Quick Tomato Chutney

Quick Tomato Chutney.

Tomato is chopped up and cooked in oil. Green chiles are fried in oil and ground along with tomato, tamarind and cumin seeds. Serve quick tomato chutney with steamed rice and dollop of ghee.
Makes: around 2 Servings of Quick Tomato Chutney.


Roma Tomato 6
Green Chiles 2 – 4
Tamarind 1 inch Piece
Cumin Seeds a Big Pinch
Salt to Taste
Oil 1 Tbsp

Method of preparation:

Wash, remove ends and finely chop the tomato.
Remove stems, wash and roughly chop the green chiles.

Heat oil in a pan, add chopped green chiles.
Fry the green chiles till light brown in color.
Remove the green chiles onto a plate.
Add the chopped tomato into the pan with remaining oil.
Cook the tomato till its soft, add tamarind and cook till tomato mixture comes together.
When most of the water is evaporated, remove from heat.
Cool the tomato mixture to room temperature.
Grind the tomato mixture, green chile, cumin seeds and salt smoothly.
Remove the tomato chutney onto a bowl.
Serve quick tomato chutney with steamed rice and dollop of ghee.
Notes: Make sure tomato is cooked well.

Suggestions: Make sure tomato mixture is thick and don’t add any additional water while grinding. Adjust green chiles according to spice preference.
