Quick Sesame Powder

White sesame seeds are ground into powder with dried red chiles and salt. The powdered sesame can be used as a seasoning for dry curries. Sesame powder can be stored tight in a jar and can also be refrigerated (to improve shelf life) for months. Serve the quick sesame powder with steamed rice and dollop of ghee.
Makes: around a Cup of Quick Sesame Powder.

Ingredients:

Sesame Seeds 1 Cup
Whole Dried Red Chiles 3 – 4
Salt to Taste
Oil few Drops

Method of preparation:

Remove stems, break the red chiles into small pieces and discard some of the seeds (if there are too many).
Heat a heavy bottomed pan on low heat, add sesame seeds.
Roast the sesame seeds till they start to turn golden.
Remove from heat and add the broken red chiles and a drop of oil.
Fry till red chiles become crisp and remove from heat.

Cool the roasted ingredients to room temperature.
Grind sesame seeds, broken red chiles and salt into somewhat coarse powder.
Store the powder tight in a jar and it stays fresh for couple of months.
Serve the quick sesame powder with steamed rice and dollop of ghee.
Notes: Make sure not to over grind the sesame powder.
