Fresh beans are stringed and chopped into small pieces. They are then boiled in water till just cooked. Oil is tempered with spices and boiled flat beans are added to oil and fried briefly. Then freshly ground cilantro mixture is added to the beans and cooked for a minute. Serve beans with coriander leaves with steamed rice or with roti.
Makes: around 4 Servings of Beans with Fenugreek Leaves.
Fresh Flat Beans 1 1/2 Cups chopped
Cilantro Leaves 1 Cup Packed
Green Chiles 4 – 6
Ginger 1 inch Piece
Salt to taste
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps
Method of preparation:
Wash thoroughly and string the fresh flat beans.
Remove both ends and chop flat beans into around inch long pieces.
Remove stems, wash and roughly chop the green chiles.
Wash and roughly chop the cilantro leaves.
Wash, peel and roughly chop the ginger.
Grind cilantro leaves, green chiles, ginger, cashews and salt into paste without adding any water if possible.
Heat few cups of water in a sauce pot, add flat beans and few pinches of salt.
Boil till flat beans are cooked and turns just soft.
Alternatively, pressure cook with few splashes of water for 2 whistles.
Strain the flat beans if there is too much of water and keep aside.
Heat oil in a pan, add all talimpu ingredients in order.
When urad dal changes color, add cooked beans.
Fry for couple of minutes till beans start to turn golden brown around the edges.
Stir in ground cilantro mixture and salt (if necessary).
Cook on low flame for a minute or two and remove from heat.
Serve beans with cilantro leaves over plain steamed rice or with roti.
Notes: Make sure flat beans are boiled well.
Suggestions: If flat beans are not soft, add few tbsps of water and cook covered on low flame till done. Adjust the amount of green chiles for preferred spice level.
Variations: Use frozen beans in place of fresh beans and you can directly add the washed frozen beans to the pan.
