Sesame Idli Podi

Sesame Idli Podem.

White sesame seeds are toasted and ground into powder along with toasted chana dal and spices. The freshly prepared powder is then mixed with warm ghee. This can be served with steamed idli or dosa etc…
Makes: around 4 Servings of Sesame Idli Podi.

Ingredients:

Chana Dal 4 Tbsps
Sesame Seeds 2 Tbsps
Whole Red Chiles 1
Warm Ghee 2 Tbsps
Salt to Taste

Method of preparation:

Heat a heavy bottomed pan on low heat, add chana dal and fry till its aromatic or it turns light golden in color.
Remove the chana dal from heat, add the sesame seeds and fry for few seconds and remove from heat.
Add a drop of ghee and fry the broken red chile till it turns dark and remove from heat.

Cool the chana dal and sesame seeds and grind them into fine powder along with red chiles and salt.
Remove the ground sesame dili podi on to a bowl.
Stir in warm ghee and serve sesame idli podi with steamed idly or dosa etc…
Notes: Make sure not to burn any of the ingredients.

Suggestions: Adjust spice with red chillies. Store the sesame idli podi in a tight jar and mix with ghee just before serving.
Variations: You can also add few seeds of cumin seeds while grinding the sesame. Check other powder recipes here.

Chana Dal Besan Curry

Chana Dal Besan Curry.

Chana dal is cooked till just soft but whole. Besan / gram flour is made into paste and added to the cooked chana dal and boiled till besan is cooked. Finally whole spices are fried in ghee and added to the chana dal curry. Serve chana dal besan curry with roti, steamed rice or with poori etc..
Makes: around 4 Servings of Chana Dal Besan Curry.

Ingredients:

Chana dal 1/4 Cup
Besan/ Gram Flour 3 Tbsps
Red Chili Powder 1/2 tsp
Turmeric Powder a Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 4 – 5
Asafoetida a Big Pinch
Curry Leaves 5
Ghee 1 tsp

Method of preparation:

In a bowl, mix together besan, red chili powder, salt and around half a cup of water to make a smooth paste without any lumps.

Soak chana dal in water for 3 – 4 hours.
Bring to boil a cup of water in a saucepot, add chana dal.
Boil till chana dal is cooked and translucent without being mushy.
Once chana dal is cooked, lower the flame and stir in besan paste.
Add another half a cup of water and let the besan paste cook for around 3 – 5 minutes.

Heat ghee in a small pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, remove from heat and add to the above besan mixture.
Stir well and serve chana dal besan curry with roti, steamed rice or with poori etc..
Notes: Make sure chana dal is cooked right.

Suggestions: Adjust the consistency of the curry with water. For more gravy, add more besan and accordingly add the red chili powder.
Variations: You can also pressure cook chana dal with 3/4 cup or so of water for 2 whistles to cook it.

Spicy Idli Powder

Spicy Idli Powder.

Chana dal, urad dal and sesame seeds are roasted and ground into fine powder along with spices and salt. Serve spicy idly powder with steamed idli and dollop of ghee.
Makes: around 1 Cup of Spicy Idli Powder.

Ingredients:

Chana Dal 1/2 Cup
Urad Dal 1/4 Cup
White Sesame Seeds 1/8 Cup
Raw Rice 2 Tbsps
Dry Red Chili 2 – 3
Asafoetida 1/8 tsp
Salt to Taste

Method of preparation:

Dry roast chana dal, urad dal, sesame seeds separately on a heavy bottomed pan.
Add few drops of oil and roast the dried red chiles till aromatic or until they turn dark.
Cool all the roasted ingredients to room temperature.
Grind all the roasted ingredients along with asafoetida and salt into fine powder.
Serve spicy idly powder with steamed idli and dollop of ghee.
Notes: Make sure not to burn any of the ingredients.

Suggestions: Make sure to roast the ingredients in low flame on a heavy bottomed pan.

