24 Sep

Amrakhand / Mango Flavored Shrikhand.

Srikhand is a flavored creamy Indian dessert made of plain yogurt. Widely popular in Maharashtrian cuisine, shrikhand is prepared with hung yogurt. Shrikhand flavored with mango is called amrakhand where amras is mango pulp. Amrakhand is generally served with hot poori.
Makes: around 2 Servings of Amrakhand.

Plain Yogurt 1 1/2 cups
Mango Puree (Fresh or Canned) 1/4 Cup
Condensed Milk 2 tbsps (optional)
Cardamom Powder a big pinch
Sugar / Honey to taste
Saffron a few strands
Charoli / Sunflower Seeds 1 tbsp

Method of preparation:

Tie plain yogurt in a clean muslin cloth and hang it in refrigerator (tie the ends to the rack) for 6 – 8 hours with a bowl underneath to collect the whey.
Reserve the whey and use it in the preparation of paneer or kadhi etc…

Chop mango (if using) into small pieces.
Wash sunflower seeds and keep aside.
Soak Saffron in a tsp of warm milk.

First, blend the mango pieces (if using) along with condensed milk (if using), cardamom powder and saffron milk.
Then add the hung yogurt, sugar and blend into smooth mixture.
Taste, add more sweetness if necessary, blend and remove onto serving bowl.
Stir in half of sunflower seeds and garnish with the remaining seeds.
Serve amrakhand chilled as is or with poori / puri.
Notes:Make sure to leave the yogurt for longer period for best results.

Suggestions: If amrakhand is liquidy, reduce the amount of mango pulp or use full fat yogurt for better results next time.
Variations: Sliced pistachios or almonds can also be added as a flavoring. Amrakhand is also generally served topped on most of Indian sweets.
Other Names: Mango Shrikhand, Kesar Amrakhand.
