Peeled Carrot Salad

Carrots are peeled and for the salad, keep peeling the carrots. Thick yogurt is then seasoned with fried spices and herbs. The peeled carrots are then mixed with freshly prepared yogurt mixture. Serve peeled carrot salad immediately.
Makes: around 2 Servings of Peeled Carrot Salad.


Regular Carrot 1 Medium
Yellow Carrot 3
Plain Yogurt 2 Tbsps
Cumin Seeds a Pinch
Green Chiles 1 – 2
Lemon Juice few Drops
Cilantro few Sprigs
Salt to Taste
Oil 1/2 tsp

Method of preparation:

Remove stems, wash and slice the green chiles.
Wash and finely chop the cilantro leaves.
Wash, peel outer skin and remove ends of the carrots.
Keep peeling both varieties of carrots to make the ribbons.

Heat oil in a small pan, add cumin seeds and green chiles.
Fry till cumin seeds change color and remove the pan from heat.

In a mixing bowl, mix together yogurt, fried cumin seeds and green chiles, lemon juice, cilantro and salt.
Stir in peeled carrots mixture.
Serve peeled carrot salad immediately.
Notes: Don’t over mix the carrot ribbons.

Suggestions: Make sure yogurt is thick.
Variations: Season with black pepper powder if you wish.
