dried Red Chiles 5 – 8
Mustard Seeds 1 1/2 tbsps
Cumin Seeds 2 tsps
Garlic 3 pods
Ginger 1 inch piece
Onion 1 small
Tender Curry Leaves 4
Salt to taste
Oil 1 tbsp

Method of preparation:

Lightly scrape drumsticks.
Remove stems, remove seeds and tear red chiles.
Peel and roughly chop onion, garlic and ginger.
Grind all the ingredients except drumsticks and curry leaves into fine paste adding enough water.
Boil drumsticks in water until soft and cooked inside.

Heat a flat pan on medium high heat, add oil, ground masala paste and drumsticks.
Stir fry until masala is well coated onto drumsticks and until the raw smell of the masala has gone.
Serve with steamed rice and a dollop of ghee.

Notes: Make sure drumsticks are cooked through.

Drumstick Leaves Stir Fry

Ingredients:

Plucked Drumstick Leaves 1 1/2 cups
Freshly Scraped Coconut 1 cup
Green Chiles 6 – 8
Ginger 1 inch piece
Turmeric Powder a pinch
Salt to taste

Talimpu:

Chana Dal 1 tsp
Urad Dal 1 tsp
Cumin Seeds 1 tsp
Mustard Seeds 1 tsp
Broken Red Chiles 4
Curry Leaves 8
Oil 1 tsp

Method of preparation:

Clean and thoroughly wash drumstick leaves.
Remove stems, wash and vertically slice green chiles.
Peel and finely chop onion.
Peel and finely chop ginger.

Heat oil in a depp pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles, onion and ginger.
When onion turns translucent, add cleaned drumstick leaves and turmeric powder.
Sprinkle few drops of water and cook covered until drumstick leaves wilt.
Uncover and stir fry for a minute.
Finally stir in scraped coconut and remove from heat.
Serve with steamed rice and ghee or with pulka.

Notes: Make sure to fry drumstick leaves right.
