Blueberry Shrikand

Yogurt is hung to make it thick. Fresh or frozen blackberries are crushed with spices and sugar. It is then mixed with hung yogurt along with sliced pistachios. Garnish with sliced pistachios and serve blueberry shrikand immediately.
Makes: around 4 servings of Blueberry Shrikand

Ingredients:

Plain Yogurt 2 1/2 – 3 Cups
Fresh or Frozen Blueberries 15 – 20
Cardamom Powder a Big Pinch
Nutmeg Powder a Small Pinch
Sliced Pistachios 2 Tbsps
Sugar 6 Tbsps or to Taste

Method of preparation:

Freshly grate the nutmeg using a fine grater.
Wash blueberries and carefully pat them dry.
Crush the blueberries, sugar, cardamom powder and nutmeg powder coarsely using a pestle.

Tie plain yogurt in a clean muslin cloth and hang it in refrigerator (tie the ends of cloth to the rack) for 6 – 8 hours with a bowl underneath to collect the whey. Alternatively, hang it above the kitchen sink for couple of hours and then refrigerate for an hour or so.
Remove the thick yogurt onto a mixing bowl, stir in crushed blueberry sugar mixture and sliced pistachios.
Garnish with sliced pistachios and serve blueberry shrikand immediately.
Notes: Adjust sugar according to your preference. You can also add honey instead of sugar if you wish.

Suggestions: Make sure to use full fat yogurt for better taste.
Variations: Use greek yogurt instead full fat plain yogurt to avoid hanging it.

Blueberry Banana Smoothie

Blueberry Banana Smoothie.

Blueberries are blended with chilled milk into thick smoothie along with ripe banana. Honey is added for sweetness and blanched almonds for garnish. Serve blueberry banana smoothie immediately.
Makes: around a Glass of Blueberry Banana Smoothie.

Ingredients:

Blueberries 1/4 Cup
Chilled Milk 1 Cup
Ripe Banana 1
Honey to Taste
Sliced Blanched Almonds for Garnish

Method of preparation:

Peel and the banana and roughly chop it.

Blend all the ingredients in a blender smoothly.
Pour into a serving glass and serve immediately.
Notes: Make sure to blend the blueberries well.

Suggestions: Adjust sweetness with honey.
Variations: Substitute honey with sugar if you wish.
Other Names: Blueberry Banana Smoothie.

Blueberry Almond Smoothie

Blueberries are blended with almond milk into thick smoothie using a blender. Honey is added for sweetness and blanched almonds for texture. Serve blueberry almond smoothie immediately.
Makes: one Serving of Blueberry Almond Smoothie.

Ingredients:

Blueberries 1/4 Cup
Chilled Almond Milk 1 Cup
Honey to Taste
Sliced Blanched Almonds 1 Tbsp

Method of preparation:

Blend all the ingredients in a blender smoothly.
Pour into a serving glass and serve immediately.
