Bell Pepper Bottle Gourd Curry

Bell Pepper Bottle Gourd Curry.

Bottle gourd and red bell pepper and chopped up and cooked in oil along with whole spice mix (panch phoran). Once the ingredients are cooked, it is seasoned with powdered spices. Serve bell pepper bottle gourd chutney with steamed rice and dollop of ghee.
Makes: around 4 Servings of Bell Pepper Bottle Gourd Curry.

Ingredients:

Bottle Gourd 1/2 of Small One
Red Bell Pepper 1
Green Chiles 1 – 2
Panch Phoran 1/2 tsp
Red Chili Powder 1/4 tsp
Turmeric Powder a big Pinch
Salt to Taste
Oil 1 tsp

Method of preparation:

Remove stems, wash and slice the green chiles.
Wash, remove stem, discard seeds and chop red bell pepper into small pieces.
Peel, wash, remove ends and chop bottle gourd into small chunks.
Heat oil in a pan, add panch phoran.
Once mustard seeds splutter and the spices are aromatic, add the green chiles and chopped bottle gourd.
Cook covered on low flame along with a splash of water for 5 minutes.
Once bottle gourd is cooked a little, stir in red bell pepper and salt.
Cook covered again for another 5 minutes till bottle gourd and bell pepper are cooked well and turns soft.
Stir in red chili powder ,turmeric powder and remove from heat.
Serve bell pepper bottle gourd chutney with steamed rice and dollop of ghee.
Notes: Make sure bottle gourd is cooked well before removing from heat.

Suggestions: If any of the ingredients are uncooked, put the pan on heat and cook covered till bottle gourd and red bell pepper is cooked well.

Ridge Gourd Capsicum Curry

Beerakaya Butta Pacchi Mirchi Kura.

Ridge gourd is peeled and chopped into small chunks. They are then cooked in oil along with spices and chopped red bell pepper. The curry is seasoned with spice powder before removing from heat. Serve ridge gourd capsicum curry over plain steamed rice or with roti.
Makes: around 4 Servings of Ridge Gourd Capsicum Curry.

Ingredients:

Ridge Gourd 1 Small (app 10 inch long)
Red Bell Pepper / Capsicum 1
Onion 1
Red Chili Powder 1/4 tsp
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 3
Oil 2 tsps

Method of preparation:

Peel and finely chop the onion.
Peel, wash, remove ends and chop ridge gourd into small chunks (around 2 Cups).
Wash, remove stem, discard seeds and chop red bell pepper into small pieces.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add ridge gourd pieces, onion, red bell pepper and salt.
Fry for a minute or two, add a splash of water and cook covered on low flame till ridge gourd pieces are soft.
Uncover and stir in red chili powder.
Stir fry for a minute or two to evaporate any excess moisture.
Serve ridge gourd capsicum curry over plain steamed rice or with roti.
Notes: Make sure ridge gourd is cooked well.

Suggestions: If ridge gourd pieces are not cooked, add few more tablespoons of water and cook covered till done. If ridge gourd is tender, let the bell pepper cook a little before adding the ridge gourd.
Variations: Add few pinches of coriander powder or a pinch of garam masala along with red chili powder if you wish. Check other recipes with ridge gourd here.

Capsicum with Moong Dal

Butta Pachi Mirapakaya Pesarapappu Kura.

Moong dal is soaked and fried in oil along with spices. Fresh green bell pepper is chopped up and cooked in oil along with moong dal. Once bell pepper is cooked and moong dal is light golden brown, serve capsicum with moong dal over plain steamed rice or with roti.
Makes: around 2 Servings of Capsicum with Moong Dal.

Ingredients:

Green Bell Pepper 1
Moong Dal 1/4 Cup
Green Chile 1
Turmeric Powder a Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Soak moong dal in water for an hour or two.
Strain the soaked moong dal and keep aside.

Wash, remove stem, discard seeds and finely chop the bell pepper.
Remove stems, wash and slice the green chile.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add sliced green chiles.
Fry briefly, add chopped capsicum.
Fry for a minute or two, stir in soaked moong dal and turmeric.
Fry for few minutes till moong dal is fried, season with salt.
Once bell pepper is cooked and moong dal is lightly fried, remove from heat.
Serve capsicum with moong dal over plain steamed rice or with roti.
Notes: Make sure moong dal is soaked well.

Suggestions: If moong dal or bell pepper is not fried well, put it back on heat and fry till done.

Bell Peppers with Potato

Red and yellow bell peppers are chopped into small pieces. Potato and onion are also chopped and cooked in oil along with spices and bell peppers. Serve bell peppers with potato with steamed rice or with roti.
Makes: around 4 Servings of Bell Peppers with Potato.

Ingredients:

Red Bell Pepper 1
Yellow Bell Pepper 1
Potato 2 Small
Onion 1 Small
Green Chiles 1 – 2
Coriander Seeds 1/2 tsp
Red Chili Powder 1/4 tsp
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash, remove stems, discard seeds and finely chop the red bell pepper and yellow bell pepper.
Peel, wash and finely chop the potato.
Peel and finely chop the onion.
Remove stems, wash and slice the green chiles.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add sliced green chiles.
Fry briefly, stir in chopped onion, potato, bell pepper (red and yellow) and salt.
Cook covered on low flame for around 5 minutes or until potato is soft and bell pepper is cooked.
Uncover, stir in coriander powder, red chili powder and fry for few minutes.
Serve bell peppers with potato with steamed rice or with roti.
Notes: Make sure bell pepper is cooked well.

Suggestions: Adjust green chiles according to spice. If the curry is not cooked well, add a splash of water and cook covered on low flame till done.

Crispy Capsicum Fry

Crispy Capsicum Fry.

Green bell pepper is chopped into small chunks and mixed with flour and spices. The capsicum is then fried in little oil till dark golden brown in color. Serve crispy capsicum fry with steamed rice.
Makes: around 4 Servings of Crispy Capsicum Fry.

Ingredients:

Capsicum / Green Bell Pepper 2
Besan 3 Tbsps
Rice Flour 4 Tbsps
Ginger Garlic Paste 1/2 tsp
Red Chili Powder 1/4 tsp
Green Chiles 1
Salt to Taste
Oil 4 – 6 Tbsps

Method of preparation:

Wash, remove stems, discard seeds and chop capsicum into small chunks.
Remove stem, wash and grind green chile into paste.

In a mixing bowl, mix together besan, rice flour, ginger garlic paste, green chili paste, red chili powder and salt.
Add chopped capsicum pieces to the bowl along with a splash of water.
Mix together to let the flour mixture stick to the capsicum.

Heat oil in a wide pan on medium heat.
When oil gets hot, carefully add the capsicum pieces and distribute them to the whole pan.
If you have small pan, then add the capsicum in batches but don’t overcrowd the pan.
Fry for few minutes and turn the capsicum pieces.
Fry till the capsicum pieces turn brown in color.
Remove the capsicum fry onto absorbent paper.
Repeat the same with any remaining capsicum.
Serve crispy capsicum fry with steamed rice.
Notes: Make sure to fry till crisp and dark golden brown in color.

Suggestions: Make sure to add just enough water to make the flour stick to the capsicum pieces. Add more flour to counter the extra water. Make sure to adjust the spice with green chiles.
