Fresh Beans with Sesame

Chikkudu Kaya Nuvvulu Vepudu.

Fresh beans are stringed and chopped into pieces. They are then cooked in oil along with whole spices. White sesame seeds are ground into powder along with spices and added to the cooked beans. Serve fresh beans with sesame over plain steamed rice and dollop of ghee.
Makes: around 4 Servings of Fresh Beans with Sesame.

Ingredients:

Fresh Beans 2 Cups Chopped
Sesame Seeds 6 Tbsps
Green Chiles 3 – 5
Salt to Taste

Talimpu:

Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:

String the fresh beans and wash thoroughly.
Chop the fresh beans into halves or thirds depending on the length.
Remove stems, wash and slice the green chiles.
Grind sesame seeds and green chiles into powder using spice grinder.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped beans.
Cook covered on low flame for around 8 minutes or until beans change color and turns soft.
Uncover, stir in ground sesame seeds mixture once beans is cooked.
Let the beans cook in sesame mixture for around 5 minutes, add salt and remove from heat.
Serve fresh beans with sesame with steamed rice and dollop of ghee.
Notes: Make sure beans are cooked well before adding sesame powder to the pan.

Suggestions: Adjust spice with green chiles. If fresh beans are not cooked well, put the curry back on heat, add a splash of water and cook covered on low flame till done.
