Eggplant is diced and cooked in sesame seeds powder till soft. Serve eggplant sesame curry with steamed rice and dollop of ghee. Sesame powder can be prepared by roasting sesame seeds and dried red chiles and grinding them into powder along with salt.
Makes: around 2 Servings of Eggplant Sesame Curry.
American Eggplant 1/2 of Small One
Sesame Powder 3 Tbsps
Garlic 2 Cloves
Salt to Taste
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps
Method of preparation:
Remove stem, wash and chop eggplant into small chunks (around 2 1/2 Cups).
Peel and crush the garlic cloves.
Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add crushed garlic, eggplant pieces, sesame powder and salt.
Cook covered on low flame till eggplant turns soft (around 8 minutes).
Keep stirring occasionally to avoid eggplant from sticking to bottom of the pan.
Serve eggplant sesame curry with steamed rice and dollop of ghee.
Notes: Make sure eggplant is cooked well.
Suggestions: Adjust spice with red chili powder if necessary.
Variations: You can also use Indian eggplants instead.
