Asparagus with Cilantro

Asparagus with Cilantro.

Fresh asparagus is sliced into inch long pieces and cooked in oil along with whole spices. The curry is then finished with coarsely ground cilantro. Serve asparagus with cilantro over plain steamed rice.
Makes: around 4 Servings of Asparagus with Cilantro.

Ingredients:

Asparagus 1 Bunch
Green Chiles 2 – 3
Ginger 1 inch Pice
Cilantro 1/2 Cup Packed
Turmeric Powder a big Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash thoroughly and snap off the hard ends of the asparagus.
Slice the asparagus with a slight slant on the knife into inch long pieces.
Remove stems, wash and slice the green chiles.
Peel and grate the fresh ginger.
Wash and grind the cilantro coarsely.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles, ginger and sliced asparagus.
Cook covered on low flame for around 8 minutes or until asparagus is soft.
Stir in ground cilantro, turmeric powder and salt.
Fry briefly and remove from heat.
Serve asparagus with cilantro over plain steamed rice.
Notes: Make sure asparagus is cooked well before removing from heat.

Suggestions: You can also grind the cilantro, green chiles and ginger. If asparagus is not cooked well, put it back on heat and cook covered till done.

Lemon Cucumber Cilantro Curry

Dosakaya Kothimera Kura.

Lemon cucumber is peeled and chopped into small pieces. It is then cooked along with whole spices and onion. Once cucumber turns soft, finish with cilantro and serve lemon cucumber cilantro curry over plain steamed rice or with roti.
Makes: around 2 Servings of Lemon Cucumber Cilantro Curry.

Ingredients:

Lemon Cucumber 1 Medium
Onion 1 Small
Garlic 2 Cloves
Green Chiles 1 – 2
Dalia / Roasted Gram 2 Tbsps
Turmeric Powder a big Pinch
Cilantro Leaves 1 Cup Packed
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel, wash and halve the lemon cucumber.
Discard the seeds and chop the lemon cucumber into inch size pieces.
Peel and finely chop the onion.
Remove stems, wash and slice the green chiles.
Peel and crush the garlic cloves.
Wash and very finely chop the cilantro leaves.
Grind the dalia into fine powder using a spice grinder.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add garlic and green chiles.
Fry briefly, stir in chopped onion and fry till it turns translucent and start to brown.
Add the lemon cucumber pieces and cook covered for few minutes or until cucumber is soft.
Stir in cilantro leaves, turmeric powder, dalia powder and salt.
Serve lemon cucumber cilantro curry over plain steamed rice or with roti.
Notes: Make sure cucumber is cooked well before removing from heat.

Suggestions: Adjust spice with green chiles. If lemon cucumber is not sour enough, add a small piece to tamarind along with onion. If cucumber is not cooked well, put it back on heat and cook covered on low flame till done.

Easy Cilantro Rice

Kothimera Annam.

Onion is sliced and fried in oil along with whole spices. Fresh cilantro / coriander leaves is very finely chopped and added to the spiced oil along with steamed rice. Easy cilantro rice is finished with lemon juice and can be served with yogurt or raita of your choice.
Makes: around a Serving of Easy Cilantro Rice.

Ingredients:

Fresh or Leftover Steamed Rice 1 1/4 Cups
Cilantro 1 Cup Packed
Coriander Powder 1/4 tsp
Cumin Powder 1/8 tsp
Salt to Taste
Lemon Juice 1 tsp

Talimpu:

Caraway Seeds a Pinch
Star Anise 1/2 of One Piece
Cumin Seeds a Big Pinch
Bay Leaf 1 Small
Broken Dried Red Chiles 3 – 4
Oil 2 tsps

Method of preparation:

Wash and finely chop the cilantro leaves.
Peel and thinly slice the onion.

Heat oil in a pan, add all talimpu ingredients in order.
When cumin seeds change color, add sliced onion.
Fry till onion starts to turn dark around the edges, add leftover rice, cumin powder, coriander powder, cilantro and salt.
Cook till rice warms up and cilantro cooks a bit, remove from heat.
Stir in lemon juice and serve easy cilantro rice with any raita of your choice.
Notes: Make sure not to overcook the rice once cilantro is added.

Suggestions: Adjust spice with red chillies.
Variations: Add sliced green chiles for extra spice.

Spicy Cilantro Rotti

Roti batter is prepared with idly rawa and urad dal. The batter is then fermented and made into thick rotti. The rotti is layered with freshly chopped cilantro and spice mixture. Once the cilantro rotti is cooked, it can be served with coconut chutney or sambar.
Makes: around 5 Spicy Cilantro Rotti.

Ingredients:

Idly Rawa 1 Cup
Urad Dal 1/2 Cup
Cilantro 2 Cups Packed
Green Chiles 1 – 2
Cumin Seeds 1/2 tsp
Salt to taste
Oil as required

Method of preparation:

Soak urad dal in water for 3 hours.
Grind the soaked urad dal into smooth paste adding sufficient amount of water.
Soak ildy rawa in water for couple of minutes and squeeze the excess water out of it and keep aside.
Mix together urad dal paste, soaked idly rawa and salt thoroughly.
Add water to not make the mixture thick and gooey.
Leave the idly batter in a warm place for around 8 hours.

Wash and finely chop the cilantro leaves.
Remove stems, wash and chop the green chiles into circles.
Using a pestle, lightly crush the green chiles and cumin seeds with few pinches of salt.

Heat a flat pan on medium heat, pour 2 ladles of batter on the pan.
Spread the batter into thick 5 – 6 inch rotti.
Layer the rotti with crushed cilantro mixture.
Cook covered for around 5 minutes on medium – low flame.
Uncover, pour a tsp of oil and turn over the rotti.
Cook the roti for another 2 minutes on a low flame for cilantro leaves to cook and crisp up a bit.
Serve cilantro rotti with coconut chutney or with sambar.
Notes: Refrigerate the remaining batter for a week or two for more cilantro rotti.

Suggestions: If rotti is uncooked inside, put it back on heat and cook covered on low flame till done.
Variations: You can also mix the cilantro mixture into the batter instead of layering it.

Snake Gourd Cilantro Curry

Snake Gourd Cilantro Curry.

Snake gourd is peeled and the chopped before boiling in salted water. It is then briefly fried in oil along with spices and freshly ground cilantro leaves mixture. Serve snake gourd cilantro curry with steamed rice and dollop of ghee.
Makes: around 4 Servings of Snake Gourd Cilantro Curry

Ingredients:

Snake Gourd 1 Long
Green Chiles 2 – 3
Dalia 1/2 Tbsp
Cilantro a Bunch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel, wash, discard seeds and chop snake gourd into small pieces (around 3 Cups).
Wash, separate leaves and roughly chop cilantro.
Remove stems, wash and slice the green chiles.
Pulse the cilantro leaves and green chiles without adding any water or with very little water.
Grind dalia into fine powder.

Bring to boil around a cup of water, add snake gourd and salt.
Boil till snake gourd is just cooked. Strain the snake gourd and keep aside.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add cooked snake gourd pieces.
Fry for few seconds, stir in cilantro mixture and dalia powder.
Cook on low flame for a minute or two and remove from heat.
Serve snake gourd cilantro curry with steamed rice and dollop of ghee.
Notes: Make sure snake gourd is cooked well before removing from heat.

Suggestions: If snake gourd is not boiled till cooked, cook covered in the pan with a splash of water till snake gourd is cooked.
