Peanuts Stuffed Bitter Gourds

Peanuts Stuffed Bitter Gourds.

Peanuts are roasted and are coarsely ground with spices and toasted sesame seeds. The freshly prepared spice powder is stuffed inside the bitter gourds and cooked on low heat till soft inside and crisp outside. Serve peanuts stuffed bitter gourd with plain steamed rice.
Makes: 6 Peanuts Stuffed Bitter Gourds.

Ingredients:

Bitter Gourd 6 Small
Raw Peanuts 1/4 Cup
Sesame Seeds 4 Tbsps
Whole Red Chiles 2 – 3
Tamarind 2 inch Piece
Salt to taste
Oil 1 Tbsp + 1/4 tsp

Method of preparation:

Heat a pan on low heat, add raw peanuts and roast them till they turn golden brown on all sides.
Remove the peanuts from heat, add sesame seeds.
Toast the sesame seeds for few seconds and remove from heat.
Heat 1/4 tsp of oil in the same pan, add broken red chiles and fry till aromatic or until they are crisp and turn dark.
Cool the ingredients to room temperature.
Grind roasted peanuts, sesame seeds, red chiles, tamarind and salt into somewhat coarse powder.

Lightly scrape, wash, remove ends and make a vertical slit in the stomach of bitter gourd keeping its ends intact.
Remove and discard seeds to hollow the bitter gourds.
Stuff each bitter gourd with few tablespoons of prepared peanuts sesame powder.

Heat a tbsp of oil in a nonstick pan on medium low heat, arrange the stuffed bitter gourds in the pan.
Cook covered on low flame for bitter gourds to soften and starts to turn golden brown (around 8 minutes).
Uncover, make sure to carefully turn the bitter gourd to uncooked side and cook covered for few more minutes.
Uncover and turn the bitter gourds on the uncooked sides and fry till they are completely cooked and starts to turn dark brown.
Serve peanuts stuffed bitter gourd with plain steamed rice.
Notes: Choose small thin bitter gourds which aid in proper stuffing and frying.

Suggestions: If bitter gourd is not cooked properly, put them back on heat, sprinkle few drops of water if necessary and cook covered till done. If using large bitter gourds, either deep fry them or increase the cooking time. Add more oil while frying for a crispier version of stuffed bitter gourds
Variations: To reduce the bitterness, apply a tsp of salt all over and inside the bitter gourd. Leave aside for an hour or two and wash under running water before stuffing them.

Bitter Gourd Cashews Fry

Bitter Gourd Cashews Fry.

Bitter gourd is thinly sliced and fried in oil till golden brown in color. A freshly ground mixture of grated coconut and cashews is added to the bitter gourd fry. Serve bitter gourd cashews fry with steamed rice and dollop of ghee.
Makes: around 2 Servings of Bitter Gourd Cashews Fry.

Ingredients:

Bitter Gourd 2 Medium
Cashews 5
Grated Fresh Coconut 4 Tbsps
Red Chili Powder 1/4 tsp
Salt to Taste
Oil 1 Tbsp

Method of preparation:

Lightly scrape, remove ends, wash and chop the bitter gourd into thin slices.
Grind cashews into fine powder using spice grinder.
Then add the grated coconut and grind again for few seconds and remove from heat.

Heat oil in a pan, add sliced bitter gourd.
Fry on medium flame till bitter gourd changes color and start to brown.
Stir in ground cashews coconut mixture and salt.
Mix thoroughly and fry for a minute or two and remove from heat.
Stir in red chili powder and serve bitter gourd cashews fry with steamed rice and dollop of ghee.
Notes: Make sure not to over fry the bitter gourd.

Suggestions: Adjust spice with red chili powder.
Variations: Add a pinch of sugar along with red chili powder if you wish.

Grated Bitter Gourd Fry

Grated Bitter Gourd Fry.

Bitter gourd is washed and grated. Grated bitter gourd is fried in oil till it changes color and starts to brown. It is then mixed with powdered spices. Serve grated bitter gourd fry with steamed rice or with roti.
Makes: around a Serving of Grated Bitter Gourd Fry.

