Tendli Carrot Salad

Tendli Carrot Salad.

Tindora / Ivy Gourd is finely chopped along with carrot. It is then mixed with boiled sweet corn and soaked peanuts. Dressing is prepared with lemon juice and herbs. Serve tendli carrot salad chilled.
Makes: around 2 Servings of Tendli Carrot Salad.

Ingredients:

Tendli / Ivy Gourd 8 app.
Carrot 1/2 Small
Sweet Corn 1/8 Cup
Raw Peanuts 2 Tbsps
Dried Mint Powder a big Pinch
Lemon Juice 1 Tbsp
Cilantro few Sprigs
Crushed Black Peppercorns to Taste
Salt to Taste
Olive Oil 1/2 tsp

Method of preparation:

Wash, remove ends and chop the tendli into small pieces.
Peel, remove ends, wash and finely chop the carrot.
Boil the sweet corn till just soft and strain.
Wash and very finely chop the cilantro leaves.
Soak peanuts in warm water for couple of hours and strain the soaked peanuts.

In a mixing bowl, mix together lemon juice, cilantro, crushed black pepper, mint powder oil and salt.
Whisk well and stir in chopped tendli, carrot, sweet corn and peanuts.
Taste and adjust seasonings of necessary.
Serve tendli carrot salad chilled.
Notes: Make sure to chop the vegetables to same size.

Suggestions: Adjust the amount of ingredients according to your preference.
Variations: Finely chopped cucumber can also be added for extra juiciness.

Paneer Salsa

Paneer Salsa.

Fresh vegetables like tomato, onion, green bell pepper is finely chopped up and mixed with boiled cornn and crumbled paneer. The mixture is seasoned with crushed black pepper and mixed with lemon juice. Serve paneer salsa as a salad or as a stuffing in a bread sandwich and toast it.
Makes: around 4 Servings of Paneer Salsa.

Ingredients:

Paneer (Crumbled) 1/4 Cup
Tomato 1 Small
Onion 1/2 of Small One
Boiled Corn 4 Tbsps
Green Bell Pepper (chopped) 6 Tbsps
Cilantro Few Sprigs
Lemon Juice 2 Tbsps
Crushed Black Pepper few Pinches
Salt to Taste

Method of preparation:

Wash and finely chop the cilantro.
If using frozen paneer, leave the paneer outside to let it come to room temperature and crumble it.
Peel and finely chop the onion.
Wash, deseed and finely chop the tomato.

In a mixing bowl, mix together crumbled paneer, chopped tomato, onion, corn, green bell pepper, cilantro, crushed black pepper and salt.
Stir in lemon juice and leave aside for few minutes.
Serve paneer salsa as a salad or as a stuffing in a bread sandwich and toast it.
Notes: Make sure to chop the vegetables in same size.

Suggestions: Adjust spice with black pepper.

Peeled Carrot Salad

Carrots are peeled and for the salad, keep peeling the carrots. Thick yogurt is then seasoned with fried spices and herbs. The peeled carrots are then mixed with freshly prepared yogurt mixture. Serve peeled carrot salad immediately.
Makes: around 2 Servings of Peeled Carrot Salad.

Ingredients:

Regular Carrot 1 Medium
Yellow Carrot 3
Plain Yogurt 2 Tbsps
Cumin Seeds a Pinch
Green Chiles 1 – 2
Lemon Juice few Drops
Cilantro few Sprigs
Salt to Taste
Oil 1/2 tsp

Method of preparation:

Remove stems, wash and slice the green chiles.
Wash and finely chop the cilantro leaves.
Wash, peel outer skin and remove ends of the carrots.
Keep peeling both varieties of carrots to make the ribbons.

Heat oil in a small pan, add cumin seeds and green chiles.
Fry till cumin seeds change color and remove the pan from heat.

In a mixing bowl, mix together yogurt, fried cumin seeds and green chiles, lemon juice, cilantro and salt.
Stir in peeled carrots mixture.
Serve peeled carrot salad immediately.
Notes: Don’t over mix the carrot ribbons.

Suggestions: Make sure yogurt is thick.
Variations: Season with black pepper powder if you wish.

Yellow Cucumber Salad

Yellow cucumber is peeled and chopped finely. Oil is seasoned with spices and added to the chopped cucumber. Dried mint and lemon juice brings out distinct flavor to this salad. Serve yellow cucumber salad chilled if desired.
Makes: around 2 Servings of Yellow Cucumber Salad.

Ingredients:

Yellow Cucumber 1
Green Chiles 1 – 2
Lemon Juice few Drops
Dried Mint Leaves a big Pinch
Black Sesame Seeds 1/4 tsp
Cumin Seeds a big Pinch
Salt to Taste
Oil 1/2 tsp

Method of preparation:

Wash and slit the green chiles vertically.
Wash, peel and halve the yellow cucumber.
Discard the seeds and finely chop the cucumber.
Rub dried mint leaves between fingers to make into fine powder.

Heat oil in a pan, add cumin seeds, black sesame seeds and the green chiles.
Fry for a minute or until cumin seeds change color and remove from heat.

In a mixing bowl, mix together chopped yellow cucumber, above fried spices with green chile, dried mint leaves, lemon juice and salt.
Leave aside for few minutes before serving yellow cucumber salad.
Notes: Make sure cucumber is not sweet.

Suggestions: Adjust lemon juice depending on the tartness of the cucumber.
Variations: You can also add finely chopped cilantro to the cucumber salad.

Edamame Salad

Edamame Salad.

Edamame are fresh soybeans in a pod. The soybean pods are boiled in salted water till just soft and shelled. Tomato, onion, bell pepper are finely chopped and mixed with the boiled edamame along with spices and herbs. Serve edamame salad immediately.
Makes: around 4 Servings of Edamame Salad.

Ingredients:

Boiled Edamame 1 1/2 Cups
Onion 1/2 Small
Tomato 1
Orange Bell Pepper 1/4 of Small One
Black pepper Powder few Pinchess
Lemon Juice 1 Tbsp
Cilantro few Sprigs
Salt to Taste

Method of preparation:

Boil the shelled soy beans in enough salted water for around 10 minutes or until they are soft.
Strain the boiled soy beans and refresh in cold water and keep aside.
Wash and finely chop the cilantro.
Peel and finely chop the onion.
Wash, deseed and finely chop the tomato.
Wash, remove stem, discard seeds and finely chop the bell pepper.

In a mixing bowl, mix together boiled and shelled edamame, chopped onion, tomato, bell pepper and cilantro.
Stir in pepper powder, salt and lemon juice.
Serve edamame salad immediately.
Notes: Make sure edamame is boiled well before removing from heat.

Suggestions: Adjust spice with black pepper. For extra spice, add finely chopped green chile.
