Wada Pav.

Wada Pav / Vada Pav is a popular Maharashtrian street food prepared with wada (fritters) and pav (bread / bun). Potato is boiled and mashed with couple of spices. The potato mixture is then made into balls or patties and dipped in besan (gram flour) batter. Once these are deep fried, they are then sandwiched between slices of pav.
Makes: 4 Servings of Wada Pav.

Red Chutney 3 – 4 tsps
Green Chutney 5 tsps
Green Chiles 5
Salt to taste
Ghee 2 tsps

Method of preparation:

For wada, click this recipe link. But instead of making a round potato balls, make the balls little small and flat by pressing between hands. Then continue with the recipe.
Slice the pav in the middle leaving its end intact.
Slit green chiles a little and deep fry in oil till light brown.

To assemble, heat ghee on a flat pan.
Place the sliced pav on hot pan and fry on both sides till light golden brown.
Now spread red chutney on one side of the toasted pav and green chutney on the other side of the pav.
Sandwich the wada between two layers of the pav.
Garnish with cilantro and serve wada pav with fried green chiles.

Notes: Make sure not to divide the pav (bread) into two different pieces.

Suggestions: If wada is not spicy enough, add more red and green chutney.
Variations: Red chutney can be fried in little oil and applied to one side of the pav. Samosa Pav (samosa is sandwiched between pav).
