Sweet Corn Chaat

Corn chaat is one of the numerous popular chaats prepared in India. Fresh corn is boiled or steamed with enough water. Tomato, onion, mango, carrot and other vegetables are chopped or grated and added to the warm corn. Some spices like chaat masala, cumin powder, black salt etc gives a distinct flavor the the chaat.
Makes: around 2 Cups of Corn Chaat

Ingredients:

Corn Kernels 1 Cup
Tomato 1
Onion 1 small
Green Chiles 1 – 2 (optional)
Raw Mango (grated) 1 tbsp (optional)
Carrot 1/2 of small one
Chaat Masala a big pinch (optional)
Red Chilli Powder a pinch
Lemon Juice 1 tsp
Cilantro few sprigs
Salt to taste

Method of preparation:

Remove stems, wash and finely chop the green chiles.
Peel and finely chop the onion.
Wash and finely chop tomato.
Peel and grate the carrot.
Clean, wash and finely chop cilantro.
If using fresh corn kernels, cook them in enough water till soft but not mushy.
If using canned corn, strain the corn first, wash under running water and microwave for half a minute.

In a mixing bowl, mix together corn, onion, tomato, carrot, green chiles (if using), grated mango (if using), cilantro, chaat masala (if using), red chilli powder, lemon juice and salt.
Taste and adjust any seasonings if required and mix thoroughly.
Serve corn chaat as a snack or salad.
Notes: Add less lemon juice if using grated raw mango.

Suggestions: If corn feels uncooked, cook the corn till soft before adding other ingredients.
Variations: Chaat masala can be replaced little bit of roasted cumin powder. Bell pepper, garbanzo beans, etc can be added to the mixture.
