Ridge Gourd in Tomato Gravy

Beerakaya Tomato Masala Kura.

Tomato is cooked in tempered oil till soft. Couple of dals and spices are roasted and ground into fine powder. Ridge gourd is chopped into cylinders and cooked in the tomato gravy till soft. Finally ground dal and spice powder is added to thicken and flavor the tomato gravy.
Makes: 4 Servings of Ridge Gourd in Tomato Gravy.


Ridge Gourd 1 (app. 10 inch long)
Onion 1
Tomato 2
Garlic 3 Cloves
Chana Dal 1 tsp
Urad Dal 1 tsp
Coriander Seeds 1 tbsp
Cumin Seeds 1 tsp
Tamarind 1 inch sized ball
Red Chilli Powder 1 tsp
Turmeric Powder a pinch
Salt to taste


Fenugreek Seeds a pinch
Urad Dal 1/4 tsp
Cumin Seeds 1/2 tsp
Mustard Seeds 1/4 tsp
Curry Leaves 6
Broken Red Chiles 6
Asafoetida a big pinch
Oil 1 tbsp

Method of preparation:

Lightly scrape, remove ends, wash and chop ridge gourd into 2 inch long cylinders.
Make a slit in each ridge gourd vertically twice and keep aside.
Soak tamarind in few tablespoons of water and extract all the thick pulp.
Peel, wash and finely chop the onion.
Wash and finely chop the tomatoes.
Peel and mince the garlic cloves.
Heat a heavy bottomed pan on medium – low heat, add chana dal, urad dal, coriander seeds and cumin seeds.
Roast them till they are aromatic and grind them into fine powder.

Heat oil in a pan on medium heat, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped onion and fry till it turns light brown.
Then add chopped garlic and chopped tomato.
Fry till tomato turns soft and add ridge gourd pieces, red chili powder, turmeric powder and salt.
Pour half a cup or more of water and cook covered on medium – low flame till ridge gourd turns soft.
Uncover, add the tamarind extract and ground dal and spice powder.
Cook till the gravy thickens and adjust any seasonings if required.
Serve ridge gourd in tomato gravy with plain steamed rice or with roti.
Notes:Make sure ridge gourd is cooked well before removing the curry from heat.

Suggestions:If ridge gourd is not cooked properly, put the curry back on heat. Add few tablespoons of water and cook covered on low flame till done.
