Wood Apple Pickle

Velagapandu Pachadi.

Velaga Pandu is cracked open and the flesh is pounded along with spice and jaggery till it turns to paste like consistency. Serve wood apple pickle with rice or with dosa etc…
Makes: around a Cup of Wood Apple Pickle.


Wood Apple 1
Green Chile 1
Dark Jaggery 1/2 Cup – 3/4 Cup (grated)

Method of preparation:

Crack open the velagapandu / wood apple and scoop all the inside flesh and discard the shell.
Remove stem, wash and roughly chop green chile.

Using a mortar and pestle, pound the green chiles coarsely along with jggery.
Finally add the velagapandu flesh and pound till it forms a paste.
Store wood apple pickle in a tight jar and you can refrigerate for couple of months.
Notes: Make sure wood apple is not too ripe or not too raw.

Suggestions: Adjust spice with green chile and depending on the tartness of velagapandu, adjust jaggery.

Apple Milk Shake

Apple Milk Shake.

Apples are peeled and ground into smooth paste along with milk, honey and cardamom powder. The milk shake is then poured into serving glasses and garnished with freshly ground pistachios. Serve apple milk shake immediately.
Makes: around 2 Servings of Apple Milk Shake.


Apple 2
Milk 1 1/2 Cups
Honey to Taste
Pistachios 1 Tbsp
Green Cardamom Powder a Pinch

Method of preparation:

Peel and roughly chop apple.
Grind pistachios into coarse powder and keep aside.

Blend together apple, milk, honey, cardamom powder into smooth juice.
Remove the shake onto a serving glasses with ice cubes.
Garnish with ground pistachios and serve apple milk shake immediately.
Notes: Choose apples that are on a sweeter note.

Suggestions: You can also grind the mixture with ice cubes to variate the texture.
Variations: You can choose sugar or any other sweetener in place honey.

Apple Pickle

Apple Pickle.

Apple is grated and mixed with red chili powder and spices. The apple mixture is then tempered with whole spices. Serve apple pickle with idly, dosa etc…
Makes: around a Cup of Apple Pickle.


Raw Tart Apple 1
Red Chile Powder 2 Tbsps
Mustard Seeds 1 tsp
Fenugreek Seeds Powder 1/8 tsp
Lemon Juice 1 tsp
Salt 1 Tbsp


Chana Dal 1/4 tsp
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Wash and grate the apple on thicker side of the grater.
Grind mustard seeds into fine powder.

In a mixing bowl, add roasted fenugreek seeds powder, red chile powder and salt.
Mix thoroughly and add grated apple, mustard seeds powder and lemon juice.

Heat oil in a small pan, add all talimpu ingredients in order.
When chana dal changes color, remove from heat.
Let the oil cool to room temperature and add to above pickle bowl.
Give the pickle a good stir and store it in a tight jar.
Ready to use after a few minutes of standing time.
This apple pickle stays for few days if refrigerated.
Notes: Make sure to choose raw apple with less moisture.

Suggestions: If the apple pickle is not tart enough, add more lemon juice. You can also finely chop the apple.

Wood Apple Raita

Velagapandu Perugu Pachadi


Wood Apple / Velagapandu 1
Yogurt 1 cup
Green Chiles 1 – 2
Salt to taste


Urad Dal 1/2 tsp
Cumin Seeds 1/2 tsp
Mustard Seeds 1/2 tsp
Broken Red Chiles 2
Curry Leaves 6 – 8
Oil 1 tsp

Method of preparation:

Remove stems, wash and roughly chop green chiles.
Using a heavy object, break wood apple into two pieces.
Discard hard outer shell and take the inner flesh into a bowl.

Using mortar and pestle, mash raw flesh of wood apple, green chiles and salt thoroughly.
Alternatively, use a grind to briefly grind those ingredients.

In a bowl, whisk yogurt and ground wood apple flesh together thoroughly.

Heat oil in a pan, add all talimpu ingredients in order.
When urad dal changes color, remove from heat and add to above yogurt bowl.
Mix thoroughly and serve.

Notes: Make sure to mash wood apple well before mixing in yogurt.
