Cabbage with Dalia Powder

Cabbage with Dalia Powder.

Cabbage is shredded once the outer leaves are removed. Shredded cabbage is cooked in oil along with spices and onion. Then it is seasoned with freshly ground dalia powder. Serve cabbage with dalia powder over plain steamed rice and dollop of ghee or with roti or chapati.
Makes: around 3 Servings of Cabbage with Dalia Powder.

Ingredients:

Cabbage 1/2 of Small Head
Dalia / Roasted Gram 4 Tbsps
Red Chili Powder few Pinches
Turmeric Powder few Pinches
Green Chiles 1 – 2 (optional)
Garlic 1 Clove
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel and crush the garlic.
Grind dalia into fine powder using spice grinder.

Remove outer leaves, wash and finely shred the cabbage.
Discard the hard part in the middle of the cabbage while shredding.
Remove stems, wash and slice the green chiles (if using).
Peel and finely slice the onion.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add garlic and green chiles.
Fry briefly, stir in sliced onion and shredded cabbage.
Fry for couple of minutes on medium high flame till cabbage softens and start to brown around the edges.
Make sure to stir the cabbage continuously to avoid burning.
When cabbage is soft while holding a very light crunch, stir in ground dalia powder, red chili powder, turmeric powder and salt.
Fry briefly and serve cabbage with dalia powder over plain steamed rice and dollop of ghee or with roti or chapati.
Notes: Make sure cabbage is cooked right.

Suggestions: If cabbage is not cooked well, put it back on heat and cook covered on low flame till done. Adjust green chiles or red chili powder according to spice preference.

Sweet Sour Cabbage Stew

Cabbage Teepi Pulusu.

Cabbage is shredded and cooked along with toor dal. Jaggery and tamarind are added for sweetness and sourness. Once cabbage is cooked, finish with freshly fried whole spices. Serve sweet sour cabbage stew with steamed rice and dollop of ghee.
Makes: around 6 Servings of Sweet Sour Cabbage Stew.

Ingredients:

Toor Dal 1/4 Cup
Cabbage 1/8 of Small One
Onion 1 Small
Green Chiles 1 – 2
Fenugreek Seeds 2
Turmeric Powder 1/4 tsp
Tamarind 3 inch Piece
Jaggery 1/8 Cup Grated
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove outer leaves and shred the cabbage.
Remove stems, wash and slice the green chiles.
Peel and slice the onion.
Soak tamarind in a cup of warm water and extract all the juice.

Pressure cook toor dal in half a cup of water for 3 whistles.
Alternatively, boil toor dal in a sauce pot with 2 cups of water for around 20 minutes or until toor dal is just cooked.
Add green chiles, cabbage, onion, fenugreek seeds, tamarind, jaggery, turmeric powder and salt to the sauce pot containing toor dal.
Add a cup of water if necessary and boil for around 10 – 12 minutes or until cabbage is cooked.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, remove from heat and add to cabbage stew pot.
Boil for another minute or two and remove from heat.
Serve sweet sour cabbage stew with steamed rice and dollop of ghee.
Notes: Make sure cabbage is cooked well before removing from heat.

Suggestions: Adjust tamarind and jaggery according to your preference.
Variations: You can also thoroughly mash the toor dal before adding cabbage.

Cabbage Peanut Gravy Curry

Cabbage Peanut Gravy Curry.

Fresh green cabbage is chopped up and cooked in oil along with onion and spices. Tomatoes are then added to the cabbage along with freshly ground peanut spice powder. The curry is cooked till it comes together and cabbage peanut gravy curry can be served with steamed rice or with roti.
Makes: around 4 Servings of Cabbage Peanut Gravy Curry.

Ingredients:

Cabbage 1/4 of Small Head
Onion 1 Small
Tomato 2 Medium
Raw Peanuts 1/8 Cup
Garlic 1 – 2 Cloves
Whole Red Chiles 2 – 3
Salt to Taste
Oil 1 tsp

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove outer leaves, wash and chop the cabbage.
Peel and finely chop the onion.
Wash and finely chop the tomatoes.
Peel and crush the garlic clove.

Heat a tsp of pan on low heat, add peanuts and roast them till they turn light golden brown.
Remove the peanuts onto a bowl, add red chillies and garlic in the same pan.
Fry till red chillies change color and remove from heat.
Cool the fried ingredients to room temperature and grind peanuts, red chillies, garlic into fine powder using a spice blender.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped onion and cabbage.
Fry till cabbage changes color and starts to brown around the edges.
Stir in chopped tomato, ground peanut powder and salt.
Cook till tomatoes break and the curry comes together.
Serve cabbage peanut gravy curry with steamed rice or with roti.
Notes: Make sure not to burn any of the ingredients while frying.

Suggestions: Adjust spice with red chiles or add green chiles while adding cabbage.
Variations: Add a small piece of tamarind if desired along with tomatoes.

Cabbage with Sesame Powder

Cabbage with Sesame Powder.

Cabbage is shredded once the outer leaves are removed. Shredded cabbage is cooked in oil along with spices. Then it is seasoned with freshly ground sesame seeds powder. Serve cabbage with sesame powder over plain steamed rice and dollop of ghee or with roti or chapati.
Makes: around 3 Servings of Cabbage with Sesame Powder.

Ingredients:

Cabbage 1/2 of Small Head
Sesame Seeds 4 – 5 Tbsps
Whole Red Chile 1
Green Chiles 1 – 2 (optional)
Garlic 1 Clove
Salt to Taste

Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp

Heat a pan on low heat, add sesame seeds and fry till they turn light golden in color.
Stir in red chiles and garlic and remove from heat.
Cool the mixture to room temperature and grind into powder using a spice blender.

When cabbage is soft while holding a very light crunch, stir in ground sesame powder and salt.

Cabbage with Black Eyed Beans

Cabbage with Black Eyed Beans.

Cabbage is shredded and cooked in oil along with whole spices. Black eyed beans is pressure cooked and added to the pan along with powdered spices. Serve cabbage with black eyed beans over plain steamed rice and dollop of ghee or with roti or chapati.
Makes: around 3 Servings of Cabbage with Black Eyed Beans.

Ingredients:

Cabbage 1/2 of Small Head
Boiled Black Eyed Beans 1 Cup
Green Chiles 2 – 3
Ginger 1 inch Piece
Turmeric Powder 1/8 tsp
Salt to taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel, wash and mince the ginger.
Remove stems, wash and slice the green chiles.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles and minced ginger.
Fry briefly, stir in shredded cabbage.
Fry for couple of minutes or medium high flame till cabbage softens are start to brown around the edges.
Make sure to stir the cabbage continuously to avoid burning.
When cabbage is soft while holding a very light crunch, add the black eyed beans in the middle of the pan.
Fry for another minute or two and stir in turmeric powder and salt.
Stir everything well and remove from heat.
Serve cabbage with black eyed beans over plain steamed rice and dollop of ghee or with roti or chapati.
Notes: Make sure cabbage is cooked right.

Suggestions: Soak the black eyed beans for couple of hours and pressure cook for 3 whistles.
Variations: A pinch of garam masala can also be added as a finishing step.
