Banana Almond Milkshake

Banana Almond Milkshake.

Blanched almonds are ground into fine powder. Banana is chopped and blended with milk and almonds into smooth mixture. Serve banana almond milkshake immediately.
Makes: 2 Servings of Banana Almond Milkshake.

Ingredients:

Banana 1
Milk 2 Cups
Blanched Almonds 4 Tbsps

Method of preparation:

Peel and roughly chop the banana.

Grind almonds into powder using the grinder.
Then add the chopped banana and little milk and blend again.
Once smooth, add remaining milk and blend well.
Pour into glasses and serve banana almond milkshake immediately.
Notes: Make sure to blend the banana well.

Suggestions: Add crushed ice while blending if desired.
Variations: You can also add honey as a sweetener.
Other Names: Banana Almond Milkshake.

Blueberry Banana Smoothie

Blueberry Banana Smoothie.

Blueberries are blended with chilled milk into thick smoothie along with ripe banana. Honey is added for sweetness and blanched almonds for garnish. Serve blueberry banana smoothie immediately.
Makes: around a Glass of Blueberry Banana Smoothie.

Ingredients:

Blueberries 1/4 Cup
Chilled Milk 1 Cup
Ripe Banana 1
Honey to Taste
Sliced Blanched Almonds for Garnish

Method of preparation:

Peel and the banana and roughly chop it.

Blend all the ingredients in a blender smoothly.
Pour into a serving glass and serve immediately.
Notes: Make sure to blend the blueberries well.

Suggestions: Adjust sweetness with honey.
Variations: Substitute honey with sugar if you wish.
Other Names: Blueberry Banana Smoothie.

Banana Halwa

Banana Halwa.

Fresh ripe banana is mashed and added to the pan along with sugar and milk. When the mixture forms a syrup, roasted wheat flour is added. The mixture is cooked thick thick and served garnished with chopped almonds.
Makes: around 4 Servings of Banana Halwa.

Ingredients:

Ripe Banana 1 Long
Wheat Flour 3/4 Cup
Milk 1/2 Cup
Cardamom Powder a big Pinch
Sugar 3/4 Cup
Cashews 10
Almonds 3
Ghee 4 Tbsps

Method of preparation:

Peel the ripe banana.
Grind the banana into smooth paste adding milk.
Grind cashews into fine powder and keep aside.
Thinly slice the almonds for garnish.

Heat a pan on low heat, add a tbsp of ghee and wheat flour.
Fry till wheat flour changes color or is aromatic.
Remove wheat flour from heat and stir in cashew powder.

Heat a pan on medium – low heat, add banana paste and sugar.
Cook till the sugar is completely melted and the mixture thickens, stir in cardamom powder.
Now add the wheat flour mixture and remaining ghee.
Keep stirring to make sure everything is incorporated well.
When the mixture becomes thick and gooey, remove from heat.
Serve a big scoop full of banana halwa onto a bowl.
Garnish the banana halwa with almonds and serve.
Notes: Make sure banana is very ripe and don’t over cook the syrup.

Suggestions: If the sugar is not melted completely, let it melt before adding flour. Add little water or milk to adjust if the syrup becomes thick and sticks to the spatula.
Variations: You can also add your choice of nuts and raisins.
Other Names: Banana Halwa.

Banana Burfi

Banana Burfi.

Fresh ripe banana is mashed and added to the pan along with sugar. When the mixture forms a syrup, wheat flour is added along with chopped nuts. The mixture is then poured into greased plate and cut into burfi once cooled. Serve banana burfi as a dessert.
Makes: around 20 2- inch pieces of Banana Burfi.

Ingredients:

Ripe Banana 1 Long
Wheat Flour 1 Cup
Sugar 1 Cup
Cashews a Couple
Currants or Raisins 2 Tbsps
Ghee 1/2 Cup

Method of preparation:

Roast the cashews until golden brown and finely chop them.
Peel the ripe banana.
Grind the banana into smooth paste adding little water.
Grease around 7 inch square dish with a drop of ghee and keep aside.

Heat a pan on low heat, add a tsp of ghee and wheat flour.
Fry till wheat flour changes color or becomes aromatic.
Remove wheat flour from heat.

Heat a pan on medium – low heat, add banana paste and sugar.
Cook till the sugar is completely melted, stir in chopped cashews and currants.
Now add the wheat flour and ghee in intervals by stirring in between.
Keep stirring to make sure everything is incorporated well.
When the mixture becomes thick and gooey, remove from heat and pour into the greased dish.
Smooth the top layer and let the mixture coo down to room temperature.
Then cut the banana mixture into cubes.
Store the banana burfi in air tight jar and it stays fresh for couple of weeks.
Serve banana burfi as a dessert.
Notes: Make sure banana is very ripe.

Suggestions: If the sugar is not melted completely, let it melt on low flame. Make sure sugar doesn’t crystallize. Adjust the sugar according to preference.
Variations: You can also add your choice of nuts and raisins. Cardamom Powder can also be added if desired.
Other Names: Banana Burfi.

Pineapple Banana Shrikand

Pineapple Banana Shrikand.

Srikhand is a flavored creamy Indian dessert made of plain yogurt. Here, yogurt is hung to make it thick. It is then whisked with pineapple juice and mixed with fruits and nuts. Serve pineapple banana shrikand immediately or chilled.
Makes: One Serving of Pineapple Banana Shrikand.

Ingredients:

Plain Yogurt 1 1/4 Cups
Pineapple Juice 3 – 4 Tbsps
Banana 1 Small
Walnuts 4

Method of preparation:

Roughly chop the walnuts.
Peel and chop the banana into small pieces.

Tie plain yogurt in a clean muslin cloth and hang it in refrigerator (tie the ends of cloth to the rack) for 6 – 8 hours with a bowl underneath to collect the whey.
The yogurt thickens to a very good extent.
Remove the yogurt into a bowl, add pineapple juice and whisk well.
Stir in chopped banana and walnuts.
Garnish the shrikhand with walnuts and pineapple juice.
Serve pineapple banana shrikand immediately.
Notes: Make sure to strain the yogurt well for pineapple juice to be incorporated.

Suggestions: Shrikhand is liquidy – need to hung the yogurt for some more time or use less pineapple juice. Try whole milk yogurt which leaves more whey when hung.
Variations: Also add chopped pineapple to the yogurt mixture.