Ingredients:

Bitter Gourd 2
Red Chili Powder few Pinches
Turmeric Powder a big Pinch
Salt to Taste

Talimpu:

Mustard Seeds 1/8 tsp
Cumin Seeds 1/8 tsp
Urad Dal 1/8 tsp
Broken Dried Red Chiles 3 – 4
Oil 2 tsps

Method of preparation:

Lightly scrape, wash, remove ends and grate bitter gourd.
Lightly squeeze the grated bitter gourd to remove some of the moisture.

Heat oil in a pan, add grated bitter gourd.
Fry on low flame for around 5 – 10 minutes stirring frequently to avoid burning.
Let the bitter gourd change color and start to brown.
Add few drops of oil in the middle of pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, mix everything well and remove from heat.
Stir in red chili powder, turmeric powder and salt.
Serve grated bitter gourd fry with steamed rice or with roti.
Notes: Make sure bitter gourd is not over fried.

Suggestions: Adjust spice with broken red chiles. Use thick side of the grater to grate the bitter gourd.
Variations: Add a pinch of amchur powder to the fry if you wish.

Bitter Gourd with Sesame Powder

Bitter Gourd with Sesame Powder

Bitter gourd is thinly sliced and fried in little bit of oil till they are cooked and turns brown in color. A freshly ground mixture of sesame seeds and spices are added to the bitter gourd curry as a last step. Serve bitter gourd with sesame powder over steamed rice and dollop of ghee.
Makes: around 4 Servings of Bitter Gourd with Sesame Powder.

Ingredients:

Bitter Gourd 2 – 3 Medium
Sesame Seeds 4 Tbsps
Cashews 3 – 4
Whole Red Chiles 2 – 3
Salt to Taste
Oil 1 Tbsp

Method of preparation:

Lightly scrape, remove ends and wash the bitter gourds.
Thinly slice the bitter gourd and keep aside.
Break red chiles into small pieces and discard some of the seeds (if necessary).
Grind sesame seeds, cashews, red chiles and salt into powder using spice blender.

Heat oil in a pan, add sliced bitter gourd.
Fry on medium flame for around 15 minutes or until bitter gourd turns brown in color and is cooked.
Stir frequently while frying the bitter gourd to avoid scorching.
Stir in ground sesame powder and adjust salt if necessary.
Fry for 2 – 3 minutes or until sesame seeds powder is fried properly.
Remove from heat and serve bitter gourd with sesame powder over steamed rice and dollop of ghee.
Notes: Make sure bitter gourd is fried well.

Cashew Stuffed Bitter Gourd

Cashew Stuffed Bitter Gourd .

Cashews are ground into paste along with browned onion and spices. Bitter gourds are boiled till cooked and soft. They are then stuffed with the prepared cashew paste and fried in little oil till golden brown in color. Serve cashew stuffed bitter gourd with steamed rice.
Makes: 6 Cashew Stuffed Bitter Gourd .

Ingredients:

Bitter Gourd 6 Small Sized
Cashews 7
Onion 1 Large
Garlic 2 Cloves
Red Chili Powder 1/2 tsp
Salt to Taste
Oil 1 Tbsp

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Peel and grate the garlic cloves.
Break the cashews into small pieces.
Lightly scrape, remove ends and slit the bitter gourd keeping its ends intact.
Boil the bitter gourd in enough water along with a tbsp of yogurt, turmeric powder and salt.
Boil till bitter gourd is cooked and turns just soft.
Strain the bitter gourd and keep aside.

Heat oil in a pan, add chopped onion.
Fry on medium low flame till onion is brown in color.
Add the garlic paste in the middle of the pan and fry for few seconds till it cooks.
Then stir in red chili powder and salt.
Cool the mixture to room temperature and grind into smooth paste along with cashews and few tablespoons of water.
Remove the cashew paste onto a bowl.
Stuff each bitter gourd with a big spoon of ground cashew paste and keep aside.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, slowly arrange the stuffed bitter gourd in the pan.
Fry on low flame till the bitter gourd turn brown on all sides.
Remove the cooked bitter gourd from heat and serve cashew stuffed bitter gourd with steamed rice.
Notes: Make sure bitter gourds are not overboiled.
