Cauliflower with Onion

Cauliflower with Onion.

Cauliflower is broken into small florets and chopped into small pieces before cooking in oil along with spices and onion. Green chiles are added for spice and lemon juice for freshness. Serve cauliflower onion fry with steamed rice and dollop of ghee or with roti or chapati etc…
Makes: around 4 Servings of Cauliflower with Onion.

Ingredients:

Cauliflower 1/2 Head
Onion 1
Green Chiles 1 – 2
Ginger 1 inch Piecce
Lemon Juice 1 tsp
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Clove 1
Cinnamon 1/2 Inch Piece
Curry Leaves 5
Oil 2 Tsps

Method of preparation:

Remove outer leaves, hard stem and wash the cauliflower.
Break the cauliflower into very small florets and chop them into small pieces.
Also chop the hard stems into small pieces.
Peel and finely chop the onion.
Remove stems, wash and finely chop the green chiles.
Peel and very finely chop the ginger.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped onion.
Fry till onion turns translucent, add chopped green chiles and ginger.
Fry for few seconds and add the chopped cauliflower.
Fry for a minute, cook covered for around 3 – 5 minutes or until cauliflower is soft but not mushy.
Stir in lemon juice and remove from heat.
Serve cauliflower with onion over steamed rice or with roti.
Notes: Make sure cauliflower is cooked well.

Suggestions: If cauliflower is not cooked properly, cook covered on low flame till done. Add a tbsp of water to the cauliflower if required.

Cauliflower Mango Pickle

Cauliflower Mango Pickle.

Cauliflower is washed and chopped into pieces. It is then mixed with spice powders along with grated raw mango. Finally oil with fried spices is added to the cauliflower mixture. Serve cauliflower mango pickle with steamed rice or with idly etc…
Makes: around 2 Cups of Cauliflower Mango Pickle.

Ingredients:

Cauliflower 1/2 of Small Head
Red Chili Powdder 1/4 Cup
Raw Mango 1 Small
Lemon Juice 1 – 2 Tbsps
Salt 1/8 Cup

Talimpu:

Chana Dal 1/4 tsp
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Asafoetida a Big Pinch
Oil 1/8 Cup

Method of preparation:

Peel and grate the raw mango (app. 1/2 Cup).
Remove outer leaves, wash and pat dry cauliflower.
Chop cauliflower into around inch long pieces (around 2 Cups).

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering and chana dal turns brown, remove from heat.

In a mixing bowl, mix together red chili powder and salt.
Stir in cauliflower and raw mango and then the hot oil with all the spices.
Mix well and stir in lemon juice.
Keep aside for around an hour to mature.
Serve cauliflower mango pickle with steamed rice or with idly etc…
Notes: Make sure raw mango is sour enough.

Suggestions: Adjust the amount of lemon juice according to sourness of the mango.

Cauliflower Tomato Curry

Cauliflower Tomato Curry.

Cauliflower is washed and chopped into small chunks. Chopped cauliflower is then cooked in oil along with whole and powdered spices. Once cauliflower is cooked well, chopped tomato is added to the cauliflower as a final step. The curry is garnished with cilantro and serve hot with steamed rice or with roti.
Makes: around 6 Servings of Cauliflower Tomato Curry.

Ingredients:

Cauliflower 1 medium Head
Tomato 1 Large
Green Chiles 2 – 3
Ginger Garlic Paste 1/4 tsp
Coriander Powder 1/2 tsp
Cinnamon 1/2 inch Stick
Cloves 2
Red Chili Powder 1/4 tsp
Cilantro few sprigs
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Oil 2 tsps
Salt to taste

Method of preparation:

Remove outer leaves, wash cauliflower and chop it into small chunks.
Remove stems, wash and slice the green chiles.
Wash and finely chop the tomato.
Wash and finely chop the cilantro leaves.
For masala, grind half inch of cinnamon stick and 2 cloves into fine powder.

Heat oil in a pan, add mustard seeds and cumin seeds.
When cumin seeds start to change color, add ginger garlic paste.
Fry briefly and add sliced green chiles and chopped cauliflower florets.
Stir fry for couple of seconds, cook covered for few minutes.
Uncover, add the ground masala powder in the middle of the pan with little oil.
Fry briefly and stir.
Cook covered on low flame till cauliflower is soft but not mushy (around 5 minutes).
Uncover, add chopped tomato, red chili powder, coriander powder and salt.
Stir fry for few more seconds and remove from heat.
Garnish with chopped cilantro and serve cauliflower tomato curry with steamed rice or with roti.
Notes: Make sure to cook the cauliflower well and don’t overcook the tomato.

Suggestions: If cauliflower is not cooked properly, cook covered on low flame till done. Adjust green chiles according to spice preference.
Variations: You can also add lemon juice during the last stage of the cooking.

Cumin Seeds 1/4 tsp
Curry Leaves 5
Oil 2 Tbsps

Method of preparation:

Remove stems, wash and grind the green chiles using a blender.

Heat oil in a pan, add mustard seeds and cumin seeds.
When mustard seeds start spluttering, add chopped onion.
Fry till onion turns golden brown in color, add the green chile paste.
Fry for few seconds and add the chopped cauliflower.
Fry for a minute, cook covered for around 3 – 5 minutes or until cauliflower is soft but not mushy.
Uncover, add coriander powder and salt.
Stir fry for a minute and remove from heat.
Add lemon juice and mix well.
Serve cauliflower onion fry with steamed rice or with roti.
Notes: Make sure cauliflower is cooked well.

Suggestions: If cauliflower is not cooked properly, cook covered on low flame till done. Add a tsp of water to the cauliflower if required.

Cauliflower Rasam

Cauliflower Rasam.

Cauliflower is grated up and boiled in water along with moong dal. Oil is tempered with spices and added to the rasam as a final step. Serve cauliflower rasam with steamed rice and dollop of ghee.
Makes: around 2 Cups of Cauliflower Rasam.

Ingredients:

Cauliflower 1/4 of Small Head
Moong Dal 1/4 Cup
Green Chiles 1 – 2
Ginger 1 inch Piece
Turmeric Powder 1/8 Pinch
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 1 tsp

Method of preparation:

Remove outer leaves, wash the cauliflower and grate the cauliflower.
Remove stems, wash and slice the green chiles.
Peel, wash and finely chop the ginger.

Bring to boil a cup of water, add washed moong dal and turmeric powder.
Boil till moong dal becomes just transparent.
Add around a cup of water, green chiles, ginger, cauliflower, curry leaves and salt to the pot.
Boil for around 10 minutes or until cauliflower is cooked.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, remove from heat and add to above rasam.
Boil the rasam for another minute and remove from heat.
Serve cauliflower rasam with steamed rice and dollop of ghee.
Notes: Make sure moong dal is cooked well before adding cauliflower to the pot.

Suggestions: Adjust the consistency of the cauliflower rasam with water.
