Fried Bitter Gourd with Yogurt

Bitter gourd is salted and later deep fried till dark golden in color. A mixture of spice powders are applied to the fried bitter gourd. Yogurt is mixed with coconut and dill leaves which serves as a bed for fried bitter gourd pieces. Fried Bitter Gourd with Yogurt can be served with plain steamed rice or with roti.
Makes: 3 Servings of Fried Bitter Gourd with Yogurt

Ingredients:

Bitter Gourd 2
Red Chilli Powder 1 tsp
Coriander Powder 2 tsps
Cumin Powder 1 tsp
Dry Mango Powder / Amchur 1/2 tsp
Turmeric Powder a big pinch
Plain Yogurt 1/2 Cup
Grated Coconut 2 tbsps
Dill Leaves few sprigs
Salt to taste
Oil for Deep Frying

Method of preparation:

Lightly scrape, wash and remove ends of the bitter gourd.
Slice vertically, remove seeds and halve the bitter gourds horizontally.
Apply salt and leave the bitter gourd pieces aside for half an hour.
Wash the salted bitter gourd under running water, squeeze them gently and remove onto absorbent kitchen towel.

Wash, discard hard stalks and roughly chop dill leaves.
Whisk yogurt well and stir in grated coconut, dill leaves and salt.
Layer a serving bowl with thick bed of prepared yogurt mixture and keep aside.
Mix together red chilli powder, coriander powder, cumin powder, dry mango powder, turmeric powder and salt.

Heat oil in a deep pan on medium heat, add bitter gourd pieces and deep fry till dark brown on all sides.
Remove the fried bitter gourd pieces onto a bowl.
Sprinkle the prepared spice powders mixture on each bitter gourd slice and mix well.
Serve the spiced bitter gourd pieces on the prepared yogurt bed with steamed rice.
Notes:Make sure bitter gourd pieces are fried well.

Suggestions: If bitter gourd is not fried properly when removed from oil, put them back into hot oil and fry them till done.
Variations: Instead of deep frying, bitter gourds can be put in the oven till cooked and little crisp.
