Quick Beans Curry with Tomato

Chikkudukaya Tomato Kura.

Fresh flat beans are washed and chopped into pieces. Chopped fresh beans are then cooked in oil till soft before adding other vegetables and spices. Once done, garnish with cilantro and serve quick beans curry with tomato over plain steamed rice or with roti.

Fresh Beans 1 1/2 Cups Chopped
Tomato 1 Large
Onion 1 Small
Turmeric Powder a Pinch
Red Chili Powder 1/2 tsp
Salt to Taste
Cilantro few Sprigs
Oil 1 Tbsp

Method of preparation:

Wash and string the fresh beans and chop into small chunks.
Peel and finely chop the onion.
Wash and chop the tomato.
Wash and finely chop the cilantro leaves.

Heat oil in a pan, add chopped fresh beans.
Fry on medium to low flame for around 10 minutes or until beans are cooked and starts to change color.
Add chopped onion in the middle of the pan and fry for another 2 – 3 minutes or until onion is translucent.
Stir in chopped tomato and cook for till tomato softens.
Stir in turmeric powder, red chili powder and salt.
Mix well and remove from heat.
Serve quick beans curry with tomato garnished with cilantro over plain steamed rice or with roti.
Notes: Make sure beans are cooked well.

Suggestions: If fresh beans are not cooked well, put the curry back on heat and cook covered on low flame till done. Add few splashes of water if necessary.
Variations: Add sliced green chili along with chopped onion for extra spice.