Ridge Gourd Chana Dal Curry

Ridge gourd is washed and the skin is chopped into pieces. Chopped ridge gourd is then boiled in water till just soft. The skins are then fried in oil along with boiled chana dal and spices. Serve ridge gourd skins chana dal curry with steamed rice and dollop of ghee.
Makes: around 4 Servings of Ridge Gourd Chana Dal Curry.

Ingredients:

Ridge Gourd 2 – 3 Medium
Chana Dal 1/4 Cup
Grated Coconut 4 Tbsps
Red Chile Powder 1/2 tsp
Turmeric Powder a Pinch
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash, remove ends and thickly slice the ridge gourd skins (around 2 Cups).
Chop the ridge gourds skins into big chunks.
Boil chana dal in enough water for around 15 – 20 minutes or until they are soft and translucent.
Strain the cooked chana dal and keep aside.

Bring to boil two cups of water to high boil, stir in chopped ridge gourd skins and salt.
Boil till ridge gourd changes to light green in color and turns just soft.
Strain the ridge gourd and keep aside.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, cooked ridge gourd.
Fry for few minutes or until ridge gourd takes a light brown color.
Stir in cooked chana dal, red chili powder and salt.
Fry for couple of seconds, stir in grated coconut and remove from heat.
Serve ridge gourd skins chana dal curry with steamed rice and dollop of ghee.
Notes: Make sure ridge gourd skins are not over cooked. Overcooking loses the taste and texture of the ridge gourd.

Suggestions: If the ridge gourd is not boiled properly, either boil for longer time or cook covered along with spices till its done.

Chana Dal Stuffed Ridge Gourd

Chana Dal Stuffed Ridge Gourd.

Chana dal is soaked in water and ground into paste along with spices. The ground chana dal mixture is then stuffed in lightly scraped ridge gourd. The stuffed ridge gourd is cooked on low flame till its soft. Serve this chana dal stuffed ridge gourd with steamed rice and dollop of ghee.
Makes: Chana Dal Stuffed Ridge Gourd.

Ingredients:

Ridge Gourd 2 ( app. 10 inch long)
Chana Dal 1/4 Cup
Green Chiles 2 – 3
Tamarind 1 inch sized ball
Cumin Seeds 1/2 tsp
Red Chile Powder 1/4 tsp
Turmeric Powder a pinch
Cilantro few Sprigs
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Lightly scrape, remove ends, wash and chop ridge gourd into 2 inch long cylinders.
Make a slit in each ridge gourd vertically twice and keep aside.
Wash and finely chop the cilantro.
Soak tamarind in few tablespoons of water and extract all the thick pulp.
Soak chana dal in water for around 3 – 5 hours or until chana dal turns soft.
Strain the chana dal and keep aside.

Grind soaked chana dal, green chiles, cumin seeds and salt into coarse paste by adding few tablespoons of water.
In a mixing bowl, add the ground chana dal mixture and stir in the cilantro leaves.
Stuff each ridge gourd cylinder with at least tablespoon of the ground chana dal mixture.

Heat oil in a pan on medium heat, add all talimpu ingredients in order.
When mustard seeds start spluttering, arrange the stuffed ridge gourd in the pan.
Add quarter cup of water, tamarind extract and cook covered on low flame for around 10 – 15 minutes.
Turn the ridge gourd on other side, add a splash of water and cook covered on low flame for another 3 – 5 minutes.
When ridge gourd turns soft but not mushy, uncover and fry for a minute or two to roast the outer skin a bit.
Stir in turmeric powder, red chili powder and chopped cilantro and remove from heat.
Serve chana dal stuffed ridge gourd with steamed rice or with roti.
Notes: Make sure ridge gourd is cooked properly before removing from heat.

Suggestions: Make sure chana dal mixture is not too thick because it tightens when cooked. If ridge gourd is not cooked properly, put the curry back on heat. Add few tablespoons of water and cook covered on low flame till done.
Variations: You can also stuff the ridge gourd with besan, or stuff with peanutsetc…
