Pepper Idly

Miriyala Idli.

Black pepper corns are crushed but not powdered. They are then fried in oil along with cumin seeds and curry leaves. The fried spices are mixed with idly batter and poured into idli moulds. The idli is then steamed till done. Serve pepper idli with coconut chutney or with regular sambar.
Makes: around 4 Regular Pepper Idly and couple of baby idli’s.

Ingredients:

Idli Batter 1 1/4 Cups
Salt to taste
Ghee few drops

Talimpu:

Crushed Black Pepper 1/8 tsp
Cumin Seeds 1/4 tsp
Curry Leaves 5 – 7
Oil 1 tsp

Method of preparation:

Heat oil in a pan, add all talimpu ingredients.
Fry till cumin seeds change color, remove from heat.

In a bowl, add the idli batter, black pepper cumin oil and salt (if necessary).
Mix thoroughly and keep aside.

Grease idli moulds with few drops of ghee.
Pour few tablespoons of spinach idli batter in each idli mould.
Place the idli stand in steamer.
Steam the pepper idli for around 8 minutes.
Leave the idli outside for a minute or two to cool down.
Carefully remove the idli from idli mould with help of a spoon.
Serve pepper idli with coconut chutney or with any chutney of your choice.
Notes: Make sure idli is steamed well before removing from heat.

Suggestions: Make sure idli batter is not too thick or not too thin. Adjust the consistency of the idli batter with water if necessary.
Variations: Check other variations of idly here. You can also add chopped cashews in the batter.

Horse Gram Stuffed Idli

Ulavala Idli.

Horse gram is soaked overnight and cooked till soft. It is then ground into paste and briefly cooked in tempered oil along with spices. The horse gram mixture is then stuffed in idli batter. Idli is steamed and horse gram stuffed idli is served with any chutney of your choice.
Makes: around 4 Horse Gram Stuffed Idli.

Ingredients:

Idli Batter 3/4 Cup
Horse Gram 1/2 Cup
Green Chiles 1 – 2
Turmeric Powder a big Pinch
Cumin Seeds 1/4 tsp
Cilantro few Sprigs
Salt to taste
Oil 1 tsp
Ghee to grease idly moulds

Method of preparation:

Wash and soak the horse gram in enough water overnight.
Next day refresh the water and pressure cook in around 2 cups of water for 4 – 5 whistles.
Strain the cooked horse gram and reserve the liquid.
Grind the horse gram into paste with enough salt.
Make sure not to add extra water (reserved liquid) to grinding mixture until necessary.

Remove stems, wash and roughly chop the green chiles.
Grind the green chiles into paste using a blender.

Heat oil in a pan, add cumin seeds and fry till they turn golden brown.
Add green chile paste and fry briefly.
Stir in ground horse gram, turmeric powder and salt.
Fry for couple of minutes and remove from heat.
Once the mixture is warm enough to handle, form the horse gram mixture into small discs.

Grease idli moulds with few drops of ghee.
Pour a tbsp of idli batter in each idli mould.
Layer the batter with prepared horse gram disc.
Layer few more tablespoons of idli batter on the green peas disc to cover it.
Place the idli stand in steamer.
Steam the idli for around 8 – 10 minutes.
Leave the idli outside for a minute or two to cool them down after applying a drop of ghee on each idli so that the top layer doesn’t dry out..
Carefully remove the idli from idli mould with help of a spoon.
garnish with chopped cilantro and serve horse gram stuffed idli any chutney of your choice.
Notes: Make sure idli is steamed well before removing from heat.

Suggestions: If horse gram is not cooked well, boil in enough water till they turn soft. Since the skin is pretty thick, it will never be too soft to grind.

Spinach Idli

Palakura Idli.

Spinach leaves are wash and ground into paste using a blender. The spinach paste is then mixed with the idli batter and poured into idli moulds. The idli is then steamed till done. Serve spinach idli with spicy idli powder or with sambar or with coconut chutney.
Makes: around 4 Spinach Idli.

Ingredients:

Idli Batter 1 Cup
Spinach Leaves 1 1/2 Cups Packed
Cilantro few Leaves
Salt to taste
Ghee few drops

Method of preparation:

Wash the spinach leaves and keep aside.
Grind spinach leaves into smooth paste after adding enough water.

In a bowl, add the idli batter, ground spinach paste and salt (if necessary).
Mix thoroughly and keep aside.

Grease idli moulds with few drops of ghee.
Pour few tablespoons of spinach idli batter in each idli mould.
Place the idli stand in steamer.
Steam the spinach idli for around 8 minutes.
Leave the idli outside for a minute or two to cool down.
Carefully remove the idli from idli mould with help of a spoon.
Serve spinach idli with coconut chutney or with any chutney of your choice.

Spicy Idli

Spicy Idli.

Idli batter is spiced up with green chiles and ginger. The batter is layered with spice powders and steamed till soft. Steamed idli is then stir fried with fried mustard seeds and sesame seeds. Serve spicy idli with sweet garlic chutney or with any chutney of your choice.
Makes: around 4 Servings of Spicy Idli.

Ingredients:

Idli Batter 2 Cups
Green Chiles 2 – 3
Ginger 1 – 2 inch Piece
Red Chili Powder few Pinches
Black Pepper Powder few Pinches
Salt to taste
Ghee 1/4 tsp

Talimpu:

Mustard Seeds 1/4 tsp
Sesame Seeds 1 Tbsp
Curry Leaves 5
Oil 2 tsps

Method of preparation:

Remove stems, wash and roughly chop green chiles.
Peel and mince the ginger.
Grind green chiles and ginger into paste with few pinches of salt.

Grease a wide bowl with ghee.
Pour prepared idli batter into the bowl.
Sprinkle red chili powder, black pepper powder and a small pinch of salt to layer on the batter.

Heat a wide vessel with a cup of water.
Carefully place the bowl in the vessel and steam for atleast 10 – 15 minutes or until idli is soft.
Once done, cool the idli to room temperature and cut into big chunks.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, stir in the idli chunks and remove from heat.
Serve spicy idli with sweet garlic chutney or with any chutney of your choice.
Notes: Make sure idli is cooked well.

Suggestions: Depending on the size of the vessel, adjust the steaming time. Also adjust the green chiles according to taste.

Sweet Potato Idli

Chilakada Dumpa Idlilu.

Sweet potato is grated raw and is mixed with idli batter along with cilantro and spices (for spicy version) and poured into idli moulds. The idli is then steamed till done. Serve sweet potato idli with spicy idli powder or with sambar or with coconut chutney.
Makes: around 4 Sweet Potato Idli.

Ingredients:

Idli Batter 1 Cup
Sweet Potato 1/2 of Small One
Cilantro few Leaves
Salt to taste
Ghee few drops

Method of preparation:

Peel, wash and grate the sweet potato (around 1/2 Cup)
Separate leaves, wash and tear the cilantro leaves.

In a bowl, add the idli batter, grated sweet potato, teared cilantro leaves and salt (if necessary).
Mix thoroughly and keep aside.
Grease idli moulds with few drops of ghee.
Pour few tablespoons of batter in each idli mould.
Place the idli stand in steamer.

Steam the idli for around 8 minutes.
Leave the idli outside for a minute or two to cool down.
Carefully remove the idli from idli mould with help of a spoon.
Serve sweet potato idli with coconut chutney.
Notes: Make sure idli is steamed well before removing from heat.

Suggestions: Adjust the amount of sweet potato if necessary. Make sure idli batter is not too thick or not too thin. Adjust the batter with water if necessary.
Variations: Also add finely chopped green chiles to the batter for a spicy idli.
