Raw mangoes are used extensively in Indian cooking. Here, is a sweet and sour stew prepared with sour mangoes. Raw mango is chopped and cooked in tempered oil along with onion and green chiles. Toor dal is cooked separately and added to the stew along with jaggery. Stew needs to bubble for a good amount of time for mango pieces to turn transparent and stew to absorb all the flavors.
Makes: around 2 Cups of Raw Mango Stew

Ingredients:

Raw Mango 1
Toor Dal 1/2 Cup
Onion 1 – 2
Green Chillies 3
Jaggery 2 (2 X 2 inch pieces)
Turmeric Powder a big pinch
Salt to taste

Talimpu:

Fenugreek Seeds a pinch
Urad Dal 1/4 tsp
Cumin Seeds 1/4 tsp
Mustard Seeds 1/4 tsp
Curry Leaves 6
Broken Red Chiles 2
Oil / Ghee 2 tsps

Method of preparation:

Peel, wash and chop raw mango into small pieces (abt. 1 1/4 cups).
Discard the seed now or after the cooking process is finished.
Remove stems, wash and slice the green chiles.
Peel, remove ends and thinly slice the onion.
Wash toor dal thoroughly under water and pressure cook in a cup of water for 3 – 4 whistles.
Once the pressure cooker cools down, remove the cooked toor dal and lightly mash it with back of a spoon.

Heat oil in a pan, add all talimpu ingredients in order.
When urad dal changes color, add green chiles and onion.
Once onion turns translucent, add mango pieces and salt.
Cook covered for a minute and add cooked toor dal, jaggery pieces, turmeric powder and around 2 cups of water.
Bring to boil and let the stew bubble till mango pieces turn soft and jaggery is completely dissolved.
Adjust any seasonings if required at this point and let it bubble for another minute.
Serve mango stew with plain steamed rice and dollop of ghee along with some crisps.
Notes: Make sure raw mango is sour by tasting it before cooking.

Suggestions: If mango pieces are little uncooked, put the stew back on heat and boil till mango pieces are cooked through and turns soft.
Variations: Raw Mango Rasam, Green Mango Cooler, Amaranth Leaves Mango Dal.
Other Names: Pacchi Mamidikaya Pappu Pulusu.
