Ridge Gourd Sesame Curry

Ridge Gourd Sesame Curry.

Sesame seeds are toasted and ground into fine powder. Ridge gourd is peeled and chopped into pieces. They are then cooked in sesame mixture till soft and just cooked. Serve ridge gourd sesame curry over plain steamed rice.
Makes: around 3 Servings of Ridge Gourd Sesame Curry.


Ridge Gourd 1 around 10 inch long
Onion 1
Sesame Seeds 4 Tbsps
Green Chillies 4 – 5
Salt to taste


Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Dried Red Chiles 3 – 4
Asafoetida a Big Pinch
Curry Leaves 5
Oil 2 tsps

Method of preparation:
Peel and finely chop the onion
Peel, wash, remove ends and chop ridge gourd into small chunks (around 2 Cups).
Toast sesame seeds in a small pan till golden brown in color.
Cool to room temperature and grind into fine powder.
Remove stems, wash and roughly chop green chillies.
Add the green chiles to the grinder and grind again into powder.

Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add ridge gourd pieces, onion and salt.
Fry for a minute or two and stir in ground sesame seeds paste and around 1 /4 th cup of water.
Cook covered on low flame till ridge gourd pieces are soft.
Uncover and stir fry for a minute or two to evaporate any excess moisture.
Serve ridge gourd sesame curry over plain steamed rice.
Notes: Make sure ridge gourd pieces are cooked well before removing from heat.

Suggestions: If ridge gourd pieces are not cooked, add few more tablespoons of water and cook covered till done.
Variations: A tbsp of cashews can be ground along with sesame seeds if you wish.
