Dahi Batata Puri.

Dahi batata puri is a savory preparation made using small puffed puri. Potato filling is prepared with mashed potatoes and spices. Each puri is stuffed with potato stuffing and filled with various chaat chutneys. Batata puri is finally topped with lightly sweetened dahi / yogurt and garnished with fine sev and chopped cilantro.
Makes: 7 – 8 Dahi Batata Puri.

Ingredients:

Small PUffed Puri 7 – 8
Fine Sev 1 tbsp
Potato 1 Small
Cooked Chickpeas 2 – 3 tbsps
Turmeric Powder a pinch
Garam Masala 1/4 tsp
Tamarind Chutney 1 tbsp
Green Chutney 2 tbsps
Plain Yogurt 4 tbsps
Sugar 1 tsp
Roasted Cumin Powder 1/4 tsp
Red Chilli Powder 1/4 tsp
Chaat Masala 1/4 tsp
Black Salt a Pinch
Cilantro Few Sprigs
Salt to taste

Method of preparation:

Clean and finely chop cilantro.
Whisk yogurt with few tbsps of water, sugar, cumin powder and small pinch of salt.
Boil the potato, peel and thoroughly mash it.
Add cooked chickpeas to the mashed potato along with turmeric powder, garam masala and salt.

Arrange puris on a serving plate.
Tap the puri in the middle to make a hole. Careful not to break the puri.
Stuff few teaspoons of mashed potato and garbanzo mixture inside each puri.
Pour a tsp or more of tamarind chutney and green chutney on each stuffed puri.
Finally pour the yogurt on each puri.
Sprinkle red chilli powder, chaat masala and black salt to taste.
Garnish with fine sev and cilantro and serve dahi batata puri immediately.
Notes: Make sure not to leave the puri for long once filled with chutneys.

Suggestions: If the puri is not spicy enough, add few teaspoons of red chutney on the puris.
Variations: Stuffing for dahi batata puri vary in the peas being used. Use moong sprouts, green peas etc.. Finely chopped onion or tomato can also be added to puri.
