Spicy Coriander Powder

Spicy Coriander Powder.

Whole coriander seeds are roasted in a pan till aromatic. Chana dal and spices are also roasted and ground into fine powder along with coriander seeds. The powder is then stored tight in a jar and can be served with idly, dosa etc or with steamed rice and dollop of ghee.
Makes: around 1/2 Cup of Spicy Coriander Powder.

Ingredients:

Coriander Seeds 1/4 Cup
Chana Dal 1/8 Cup
Dried Whole Red Chili 4 – 5
Cumin Seeds 1/4 tsp
Garlic 3 Cloves
Salt to Taste
Oil 1/4 tsp

Method of preparation:

Lightly crush the garlic cloves.
Break the dried red chiles into pieces.

Heat oil in a heavy bottomed pan on low flame, add garlic cloves, coriander seeds, chana dal, cumin seeds and whole red chiles and fry till aromatic or until chana dal is light golden brown in color.
Cool all the roasted ingredients to room temperature.
Grind the roasted ingredients into powder along with sufficient salt.
Store in a dry place and this coriander seeds powder stays fresh for couple of months.
Serve spicy coriander powder with idly, dosa or plain steamed rice and dollop of ghee.
Notes: Make sure not to burn any of the ingredients while roasting.

Suggestions: Adjust spice with red chili.

Coriander Chili Powder

Coriander Chili Powder.

Whole coriander seeds are roasted in a pan till aromatic. Couple of lentils and spices are also roasted and ground into fine powder along with coriander seeds. The powder is then stored tight in a jar and can be served with idly, dosa etc or with steamed rice and dollop of ghee.
Makes: around 1/2 Cup of Coriander Chili Powder.

Ingredients:

Coriander Seeds 1/4 Cup
Urad Dal 1/8 Cup
Toor Dal 1/8 cup
Dried Whole Red Chili 3 – 4
Tamarind 2 inch Piece
Asafoetida a big Pinch
Salt to Taste

Method of preparation:

Heat a heavy bottomed pan on low flame, add coriander seeds, urad dal, toor dal and whole red chiles separately and fry till aromatic or until light golden brown in color.
Cool all the roasted ingredients to room temperature.
Grind the roasted ingredients along with tamarind, asafoetida and salt.
Store in a dry place and this coriander seeds chili powder stays fresh for months.
Serve coriander chili powder with idly, dosa or plain steamed rice and dollop of ghee.

Variations: You can also add the coriander seeds chili powder as a seasoning to fried vegetables (potato fry, bhendi fry etc)

Coriander Seeds Powder

Dhaniyala Podi / Dhaniyala Karam

Ingredients:

Coriander Seeds 1 cup
Whole Red Chiles 1 – 2
Whole Black Pepper a pinch
Tamarind lime sized ball
Salt to taste

Method of preparation:

Heat a shallow pan on low flame, add coriander seeds and whole red chiles.
Once aromatic, remove from heat and add black pepper, teared tamarind and salt.

Cool the ingredients to room temperature and grind them into fine powder.
Store tight in a dry place and this coriander seeds powder stays fresh for months.
Serve with idly, dosa or plain steamed rice and dollop of ghee.

Notes: Make sure not to burn any of the ingredients.

Seasoned Green Chiles in Coriander Powder

Ingredients:

Indian Green Chiles 15 – 20 app.
Coriander Seeds 3/4 cup
Salt 1/2 cup
Oil 1 cup

Method of preparation:

Roast coriander seeds in a shallow pan until aromatic and grind them into fine powder once completely cooled.

Remove stems, wash and pat dry green chiles.
Once completely dried, slit the green chiles in the middle with its tail intact.

In a dry glass jar, add green chiles, coriander powder and salt.
Pour oil all over the top and seal the lid.
Leave the jar for 3 – 6 days by stirring each day.
Serve with hot steamed rice, plain dal and ghee.
Stays for couple of months fresh if kept in a dry place.

Notes: Choose tender green chiles for this recipe, if you can.

Ingredients:

corriander seeds 4tbsp
Red chillies 8
urad dal 1cup
tamarind lemon sized ball
jaggery 6tbsp
ginger 1 inch piece
salt to taste
oil 1tbsp

Method of preparation:

Heat oil in a pan, add red chilies, corriander seeds, urad dal and fry until light golden brown.

Grind the above fried mixture with tamarind, jaggery, ginger, salt into smooth paste using sufficient amount of water.

This can be stored in air tight container in fridge and used when required.
Serve with idli, dosa…
