Cabbage with Spinach

Cabbage Palakura.

Fresh whole spices mixture Panch Phoran is added to hot oil to release the flavors. Cabbage is shredded and cooked in spiced oil along with spinach leaves. Serve cabbage with spinach leaves over plain steamed rice and dollop of ghee or with roti or chapati.
Makes: around 3 Servings of Cabbage with Spinach.

Ingredients:

Cabbage 1/2 of Small Head
Spinach Leaves 2 Cups Packed
Whole Red Chiles 3 – 4
Panch Phoran 1 Tbsp
Salt to taste

Method of preparation:

Remove outer leaves, wash and shred the cabbage.
Discard the hard part in the middle of the cabbage while shredding.
Break dried red chiles into pieces.
Wash and roughly chop the spinach leaves.

Heat oil in a pan, add panch phoran.
When mustard seeds start spluttering, add broken red chillies.
Fry briefly, stir in shredded cabbage.
Fry for couple of minutes or medium high flame till cabbage softens are start to brown around the edges.
Make sure to stir the cabbage continuously to avoid burning.
When cabbage is soft while holding a very light crunch, stir in chopped spinach.
Fry for another minute or two and remove from heat.
Season with salt and serve cabbage with spinach leaves over plain steamed rice and dollop of ghee or with roti or chapati.
Notes: Make sure cabbage is cooked right.

Suggestions: Adjust the dried red chillies according to taste.
Variations: You can also add other vegetables like green beans, potato, fresh peas etc..

Cabbage Avocado Salad

Cabbage Avocado Salad.

Red and green cabbage are thinly shredded. Choice of bell peppers is thinly sliced along with onion. These ingredients are mixed with diced avocado and seasonings along with lemon juice for a quick and crisp cabbage avocado salad. Serve cabbage avocado salad immediately or refrigerate for later use.
Makes: around 4 Servings of Cabbage Avocado Salad.

Ingredients:

Red Cabbage 1 Cup Shredded
Cabbage 1 Cup Shredded
Red Bell Pepper few Slices
Orange Bell Pepper few Slices
Onion 1 Small
Cilantro few Sprigs
Crushed Black Pepper a big Pinch
Sliced Almonds 2 Tbsps
Avocado 1/2
Salt to Taste
Lemon 1 Tbsp

Method of preparation:

Chop half of the avocado into small chunks.
Peel and thinly slice the onion.
Wash and finely chop the cilantro leaves.

In a mixing bowl, mix together all the ingredients.
Serve cabbage avocado salad immediately or refrigerate for later use.
Notes: Make sure not to leave the cabbage avocado salad outside for a long time.

Suggestions: Adjust the amount of ingredients to your preference.
Variations: Lightly mash the avocado so it sticks better to the cabbage. Your choice of nuts can also be added.

Quick Red Cabbage Raita

Quick Red Cabbage Raita.

Whole spices are added to hot oil to bring out the flavors. Red cabbage is finely shredded and added to the hot pan for it to soften a bit but not to be mushy or completely cooked. Mix the red cabbage with plain yogurt. Serve quick red cabbage raita with steamed rice or with roti.
Makes: around 4 Servings of Quick Red Cabbage Raita.

Ingredients:

Yogurt 1 1/2 Cups
Red Cabbage 1/4 of Small Head
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 5 – 6
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove outer leaves, wash and finely shred the red cabbage (around a cup and half).
Whisk plain yogurt with salt and keep aside.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add shredded red cabbage.
Fry for a minute or two till the cabbage slightly softens, and remove from heat.
Once the mixture cools down to room temperature, add the cooked cabbage to the whisked yogurt.
Mix well and garnish with more red cabbage mixture if desired.
Serve quick red cabbage raita with steamed rice or with roti.
Notes: Make sure not to overcook red cabbage.

Suggestions: Make sure to adjust the consistency of the red cabbage raita with yogurt and water.
Variations: Stir in finely chopped cilantro to the red cabbage raita if you wish. Add a pinch of roasted cumin powder to taste.

Red Cabbage Onion Stir Fry

Red Cabbage Onion Stir Fry.

Red cabbage is shredded and stir fried in oil along with sliced onion and whole spices. Finally stir fry is seasoned with red chilli flakes and cilantro leaves. Serve red cabbage onion stir fry with steamed rice or with roti.
Makes: around 2 Servings of Red Cabbage Onion Stir Fry.

Ingredients:

Red Cabbage 1/2 of Small Head
Onion 1 Large
Whole Red Chiles 1 – 2
Cilantro few Sprigs
Panch Phoran 1 Tbsp
Red Chilli Flakes few Pinches
Salt to Taste
Oil 1 Tbsp

Method of preparation:

Bread dried red chiles into pieces.
Remove outer leaves, wash and shred the red cabbage.
Peel and slice the onion.
Wash and finely chop the cilantro leaves.

Heat oil in a pan, add panch phoran.
When mustard seeds start to splutter, add red chiles.
Then stir in sliced onion and red cabbage.
Fry for a minute and cook covered for another minute.
Uncover and stir fry till red cabbage is cooked and starts to brown around the edges.
Stir in cilantro, red chilli flakes and salt and remove from heat.
Serve red cabbage onion stir fry with steamed rice or with roti.
Notes: Make sure red cabbage is cooked well before removing from heat.

Suggestions: If red cabbage is not cooked well, put it back on heat and cook covered till done. For red chilli flakes, grind the dried red chiles coarsely using a spice grinder.
Variations: You can also add few tablespoons of grated coconut after removing the stir fry from heat.

Cabbage Herb Fritters

Cabbage Herb Fritters.

Cabbage is washed and sliced along with peeled onions. It is then mixed with rice flour and besan along with spices and herbs. The cabbage herb mixture is then deep fried in oil till it turns golden brown in color and crisp. Serve cabbage herb fritters as a snack or with steamed rice and dollop of ghee.
Makes: around 6 Servings of Cabbage Herb Fritters.

Ingredients:

Cabbage 1/8 of Small Size
Onion 1 Small
Spinach 1 Cup Packed
Cilantro 1/2 Cup Packed
Rice Flour 1/3 Cup
Besan / Gram Flour 1/8 Cup
Sooji 2 Tbsps
Red Chili Powder 1 tsp
Salt to Taste
Oil for deep Frying

Method of preparation:

Remove outer leaves, wash and thinly slice the cabbage (around 2 Cups).
Peel and slice the onion.
Wash and roughly chop the spinach and cilantro leaves.

In a mixing bowl, mix together rice flour, besan, sooji, red chili powder and salt.
Add the cabbage, onion, spinach and cilantro and sprinkle around 4 tablespoons of water.
Mix carefully to let the flour stick to the cabbage and herbs (don’t add more water unless needed).

Heat oil in a deep frying pan on medium – low heat.
Carefully drop the cabbage mixture into hot oil.
Fry for around a minute or until cabbage turns light golden brown in color.
Remove the crispy fried cabbage herb fritters onto absorbent paper.
Repeat the same with any remaining cabbage mixture.
Serve cabbage herb fritters as a snack or with steamed rice and dollop of ghee.
Notes: Make sure herbs are not over fried.

Suggestions: Adjust the crispness of the cabbage with rice flour. Keep adjusting the flame to let the oil stay at a medium to low temperature so that the cabbage won’t burn once it hits the oil. Don’t let the cabbage mixture sit for long before deep frying it.
Variations: You can also add sliced green chili for extra spice to the fritters.
